4 tbsp Metamucil Original Coarse Powder
1/2 cup brown rice flour
1/2 cup almond meal
1/4 tsp baking powder
pinch of salt
1/2 cup coconut sugar
1/4 cup coconut oil, softened
1/4 cup non-dairy milk
1 tsp vanilla extract
1/3 cup chocolate chips

Steps:

  • Preheat oven to 350 degrees F.
  • Line a baking sheet with parchment or a silicone mat.
  • In a large bowl combine Metamucil, brown rice flour, almond meal, baking powder and salt. Stir to combine.
  • Add in coconut sugar following by coconut oil, non-dairy milk and vanilla.
  • Add in chocolate chips.
  • Roll dough into 12 balls and flatten slightly on baking sheet.
  • Bake for 12-14 minutes or until browned around the edges.
  • Let cool for at least 20 mins on baking sheet before removing.
  • Store in an airtight container for up to 3 days.

  • In a large bowl, whisk together the sugars, salt, and butter until a paste forms with no lumps.

2 cups all-purpose flour
