Never Fail Pie Crust III image

This is the easiest pie shell ever! It never fails, and is so good! I have used it for years. Makes 4 single crusts.

2 ½ cups all-purpose flour
1 ⅓ cups shortening
6 tablespoons all-purpose flour
2 teaspoons salt
½ cup cold water

Steps:

  • In a large bowl, Cut the shortening into the 2 1/2 cups flour until the mixture resembles coarse crumbs.
  • In a small bowl, combine the 6 tablespoons flour, 2 teaspoons salt and 1/2 cup water to make a paste. Mix paste into the flour and shortening mixture.
  • Divide dough into 4 equal pieces and shape into rounds. Wrap securely in plastic and refrigerate overnight.

This is a great alternative to a graham cracker crust that packs about 25% less calories. I've been using this versatile cereal in a lot of applications, and this is one of my favorites.

2 cups Fiber One cereal (original)
1/4 cup margarine or 1/4 cup butter
1 tablespoon vanilla extract
1 teaspoon cinnamon
2 tablespoons splenda artificial sweetener

Steps:

  • Preheat oven to 350°F.
  • Crush the Fiber One cereal in a sealed bag or process in a food processor until a crumb consistency.
  • Melt butter and combine all ingredients.
  • Mix thoroughly.
  • Press mixture firmly into a 9" pie dish or springform pan.
  • Bake for 8-10 minutes. Do not brown.
  • Remove and let cool.

1 carton (8 ounces) frozen whipped topping, thawed
1 can (10 ounces) frozen nonalcoholic pina colada mix, thawed
3/4 cup sweetened condensed milk
1/2 cup sweetened shredded coconut
1/2 cup macadamia nuts, chopped
1 can (8 ounces) crushed pineapple, well drained
2 graham cracker crusts (9 inches)
Maraschino cherries, optional

Steps:

  • In a large bowl, combine first three ingredients until smooth. Fold in pineapple, coconut and nuts. Divide and pour mixture into prepared crusts. Refrigerate, covered, until firm, at least 4 hours. If desired, serve with additional whipped topping and cherries.

1/2 cup butter or 1/2 cup margarine, softened
3/4 cup packed brown sugar
3 eggs
1 (12 ounce) package semi-sweet chocolate chips, melted
2 teaspoons instant coffee (dry)
1 teaspoon vanilla
1/2 cup all-purpose flour
1 cup coarsely chopped walnuts

Steps:

  • Heat oven to 375°F Partially bake crust 5 to 7 minutes.
  • Meanwhile, in large bowl, beat butter and brown sugar on medium speed until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Add melted chocolate, dry coffee and vanilla; mix well. Stir in flour and walnuts.
  • Pour mixture into partially baked crust. Bake 25 to 30 minutes or until set. Serve warm with whipped cream or ice cream, if desired.
