BAKED BRIE WITH FIG PRESERVES

Steps:
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- Roll the pastry into a 15-inch square on a floured work surface. Use a small plate to cut two 7 1/2-inch circles. Put the circles on the prepared baking sheet. Use a small star cookie cutter to cut out 10 stars from the dough scraps to decorate the top of the pastry. Put on the baking sheet with the pastry circles and chill 15 minutes in the fridge.
- Stir together the fig preserves and thyme in a small bowl.
- To assemble, set the bottom half of the Brie, cut side up, in the center of one of the pastry circles. Spread the fig jam on the Brie and sprinkle with the almonds. Brush the exposed pastry with the egg wash. Top with the other half of the Brie, cut side down. Lay the second pastry circle over and gently press to form it to the sides of the Brie. Fold the bottom circle of dough over, pleating as you go, to form a border.
- Brush the pastry all over with the egg wash. Arrange the cut outs on top of the brie, overlapping only slightly. Brush the cut outs with egg wash. Bake until the pastry is very crisp and deep golden, about 30 minutes.
- Let cool 10 minutes before serving with the baguette and apple slices.
BALSAMIC FIG PRESERVES
A deliciously sweet and tangy homemade balsamic fig preserves recipe

Steps:
- Wash figs
- Add figs, honey, sugar, and balsamic vinegar to stock pot
- Cook covered on medium low for about an hour (until all the fruit has broken down)
- Stir occasionally
- Remove preserves from heat
- Add chia seeds
- Allow preserves to cool and thicken
- Add preserves to jars and refrigerate or freeze
- Preheat your oven to 350 degrees
- Place Brie on baking sheet lined with parchment
- Allow to come to room temp while oven is preheating
- When oven is ready, bake the brie for 8-10 minutes
- Check the brie at 8 minutes. If more time is needed add 2 more minutes and check again
- Top brie with preserves and serve
- I prefer my preserves to be a little warm so I warm them a little in a small stockpot prior to topping the brie
- Serve with grapes, gluten free pita chips, or anything else you would like
- Preheat oven to 350 degrees
- Line a baking dish/sheet with parchment paper
- Bake Brie for 8-10 minutes (be sure not to overcook, we want the shape to remain intact)
- Meanwhile, warm the preserves
- Remove brie from oven and allow to cool for a few minutes
- Top with preserves
- Serve!
WARM FIG & BRIE CRISPS

- Arrange pita chips on two foil-lined baking sheets. Spread with preserves; top with cheese. Drizzle each with 1/4 teaspoon honey. , Broil 3-4 in. from the heat for 3-4 minutes or until heated through. Cool for 5 minutes before serving. Refrigerate leftovers.

This queen of grilled cheese sandwiches comes from the March 07 Every Day With Rachael Ray magazine. The gooey brie, salty prosciutto and sweet figs are the perfect combination! Rachael suggests serving these sandwiches with sweet potato fries.

Steps:
- Spread the fig preserves onto 4 slices of bread.
- Cut the Brie into 8 long, thin slices.
- Lay 2 slices of Brie over the preserves. (I have also used creme de brie since I don't really care for the rind of Brie. If you go this route you can just spread the creme de Brie over the other slices of bread.).
- Arrange the prosciutto over the Brie.
- Top with the remaining 4 slices of bread.
- Spread half of the butter over the tops of the sandwiches and invert onto a hot skillet or pan.
- Spread the remaining butter on the other side of the sandwiches.
- Cook on the stove or in the oven, turning the sandwiches over once or twice, until the bread is golden brown and the Brie is melted.
- Cut in half to serve.

- Preheat oven to 325 degrees F (165 C).
- Heat brown sugar and water in a small saucepan over medium heat until sugar is completely dissolved. Add figs and vanilla, and cook until softened, about 10 minutes. Stir in almonds and vanilla. Place brie wheel in a baking dish, and pour fig mixture over the top.
- Bake in the preheated oven for 10 to 15 minutes, or until softened but not melted. Serve with water crackers.

- Heat oven to 400°F. Spray cookie sheet with cooking spray. In 8-inch skillet, melt 1 tablespoon butter over medium heat. Cook walnuts in butter, stirring frequently, until golden brown; remove from heat.
- Place 1 sheet of phyllo pastry on cutting board; lightly brush with some of the melted butter. Place another sheet of phyllo on top; lightly brush with some of the melted butter. Place remaining sheet of phyllo crosswise over first two sheets; brush lightly with some of the remaining butter.
- Remove paper from cheese; leave rind on. Place cheese round on center of phyllo sheets. Spoon fig preserves and walnuts over cheese. With both hands, lift phyllo stack towards center and twist in center to make bundle (sheets may tear a little). Brush with remaining butter. Place on cookie sheet. If desired, cut shapes from remaining phyllo dough scraps. Place on top of dough; press lightly to secure.
- Bake 15 to 20 minutes or until golden brown. Cool on cookie sheet on wire rack 15 minutes before serving. Serve with crackers and additional preserves, if desired.

Steps:
- In a large mixing bowl place figs and sprinkle with baking soda. Pour the boiling water over the figs and soak for 1 hour.
- Drain figs and rinse thoroughly with cold water. In a large Dutch oven combine the sugar and the 4 cups of water; bring to a boil and cook for 10 minutes.
- Add the figs and lemon slices to the syrup in the Dutch oven and cook for 1 hour, stirring occasionally.
- Spoon figs into hot, sterilized jars and spoon syrup over figs, leaving 1/2 inch of head space. Top jars with lids and screw bands on tightly. Process for 10 minutes in a hot water bath.
