HOMEMADE FILET-O-FISH BURGER (BAKED!)
Recipe video above. Tastes remarkably similar to McDonald's with the added bonus that it's bigger, it's healthier and you know exactly what goes in it! Toasting the breadcrumbs guarantees beautiful golden, truly crunchy fish fillets even though these are baked. Fry option - follow the dredge / crumbing / fry steps in this Schnitzel recipe.

Steps:
- Mix ingredients in a bowl. Set aside for 10 minutes+.
- Preheat oven to 180C/350F.
- Spread breadcrumbs on a tray. Spray with oil directly down, not from side.
- Bake for 3 - 5 minutes until golden. Immediately transfer to bowl.
- Brush tray clean, spray with oil.
- Cut fish fillets into square-ish shapes slightly larger than the buns (they shrink when cooked).
- Mix Batter ingredients in a bowl.
- Carefully coat fish in batter (handle with care, fish fillets can be delicate).
- Place in breadcrumbs. Use other hand to cover top and sides with breadcrumbs, pressing to adhere. Transfer to tray. Repeat with remaining fish.
- Bake 12 - 15 minutes until fish is cooked through. Immediately top with cheese - allow residual heat to make it semi melt (do not oven melt processed cheese, you get a plasticy film!).
- Cut buns in half, microwave for 20 seconds to warm through (microwave = stays soft).
- Top with fish and cheese, dollop with tartare sauce. Devour!

FILET-O-FISH
A copycat of the Filet O fish sandwich found at the golden arches. Introduced by a franchise in Ohio to sell due to the Catholic practice of not eating meat on Fridays. For an authentic "'O-Fish" use 1/2 a slice of American cheese and rehydrated, dehydrated onion. For McDonald's style onions Add 3 parts water to 1 part dried minced onion. Allow Dehydrated Onions to hydrate for about 20 minutes or until fully rehydrated and drain.

Steps:
- In a small bowl, mix together the mayonnaise, relish, onions, salt and set aside. This is your tartar sauce.
- Lightly grill the top of the buns.
- Cook the fish according to the package instructions.
- (You can bake the fish, but your sandwich will taste much more like the original if you fry it in oil).
- Spread tartar sauce evenly on the top buns.
- Place half a slice of cheese on the bottom buns.
- Place the cooked fish on top of the cheese slice, and top off the sandwiches with the top bun.

- Bake the fish fillet (cod or halibut work best) according to package directions. (Trader Joe's has *amazing* breaded fillets!).
- When the fish has another minute to go, fork-split and toast the English muffin.
- Place cheese on one half of the toasted muffin, tartar sauce on the other, and sandwich the cod fillet in between.
- Enjoy with crisp oven fries and a side salad for near-instant dinner!

- Stir together mayonnaise, relish, and lemon juice in a small bowl. Cover and chill until ready to use.
- Pulse panko in a small food processor until finely ground, about 15 pulses. Transfer to a shallow bowl. Whisk together eggs and 1 tablespoon water in a separate shallow bowl.
- Cut cod into 4 portions (about 3- x 3-inches and 1/2-inch thick). Dip each portion into egg mixture, let excess drip off, and then dredge in ground panko. Repeat with remaining portions.
- Heat 1-inch of oil in a medium skillet over medium-high until oil reaches 300°F. Fry fish until lightly browned, about 2 minutes per side. Transfer to a plate lined with paper towels, and sprinkle with salt. To serve, place 1/2 of a cheese slice on bottom on each bun, and top with a piece of fish. Spread 1 tablespoon of tartar sauce on each piece of fish; cover with top bun.
