In honor of Cinco de Mayo, I'm offering up my own spin on Huevos Rancheros. This is a lightened-up version that's great for breakfast, lunch or dinner. The fresh salsa is a refreshing alternative and really brightens up an otherwise heavy dish.

1/2 cup cherry tomatoes, diced
2 tablespoons red onions, diced
2 tablespoons fresh cilantro, chopped
2 teaspoons fresh jalapeno peppers, minced
1 teaspoon fresh lime juice
1 teaspoon olive oil
2 small corn tortillas
1/2 cup refried beans, fat free (spicy)
2 eggs
1/4 cup reduced-fat Mexican cheese blend
1/2 avocado, sliced
2 tablespoons low-fat sour cream
salt and pepper

Steps:

  • For the salsa, mix the tomatoes, red onion, cilantro, jalapeno pepper, lime juice and olive oil in a small bowl. Season with salt and pepper and set aside.
  • Toast the corn tortillas (I put them right in the toaster oven and they crisp up perfectly even).
  • Fry eggs until over-easy.
  • To assemble, top each tortilla with beans, egg and cheese. Broil until cheese melts. Finish with avocado, salsa and sour cream.

2 cups masa harina
1 teaspoon salt
Vegetable oil, for frying
2 Roma tomatoes, cored and scored
1 red onion, quartered
1 jalapeno
12 to 15 clams
5 sprigs fresh cilantro
1 teaspoon garlic
1 tablespoon salt
1 tablespoon olive oil
6 eggs
1 Roma tomato, diced
5 sprigs fresh cilantro, chopped
1/2 cup canned black beans, rinsed
Salt and freshly ground black pepper
Cojita cheese, crumbled
Asian hot sauce (recommended: Sriracha)

Steps:

  • For the sopes: Mix the masa harina with the salt and slowly add 1 cup water. Combine until the masa turns into a soft dough and forms a ball. Grab a small ball of dough about the size of a lemon and form a patty 1/2-inch thick. In a saute pan, add 1 tablespoon vegetable oil and lightly fry the patty on both sides for 2 to 3 minutes each side. Remove from the pan and cool slightly. Add more vegetable oil to the pan, about a 1/2-inch up the side of the pan, and heat. In the meantime, start forming the sopes by pushing into the center of each patty to create a small shallow bowl or "sope". Fry the sopes for a second time until golden brown. Set aside.
  • For the clam salsa: Bring a small pot of water to a boil and add the tomatoes, onion and jalapeno. After 10 to 15 seconds, pull out the tomato and peel the skin. Place in a blender. Continue to boil the onion and jalapeno for 10 more minutes. Remove from the pot and add to the blender. Add the clams to the water and cover. Cook over high heat until the clams open, about 5 minutes. In the meantime, add the cilantro, garlic and salt to the blender and pulse 1 to 2 minutes. Pour into a bowl and set aside. Once the clams have cooked, remove the meat from the shells and add to the salsa. Taste and adjust seasoning if necessary.
  • For the huevos rancheros: In a saute pan over medium heat, add the olive oil and eggs. Just as the eggs start coming together, add the tomatoes, cilantro and beans. Scramble until soft. Season with salt and pepper.
  • To build the sopes: On each sope, place a spoonful of the eggs, top with salsa and include 3 to 4 clams. Top with some cojita cheese and a drizzle of hot sauce.

1 medium white onion, roughly chopped
1 red bell pepper, roughly chopped
1 green bell pepper, roughly chopped
4 roma tomatoes, seeded and roughly chopped (also called plum tomatoes)
1 tablespoon garlic, chopped (about 4 cloves)
1 (14 ounce) can diced tomatoes in tomato puree
1 (7 ounce) can tomatillos, drained
1 (7 ounce) can green chilies, drained and chopped (or buy already chopped)
1 teaspoon pureed chipotle chile (can use the canned chipotle chilies, minced) (optional)
1 jalapeno pepper, seeded, finely chopped (more or less to taste)
1/4 cup fresh cilantro, chopped
1 tablespoon frozen orange juice concentrate
1 teaspoon ground cumin, toasted in a dry pan until fragrant
1 teaspoon dried oregano
1/4 teaspoon ground cinnamon
salt and pepper

Steps:

  • In a large heavy bottomed skillet, heat the oil over medium high heat until hot but not smoky. Add onion, peppers, and roma tomatoes; cook 5 minutes or until onion is translucent.
  • In a food processor, puree garlic, diced tomato, and tomatillos. Add to onion mixture. Cook 5 minutes more.
  • Add chilies, chipotle, jalapeno, and cilantro.
  • Stir in orange juice concentrate, cumin, oregano, cinnamon, salt and pepper.
  • Cook 5 more minutes or until desired thickness.

