Make-Ahead Breakfast Bars image

I like to make a batch of these and then cut them and wrap single servings in foil to have handy in the freezer for the week. Much cheaper than the freezer breakfasts from the store and you can basically add/substitute whatever ingredients you want or have handy.

cooking spray
3 cups frozen Southern-style hash browns
4 eggs, lightly beaten
1 cup cubed fully cooked ham
1 cup shredded Cheddar-Monterey Jack cheese blend
½ teaspoon onion powder
¼ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x11-inch casserole dish with cooking spray.
  • Mix hash browns, eggs, ham, Cheddar-Jack cheese, onion powder, salt, and pepper together. Pour mixture into the prepared dish. Shake dish gently from side to side to level out ingredients.
  • Bake, uncovered, in the preheated oven until top starts to brown, about 40 minutes. Cool before cutting into bars.

1 tablespoon baking powder
1 teaspoon salt
1 tablespoon cinnamon
2 eggs, beaten
1 cup pumpkin
1 cup milk
1 tablespoon maple syrup
1 cup Splenda sugar substitute
1/2 cup brown sugar, packed
1 tablespoon vanilla
1 cup raisins

Steps:

  • Preheat oven to 325°F.
  • In large bowl combine oatmeal, baking powder, salt and cinnamon.
  • Mix in remaining ingredients.
  • Spread in greased 9x13 pan.
  • Bake for 40 minutes.
  • Enjoy!

This is an adaptation of Resa66's Everything Breakfast Bar. My version does not use Splenda. Could easily be frozen in individual servings for a quick breakfast or anytime snack.

8 cups quick oatmeal
2 tablespoons baking powder
2 teaspoons salt
2 tablespoons cinnamon
1 cup raisins
1 cup chocolate chips
4 eggs, beaten
2 cups canned pumpkin
2 cups milk
2 tablespoons maple syrup
3 cups sugar
2 tablespoons vanilla

Steps:

  • Preheat oven to 325°F.
  • Grease two 9" x 13" pans.
  • Combine dry ingredients in large bowl, stirring well.
  • Combine wet ingredients in a large bowl (I use an 8 cup measure). Whisk thoroughly for a uniform, lump-free mixture.
  • Pour wet ingredients into dry. Stir well.
  • Pour into greased pans and bake for 40 minutes. (I put one pan on each rack and switch them around after 20 minutes.).
  • Letting them cool completely will make slicing easier, if you have the willpower to wait that long!

1 cup packed brown sugar
1 cup quick-cooking oats
1 cup all-purpose flour
1 cup whole wheat flour
1/2 cup toasted wheat germ
4 large eggs
2 cups chopped pecans
1 cup sweetened shredded coconut
1 cup semisweet chocolate chips

Steps:

  • In a bowl, cream the butter and brown sugar. Combine oats, flours and wheat germ; gradually add to creamed mixture. Press into a greased 13-in. x 9-in. baking pan. In a small bowl, beat eggs until foamy. Stir in pecans, coconut and chocolate chips. Spread evenly over crust., Bake at 350° for 30-35 minutes or until edges are golden brown. Cool on a wire rack. Cut into bars. Store in the refrigerator.

3/4 cup (1 1/2 sticks) unsalted butter, cut into small pieces
1/2 cup confectioners' sugar
1 1/2 cups all-purpose flour (spooned and leveled)
1/2 teaspoon coarse salt
3/4 cup rolled oats (not quick-cooking)
1 cup semisweet chocolate chips (6 ounces)
1 cup walnut pieces, toasted
1/2 cup raisins
1 can (14 ounces) condensed milk
2 cups sweetened shredded coconut (7 ounces)

Steps:

  • Preheat oven to 375 degrees. Line a 9-by-13-inch baking dish with parchment paper, leaving overhang on short sides; lightly coat paper with cooking spray.
  • In a food processor, pulse together butter, confectioners' sugar, flour, and salt until mixture resembles coarse meal. Add oats and pulse until just combined. Press dough evenly into bottom of dish and bake until lightly browned and firm, about 20 minutes.
  • Scatter chocolate chips, walnuts, and raisins on top of crust. Drizzle with condensed milk and top with coconut. Bake until coconut is golden, about 20 minutes. Let cool completely in dish on a wire rack before cutting into 18 squares.

