CRISPY CORIANDER POTATOES
Steps:
- Throw the potatoes in a large pot, cover with room temperature water, and season with salt. Set on a high flame and bring to a boil. Reduce to a simmer and cook until a fork inserted into the potatoes draws out without resistance, 15 to 20 minutes. Drain and set aside to cool. Once they're cool enough to handle, cut each potato into bite-size pieces.
- In a large skillet or wok, warm the oil until it's shimmering but not smoking. Add the fennel seeds; they should sizzle upon contact with the oil. Immediately add the potatoes, coriander, turmeric, thyme, salt, and pepper. Stir-fry until the potatoes get crispy and golden brown on the outside. Finish with the fresh cilantro and lime juice and serve.

Steps:
- First, take some water and wash fresh Coriander leaves and few fresh Mint leaves with it.
- Now chop Green chillies into small pieces.
- Once done, now take Coriander leaves, Mint leaves, green chillies, peanuts, sesame seeds in a blender jar.
- Now add Black salt, Table salt, Red chillies powder, Cumin seeds to it.
- Blend it until chutney gets a smooth texture. Add some water if required.
- Now take chutney in a bowl and add lime juice to it. Mix it well with a spoon so that lime juice dissolves well.
- Your tasty Green Coriander chutney or Green Sauce is now ready to be served with Pakoras and Parathas.

Steps:
- Halve the tomatoes, remove the seeds, chop the flesh and place in a sieve over a bowl so the excess juices can drain away.
- Put the onion and coriander into a bowl. Heat the oil and fry the cumin seeds for about 30 seconds then tip them into the bowl. Mix in the tomatoes, cover and chill.
- To serve, add some salt (see tip below) and serve.

- Cook the potatoes in salted boiling water until they start to fall apart. Drain and put back in the warm pan to dry out for a few mins. Mash the potato, egg yolk, coriander and spring onions together. Season with sea salt and ground black pepper, and mix in the lemon zest, cheddar and chilli. Shape into 8 cakes.
- Put the egg white in a bowl and whisk until foamy. Put the breadcrumbs on a plate. Dip the cakes in the egg white, allow the excess to drain off, then coat in the breadcrumbs, pressing to adhere well. Put on a tray lined with baking parchment, cover and chill for 15 mins or until ready to use.
- Heat the vegetable oil in a large, heavy-based, non-stick frying pan over a medium heat. Cook the cakes in batches for 2-3 mins each side, or until golden and heated through. Serve with the chutney and salad.

- In a blender or chutney grinder, add the chopped coriander leaves, chopped ginger and green chillies.
- Note that 2 teaspoons makes for a spicy green chutney. If you or any of your family member cannot tolerate spicy food, add ½ to 1 teaspoon of chopped green chillies.
- Add lemon juice, roasted cumin powder or ground cumin, black salt and pink salt, table salt or sea salt as required. You can add chaat masala at this step if you have it.
- Add water and blend or grind all the ingredients until smooth. Taste the chutney and add more salt or lemon juice if needed.
- Store the cilantro chutney in a covered bowl or container in the refrigerator.
- Use the chutney whenever required. It goes well with variety of Indian snacks like pakoras, sandwiches, samosa, burger, idli, dosa, dhokla, dabeli, bhel puri, sev puri and other chaat recipes.

- If using a wet grinder, add coriander leaves, grated coconut, onions, green chilli, sugar, salt, and tamarind paste. Pulse and grind, occasionally stopping to open the lid and wipe down the sides, to a chutney consistency. Add up to 2 tablespoon water id necessary, being careful that it does not become too fine or watery. OR If making in a mortar and pestle (aatukal) or on a grinding stone (sil-batta/ammi), place all ingredients together and pound or grind as you would any chutney. Loosen with a splash of water.
