BRAISED COUNTRY-STYLE PORK RIBS



Braised Country-Style Pork Ribs image

3 pounds bone-in country-style pork ribs
Kosher salt and freshly ground black pepper
3 tablespoons vegetable oil
1 carrot, chopped
1 stalk celery, chopped
1 onion, chopped
4 cloves garlic, minced
2 tablespoons tomato paste
1/4 cup apple cider vinegar
1 teaspoon crushed red pepper flakes
2 bay leaves
2 1/2 cups chicken stock
Creamy Polenta, recipe follows
2 tablespoons chopped fresh parsley, for garnish
Vegetable cooking spray
1 1/3 cups half-and-half
1 cup milk
2 tablespoons butter
1/3 cup coarse polenta, or corn grits
Kosher salt
1/2 cup grated Parmesan
Freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Pat the ribs dry and sprinkle with salt and pepper. Heat 2
  • tablespoons of the oil in a Dutch oven over medium-high heat and brown the ribs
  • on all sides, working in batches if needed. Remove the ribs and set aside. Add
  • the remaining 1 tablespoon of oil to the Dutch oven and reduce the heat to medium.
  • Add the carrots, celery, onions and some salt and pepper and cook until soft,
  • about 5 minutes. Add the garlic and cook until fragrant, about 1 minute. Add
  • the tomato paste and cook, stirring, to remove the raw flavor, about 3 minutes.
  • Deglaze the pan with the vinegar, and then add the red pepper flakes and bay
  • leaves.
  • Add the ribs back to the pan and add enough stock to reach
  • halfway up the sides of the ribs. Bring the pan to a simmer, cover and place in
  • the oven. Braise until the meat is tender, about 1 1/2 hours. During the last
  • half hour, uncover to allow the liquid to reduce and the pork to brown.
  • Serve the ribs with Creamy Polenta, spooning the sauce on
  • top, and garnishing with parsley.
  • Spray the insert of a slow cooker with cooking spray (for easier clean up) and preheat on high.
  • In a medium saucepan, add 1 cup of the half-and-half, the milk, 1 tablespoon of the butter and the polenta. Season with salt and bring to a boil over medium-high heat, whisking constantly to keep the mixture lump-free. Boil for 2 to 3 minutes. Pour the mixture into the slow cooker and cook on high for 2 hours, stirring once or twice per hour.
  • Once you are ready to serve, open the slow cooker and whisk in the remaining 1 tablespoon butter, the remaining 1/3 cup half-and-half and the Parmesan. Salt and pepper conservatively since the polenta will be served with a robustly salted dish.

2 small racks baby back ribs (1 1/2 to 2 pounds each), cut in half
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
3 tablespoons ancho chile powder
2/3 cup teriyaki-style barbecue sauce (such as Sweet Baby Ray's)
1/3 cup apple cider vinegar
1 tablespoon grated peeled fresh ginger
2 cloves garlic, grated
1/4 cup pineapple preserves
2 tablespoons ketchup
2 scallions, thinly sliced on an angle

Steps:

  • Generously season the ribs with salt and pepper, then rub with the vegetable oil and sprinkle with the chile powder, pressing to adhere. Whisk 1/3 cup barbecue sauce, the vinegar, ginger and garlic in a 6- to 8-quart slow cooker. Add the ribs and turn to coat in the sauce. Cover and cook on low until the ribs are tender, 7 hours.
  • Preheat the broiler. Transfer the ribs to a rimmed baking sheet. Remove 1/4 cup of the cooking liquid to a small bowl and whisk in the remaining 1/3 cup barbecue sauce, the pineapple preserves and ketchup.
  • Brush the pineapple sauce all over the ribs to coat completely; arrange bone-side down. Broil until the sauce is sticky and the ribs are lightly charred in spots, 3 to 5 minutes. Top with the scallions.

MELT-IN-YOUR-MOUTH BARBECUED RIBS

2 sides pork spareribs (about 6 pounds), separated
1 (28-ounce) can chunky tomato sauce
1/3 cup brown sugar
2 tablespoons red wine vinegar
1 tablespoon Worcestershire sauce
1 tablespoon reduced-sodium soy sauce
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon cayenne pepper

Steps:

  • Place the spareribs in the bottom of a slow cooker. In a medium bowl, whisk together the remaining ingredients. Reserve 6 tablespoons for BBQ Pizza.
  • Pour the mixture over the spareribs. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  • Reserve 1/2 of the ribs and pull the meat from the bones for the BBQ Pizza recipe.