Eggs "rancher's style" is a traditional, hearty Mexican breakfast typically enjoyed after a hard morning's work. But it also makes for a satisfying and comforting weeknight dinner. The simple yet flavorful homemade salsa comes together quickly and is smartly used in three ways: a quick simmer transforms the salsa into the warm ranchero sauce; it adds a zesty flavor that shines through in the smoky refried beans; and it gives a final fresh finish as a tangy topping. Any leftover ranchero sauce and refried beans make for great dips the next day.

2 pounds ripe tomatoes, diced
3/4 cup finely chopped white onion (from ½ medium onion)
2 tablespoons lemon juice
1 small jalapeño, stemmed and minced
2 teaspoons kosher salt, such as Diamond Crystal, plus more for seasoning
1/2 teaspoon grated garlic
1/4 cup neutral oil, such as safflower or canola
2 (15-ounce) cans black beans
3/4 teaspoon ground cumin
1/4 teaspoon smoked paprika
8 large eggs
2 tablespoons chopped cilantro leaves, plus more for serving
8 (6-inch) warmed corn tortillas
Sliced avocado and crumbled queso fresco, for serving

Steps:

  • In a medium saucepan, combine tomatoes, onion, lemon juice, jalapeño, 2 teaspoons salt and ¼ teaspoon of the garlic, and mix well. Transfer 1½ cups of the fresh salsa to a bowl and set aside.
  • Cook the remaining salsa over medium-high heat, stirring frequently, until the tomatoes soften and the sauce thickens, about 10 minutes. Transfer the ranchero sauce to a bowl and cover to keep warm (you should have about 2 cups).
  • In the same saucepan, heat 2 tablespoons of the oil over medium. Add the remaining ¼ teaspoon garlic and stir until fragrant, 30 seconds. Add the beans (and their liquid), cumin, smoked paprika and ½ cup of the reserved fresh salsa, and cook over medium-high heat, stirring frequently and mashing with the back of a spoon or potato masher, until the mixture is smooth and thick, about 10 minutes. Season with salt to taste and remove from heat.
  • In a 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium. Crack in 4 of the eggs and cook undisturbed until whites are set but yolks are still runny, 4 to 5 minutes. Transfer to a large plate and repeat with the remaining oil and eggs.
  • Meanwhile, stir the cilantro into the remaining 1 cup reserved salsa. Divide the tortillas across 4 plates (2 per plate). Spread refried black beans on the tortillas and top each with an egg. Cover the eggs with ranchero sauce. Divide avocado on the plates and garnish with some of the fresh salsa, queso fresco and cilantro.

½ medium onion, finely chopped
½ green bell pepper, finely chopped

¼ teaspoon ground black pepper
nonstick cooking spray
8 large eggs
4 (6 inch) corn tortillas
chopped fresh cilantro

Steps:

  • Heat oil in a medium skillet over medium heat; stir in onion, bell pepper, and jalapeno pepper. Cook and stir until vegetables have softened, 3 to 4 minutes. Add drained tomatoes, paprika, salt, cumin, and pepper. Simmer, uncovered, for 5 minutes. Set salsa aside.
  • Spray some cooking spray on both sides of a tortilla and place it in a 6-inch skillet (such as an IMUSA® egg pan) over medium-low heat. Cook until tortilla starts to brown, 3 to 4 minutes.
  • Flip tortilla and carefully crack 2 eggs on top. Place 2 heaping teaspoons salsa between the eggs, cover pan, and reduce heat to low. Cook until eggs are set, 3 to 4 minutes; remove to a serving plate. Repeat with remaining tortillas, salsa, and eggs. Serve with chopped cilantro.
