WONDERFULLY MOIST ZUCCHINI BREAD



Wonderfully Moist Zucchini Bread image

This zucchini bread is just amazing--you'd never know there are veggies in it! When I was first learning to cook, a beautiful Texan woman taught me a few things--one of them being this recipe. So, give it a try and enjoy! (Thanks Cindy!)

3 eggs
1 cup oil
2 1/4 cups sugar
2 cups zucchini, grated with skin on
1 1/2 tablespoons cinnamon
2 cups flour
1/4 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
2 tablespoons pure vanilla extract
1 cup chopped nuts (optional) or 1 cup raisins (optional)

Steps:

  • Beat eggs until fluffy.
  • Add oil, sugar, zucchini.
  • Add dry ingredients.
  • Add vanilla and if using , fold in nuts and raisins.
  • Bake at 350°F in 2 greased and floured loaf pans for approx 1 hour, or until toothpick comes out clean.

3/4 cup Egg Beaters egg substitute
1/2 cup unsweetened applesauce
1/2 cup canola oil
1 cup sugar
3/4 cup kashi golean crunch cereal
1/4 cup Fiber One cereal
1 teaspoon vanilla
1/4 cup water
8 ounces low-fat cream cheese
2 cups king arthur white whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 large bananas, smashed
1 1/4 cups walnuts, chopped

Steps:

  • Heat oven to 350°F, spray 2 large loaf pans with Pam for Baking.
  • Mix Egg Beaters, applesauce, sugar, oil, cereals, vanilla and water in mixer. Beat on low speed 3 minutes then let rest for a couple of minutes. Beat in cream cheese on low speed.
  • In medium bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg with a whisk.
  • Slowly add the flour mixture to the egg mixture on low speed. When combined add bananas and walnuts, mix until combined.
  • Pour batter into prepared loaf pans, bake at 350°F for 60 minutes or until toothpick inserted into the middle of the loaf comes out clean.
  • Cool on wire rack.

If you have any extra zucchini, this is a great way to use it. One of my baking co-worker's brought shared this bread with me. The secret ingredients is the cream cheese, which makes it very moist! Hope you enjoy it!

1 cup(s) vegetable oil
1 teaspoon(s) vanilla
8 ounce(s) cream cheese, softened
2 cup(s) all purpose flour
1 teaspoon(s) baking soda
1 teaspoon(s) baking powder
1 teaspoon(s) cinnamon
1 teaspoon(s) salt
1/2 teaspoon(s) nutmeg
2 cup(s) walnuts, chopped
2 cup(s) zucchini, shredded

Steps:

  • 350 degree oven; grease and flour two 9 x 5" loaf pans. In bowl, beat eggs, sugar, oil and vanilla until smooth; about three minutes. Beat in the cream cheese.In another bowl, whisk flour, baking soda, baking powder, cinnamon, salt and nutmeg. On low speed, gradually beat into the egg mixture.
  • Fold in walnuts and zucchini. Evenly divide batter between the two prepared pans. Bake at 350 degrees for 60 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and allow to cool in pan for 10 minutes on a wire rack. Turn out of pans and allow to cool completely.
