1 can (10 3/4 ounces) Campbell's® Condensed Cream of Potato Soup
1 cup milk
1/4 teaspoon dried thyme leaves, crushed
1/8 teaspoon ground black pepper
4 cups cooked cut-up vegetables *
2 cup cubed cooked chicken OR turkey
4 cups prepared Pepperidge Farm® Herb Seasoned Stuffing

Steps:

  • Stir the soups, milk, thyme, black pepper, vegetables and chicken in a 3-quart shallow baking dish. Top with the stuffing.
  • Bake at 400 degrees F for 25 minutes or until the stuffing is golden brown.

16.3 ounce can Grands refrigerated biscuits
1 large egg
1/4 cup sugar
1 1/2 teaspoon ground cinnamon ((or cinnamon))
1 teaspoon vanilla extract
1/4 cup heavy cream
1 cup milk
1/4 cup (1/2 stick) salted butter, (melted)
1 cup light brown sugar, (packed)
2 tablespoons corn syrup
1/2 cup chopped pecans
1 teaspoon ground cinnamon

Steps:

  • Cut each of the biscuits into 6 pieces and set aside.
  • In a large bowl whisk the egg till frothy then whisk in sugar, vanilla, and cinnamon. Finally, mix in the heavy cream and milk until combined well.
  • Add the chopped biscuits into the cream mixture and stir well. Allow to soak for about 5 minutes.
  • Preheat oven to 350°F and spray the bottom of a 9"x13" pan with nonstick spray or line with nonstick aluminum foil.
  • Remove the biscuits from the cream mixture using a mesh strainer (discard the remaining liquid.) This part is just like making regular French Toast.
  • Place biscuits in an even layer into the bottom of the baking dish.
  • Cover french toast with foil and place on the middle rack in the oven and bake for 20 minutes.

TRADITIONAL FRENCH RECIPE: I made this duck casserole recipe last fall for the first time. It was a bit labor intensive, but well worth the effort! My dinner guest, my wife, brought the wine ( paired well ) and we still talk about that meal. I use that meal to get back at her when we fight. It's aways nice to remind her all the work I put on the dinner from time to time. LOL

2 cans Whole Peeled Tomatoes
1 bag Dried Cannellini White Beans
2 cups Duck Stock
2 Boneless Skin-On Duck Breasts
1 Duck Sausage
1 Slab Bacon
2 Onions
1 cup Fresh Bread Crumbs
3 tablespoons Duck Fat
1 Garlic Head
2 tsp Whole Black Peppercorns
8 Sprigs Thyme
6 Sprigs Parsley
1 teaspoon Whole Cloves
2 Bay Leaves
Kosher Salt
Freshly Ground Black Pepper
Cheesecloth
Country Bread

Steps:

  • 01 - Soak the Cannellini Beans overnight and drain them when you are ready to start. 02 - Crushed by hand the Peeled Tomatoes in a bowl. Set aside.03 - Peel and smash the Garlic and thinly slice the Onions. Place in a small cup and set aside.04 - In a saucepan, over medium-low heat, boil Beans and Bacon in about 2L / 4.4lb / 10 cups of water. 05 - Put Peppercorns, Cloves, Thyme, Parsley, and Bay Leaves onto the cheesecloth, tie into a tight package and add to pan. 06 - Cook for about one hour or until the Beans are tender. 07 - Remove the herbs, cover the pan with lid and set aside. 08 - Season the Duck Breasts with Salt only, and cook using a second saucepan over medium-high heat. No oil needed in this case. Cook both sides for 4 minutes each. 09 - Place the Breasts into a pot and set aside. 10 - Now cook the Sausage for about 4 minutes, or until browned.

  • For the riceCombine the rice, milk, 1½ cup of water, salt and pepper in a broad non-stick pan, mix well and cook on a medium flame for 18 minutes, while stirring occasionally. Keep aside.
  • For the spinach-onion mixtureHeat the oil in a deep non-stick pan, add the onions and sauté on a medium flame for 1 minute.Add the spinach, green chillies and salt, mix well and cook on a medium flame for 4 to 5 minutes, while stirring occasionally. Keep aside.
  • For the tomato gravyCombine the tomatoes, onions and 1 cup of water in a broad non-stick pan, mix well and cook on a medium flame for 6 minutes, while stirring occasionally.Cool completely. Put it into a mixer and blend till smooth.Combine the tomato-onion mixture, chilli powder, oregano, chilli flakes, sugar, salt and pepper in a deep non-stick pan, mix well and cook on a medium flame for 10 minutes, while stirring occasionally.Add the cream, mix well and cook on a medium flame for 30 seconds. Keep aside.
  • How to proceedSpread the rice in a glass baking dish in an even layer.Spread the spinach-onion mixture evenly over it.Spread the tomato gravy evenly over it.Sprinkle the cheese evenly over it.Bake in a preheated oven at 200°c (400°f) for 10 minutes.Serve immediately.

Kosher salt and freshly ground black pepper, to taste
2 tablespoons unsalted butter
8 ounces cremini mushrooms, halved
3 large shallots, diced
2 stalks celery, diced
3 cloves garlic, minced
3 tablespoons all-purpose flour
1/2 cup dry white wine
2 cups chicken stock
1 pound baby gold potatoes, halved
4 sprigs fresh thyme
1 sprig fresh rosemary
1 bay leaf
1/4 cup heavy cream

Steps:

  • Preheat oven to 325 degrees F. Season chicken thighs with 1 teaspoon salt and 1/2 teaspoon pepper. Melt butter in a large skillet over medium heat. Working in batches, add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; set aside. Add mushrooms, shallots and celery, and cook, stirring occasionally, until mushrooms are tender and browned, about 5-7 minutes; season with salt and pepper, to taste. Stir in garlic until fragrant, about 1 minute. Whisk in flour until lightly browned, about 1 minute. Stir in wine, scraping any browned bits from the bottom of the skillet. Stir in chicken stock, potatoes, thyme, rosemary and bay leaf. Return chicken to the skillet. Place into oven and bake until potatoes are tender and chicken has completely cooked through, reaching an internal temperature of 175 degrees F, about 40-45 minutes. Stir in heavy cream; season with salt and pepper, to taste. Serve immediately.

2 pound chicken breast (pound to 1/2 to 3/4" thick)
8 ounces mushrooms (sliced)
1 medium zucchini (cut into 1/2" pieces)
1 teaspoon garlic (minced)
2 cups baby spinach
1/2 cup chicken broth
3/4 cup heavy cream
1 - 1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoonherbs de Provence
1/2 tsp xanthan gum or 2 tablespoons flour (option thickener; xanthan gum is the low carb option)

Steps:

  • 1. In a 12" skillet, melt butter over medium-high heat. Add chicken to the pan and cook for 6 minutes. Turn chicken after 3 to 4 minutes or when it begins to brown. Remove chicken, cover, and keep warm.
  • 2. Add leeks to skillet and saute until tender. Add mushrooms, zucchini, and garlic, sauteing until tender. Add spinach and saute until wilted. Reduce heat to medium-low and add the chicken back to the pan.
  • 3. Whisk chicken broth, cream, salt, pepper, herbs de Provence, and xanthan gum (or flour) together in a small bowl.
  • 4. Pour over chicken. Bring to a simmer (reducing heat if necessary) and cook for 10 more minutes, or until liquid is reduced and thickened. Stir frequently to prevent sticking.