I have a breakfast bar recipe in an earlier book, but this is the new, improved version: gluten-free, dairy-free and enough seeds to make you start sprouting. I've used no sugar, but before you start thinking this is virtuously sugar-free (which I could claim it to be), remember that the sweetness that comes from the dates is, in essence, sugar, though certainly it's unprocessed and full of fiber at the same time. There are a lot of ingredients, but you need a good mixture to give crunch and chew--and all manner of smugness-inducing nutrients--though you can fiddle about with them. You can, for example, use sunflower seeds in place of flaxseeds, or half and half rather than all flaxseeds, as below, and you can also use puffed rice (gluten-free if needed) or buckwheat flakes in place of cornflakes. In theory, cornflakes (and oats) should be gluten-free, but if crucial, make sure it's stipulated on the packet. If you can't get hold of medjool dates, then use 350 grams (12 ounces) pitted dried dates and up the water to 400 milliliters (scant 1 3/4 cups). And they'll take about 10, rather than 5, minutes to cook until they're soft enough to mash to a purée. Make these bars at the weekend, and you'll be set up for the week if you're someone who needs to grab-and-go in the morning. They come in pretty handy for that 4pm slump, too.

2 teaspoons ground cinnamon
325 milliliters (1 1/3 cups) cold water
75 grams (2.6 ounces) goji berries
75 grams (2.6 ounces) pumpkin seeds
150 grams (5.3 ounces) brown flax seeds
50 grams (1.75 ounces) cocoa nibs
25 grams (1 ounce) chia seeds
25 grams (1 ounce) cornflakes (gluten-free, if required)
100 grams (3.5 ounces) organic porridge oats (not instant)

Steps:

  • Preheat the oven to 180 degrees C (350 degrees F)/gas mark 4 or, and line the bottom and sides of your tin with baking parchment. Pit the dates and tear them with your fingers into a small saucepan, add the cinnamon, cover with the water, bring to the boil and let bubble for 5 minutes. Turn off the heat, and beat with a fork until you have a rough puree.
  • Put all the remaining ingredients into a large bowl, add the date mixture and mix until everything is combined. I wear a pair of disposable vinyl gloves for this.
  • Squodge into your prepared tin and bake in the oven for 30 minutes, until firm and set, and golden on top and darker around the edges. Leave to cool in the tin before cutting into pieces.

A basic cookie bar recipe that goes perfectly with whatever add-ins you want to include! It's the perfect way to use up those random leftover candies that you aren't sure what to do with.

¾ cup butter (I used unsalted)
1¾ cups light brown sugar (packed)
2 teaspoons vanilla extract
2 eggs
1¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1-2 cups various add-ins

Steps:

  • Preheat the oven to 350 degrees. Spray a 13x9" baking pan with non-stick cooking spray.
  • Place the butter in a large saucepan and melt over low heat. Take the saucepan off the heat and add brown sugar; stir until completely incorporated. Let butter and brown sugar mixture cool for 5-6 minutes. Slowly add in the vanilla and then add in the eggs one at a time, mixing after each one.
  • In a separate bowl, mix together flour, baking soda, and salt. Add half of the flour mixture into the saucepan and stir well. Continue to stir as you add the rest of the flour mixture.
  • Fold in any add-ins that you want to include (chocolate chips, nuts, etc). Spread batter in prepared 13x9" pan. Bake for 25-28 minutes or until a toothpick inserted into the center of the bars comes out clean (be sure to not overcook, as they will not be soft and chewy if cooked for too long!).
  • Let cool and cut into bars.