Steps:

  • Mix the BBQ sauce, jam and soy sauce together in a bowl.

This is a wonderful tasty dish for those rainy days ahead. It has a mellow flavor and the meat is succulent but for some it may need a bit of hot sauce (I added 2 tbsp to the sauce).

1 large onion, peeled, sliced and separated into rings
3 -4 lbs country-style pork ribs
1 cup tomato juice
1 cup vegetable cocktail (or instead of Tomato juice and the vegetable cocktail use 2 cups extra spicy Clamato Juice)
2 tablespoons molasses
1 teaspoon Worcestershire sauce
3 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1/2 teaspoon poultry seasoning
salt and pepper
1 1/2 teaspoons cornstarch
4 tablespoons water

Steps:

  • Place onion rings in the bottom of your crock pot.
  • Place ribs on top (trim off any excess fat).
  • Whisk together the remaining ingredients except the corn starch.
  • Reserve 1 cup--cover and refrigerate this cup.
  • Pour remaining sauce over the ribs, cover pot.
  • Cook at low for 5-6 hrs, drain ribs, keep warm.
  • In a small saucepan, add 1 1/2 tsp cornstarch already mixed in cold water to the reserved sauce , simmer until it thickens.
  • Serve with noodles, rice or gnocchi.

20 ounces barbecue sauce (I use Famous Dave's Rich & Sassy or Ken Davis Original)

Steps:

  • Heat oven to 450 degrees.
  • Spray a baking pan with cooking spray. Add ribs.
  • Bake to brown apx. 25 - 30 minute.
  • Add water to crock pot.
  • Place ribs in pot. Cover with 1 to 1 ½ cups BBQ sauce.
  • Cook on High apx 3 hours (Add more BBQ sauce after 2 hours if necessary.).

1 onion, sliced
1/4 cup ketjap manis (dark sweet soy sauce)
1/4 cup pineapple juice
1 lime, juice of (no seeds)
2 tablespoons tomato ketchup

1 teaspoon grated fresh ginger
1/2 teaspoon ground turmeric
1/2 teaspoon ground cayenne pepper
3 -4 Thai red chili peppers, slice thin (optional)

Steps:

  • Place ribs in the bottom of the crock pot.
  • Separate onion into rings and place on top of pork.
  • In a small bowl, mix together ketjap manis, pineapple juice, lime juice, ketchup, brown sugar, ginger, turmeric, and cayenne pepper until blended.
  • Pour mixture over pork and onions.
  • Cover crock pot and cook on low for 6-8 hours or on high for 3-4 hours or until pork is tender and cooked through.
  • Serve pork with rice (if desired), garnished with slices of hot chiles.
  • Serving suggestion: for my dinner, I also took some sliced crimini mushrooms and snow peas (about 2 cups each), and stir-fried those with some hot chilies until they were partly cooked, then added a ladle of the sauce from the crock and allowed it to thicken onto the veggies until the veggies were crisp tender; I served the veggies also with chunks of fresh pineapple on the side.

2 cups baby carrots
1 large onion, coarsely chopped
1 large green bell pepper, cut into 1 inch pieces
1 large red bell pepper, cut into 1 inch pieces
2 teaspoons garlic, minced
2 tablespoons cajun seasoning, divided (or Creole Seasoning)
3 1/2-4 lbs pork ribs (country-style)
1 (14 1/2 ounce) can stewed tomatoes, undrained
2 tablespoons water
1 tablespoon water
1 tablespoon cornstarch
hot cooked rice

Steps:

  • Combine carrots, onion, bell peppers, garlic, and 2 tsp Cajun or Creole seasoning in slow cooker; mix well.
  • Trim excess fat from ribs. Cut into individual riblets. Sprinkle 1 tbsp Cajun or Creole seasoning over ribs; place in slow cooker over vegetables. Pour tomatoes with juice over ribs (slow cooker will be full.) Cover; cook on LOW 6 to 8 hours or until ribs are fork tender.
  • Remove ribs and vegetables from cooking liquid to serving platter. Let liquid stand 5 minutes to allow fat to rise. Skim off fat. Blend water, cornstarch, and remaining 1 tsp Cajun or Creole seasoning until smooth; stir into slow cooker. Cook, uncovered, on HIGH 15 to 30 minutes or until sauce is thickened. Return ribs and vegetables to sauce; carefully stir to coat. Serve with rice.
