4 (5 ounce) skinless, boneless chicken breast halves
¼ cup shredded mozzarella cheese
1 (10.75 ounce) can condensed cream of chicken soup
¼ cup white wine
1 cup stuffing mix
⅓ cup dried cranberries
¼ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a glass baking dish by spraying with cooking spray.
  • Place chicken breasts into baking dish and sprinkle with cheese. Stir together chicken soup and wine; pour over chicken. Sprinkle chicken with stuffing mix and cranberries; drizzle butter over top.
  • Bake in preheated oven until chicken has reached an internal temperature of 160 degrees F (70 degrees C), about 45 minutes.

1 ½ (1 ounce) packages dry onion soup mix
1 (16 ounce) can jellied cranberry sauce
1 cup French dressing

Steps:

  • Place the chicken breasts in a glass or non-reactive baking dish.
  • Stir the onion soup mix, cranberry sauce, and French dressing together in a bowl until well blended. Pour over the chicken breasts. Cover the baking dish with plastic wrap, and refrigerate at least 8 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove plastic wrap from the baking dish, and cover loosely with aluminum foil.
  • Bake chicken in preheated oven until top is bubbly and slightly browned, about 1 hour and 15 minutes.

This is my own variation of a dish my mom passed down to me. It can be used with turkey, too... which makes it perfect for THANKSGIVING leftovers!!! I have made this several different ways so please read the extra note at the bottom of the directions. This is my kind of comfort food!

1/2 lb cooked and pulled chicken (i usually use 2 chkn breasts)
10 oz frozen chopped spinach, thawed and drained
1 can(s) cream of mushroom soup
1 box stuffing mix
1 c dried cranberries
1 c shredded cheddar

Steps:

  • 1. Mix all ingredients until soup is well integrated.
  • 2. Heat oven to 350. You can use a 2 1/2 qt baking dish and bake for 35-40 minutes. If you use a 9x11 dish, bake for 25-30 minutes. COVERED. Let stand for 10 minutes, then serve.
  • 3. NOTE: I have made this recipe several different ways, and here are some variations that you may prefer. You can use fresh spinach, but add 1/2 cup of chicken broth to the mix for best results. Works great with your leftover Thxgvg turkey. Give it a try! Use as much or as little meat as you like. 1/2 lb is a guesstimate. My husband likes "more meat" so sometimes I use 3 chicken breasts instead of 2. This is a great casserole to whip up for friends or family when they're not able to take the time to make homemade meals. It reheats well so you can fully cook it, or just refrigerate the mixture in a baking dish and give them directions for cooking. Please try my recipe and share your comments!

One 1-ounce envelope dried onion soup mix
One 16-ounce can whole berry cranberry sauce
2 pounds boneless, skinless chicken breasts

Steps:

  • Preheat the oven to 350 degrees F.
  • In a 9x13-inch casserole dish, combine the dressing, soup mix and cranberry sauce. Add the chicken and turn to coat.

6 boneless skinless chicken breast halves (4 ounces each)

4 bone-in, skinless chicken breasts
1 onion(s), medium, chopped
1 cup celery
3 tbsp Worcestershire sauce
1 tbsp extra virgin olive oil
½ tsp black pepper, coarsely ground
1 tsp thyme, dried
1 cup short grain brown rice
½ cup wild rice
½ lb cremini mushrooms
2 tbsp low-sodium tamari
or
2 tbsp low-sodium soy sauce
1 ½ cup water
1 ½ cup white wine
1 cup frozen peas
1 cup cranberries, fresh or frozen
¼ cup parsley, fresh, minced

Steps:

  • Combine diced onion and celery with all but last 3 ingredients in slow cooker. Mix well.
  • Top with skinless chicken breast, bone side up.
  • Cover and cook on low heat 6-8 hours (less if high setting and/or boneless breasts are used).
  • Stir in frozen peas and cranberries and cook on low another 15-30 minutes.

1 bottle kraft creamy french dressing 16 oz
12 boneless/skinless chicken thighs

Steps:

  • 1. Mix dry soup mix and Kraft dressing and can of whole cranberries, best if left over night in the refrigerator, but you can speed it up and let it rest 45 mins till onions are hydrated.
  • 2. lay chicken thighs in a single layer in a 9x13 baking dish[ you could use boneless/skinless breasts but depending on size alter the time down since they cook faster]

2 pound(s) chicken thighs and legs
1 - yellow onion diced
2 tablespoon(s) chopped fresh garlic
2 tablespoon(s) butter
1 tablespoon(s) olive oil, extra virgin

Steps:

  • Rinse and pat dry chicken legs and thighs. Heat butter and olive oil over medium heat. Saute chicken legs until golden.Remove chicken and place in a roasting dish.
  • Caramelize onions in the same pan you cooked the chicken in.Add garlic and saute for 1 minute. Do not brown the garlic.
  • Add cranberry sauce, red wine, salt, pepper and brown sugar. Cook over medium for about 10 minutes or until it begins to thicken.
  • Pour sauce over chicken and bake at 350 degrees for 45 minutes to an hour, uncovered.
  • Remove roasting dish from oven, sprinkle with fresh chopped rosemary. Serve with rice and a nice green vegetable.

1 1/2 (8 oz.) bags of Pepperidge Farm Cornbread Stuffing
1 medium onion, chopped, about 3/4 cup
3/4 c. diced celery
1-1 1/2 c. chicken broth
1 c. dried cranberries
1 can cream of chicken soup
1 can cream of celery soup
1 (8 oz.) pkg. cream cheese, softened
3/4 c. chopped pecans

Steps:

  • Preheat oven to 350 degrees. Mix cornbread stuffing with onions, celery and enough chicken broth to moisten. Combine soups with cream cheese and heat in microwave for a few seconds until it is easy to mix. Set aside. Spray with a non-stick cooking oil. Spread a thin layer of stuffing on bottom of dish. Layer with cranberries. Spread chicken next; then, layer cranberries over top. Spread soup mixture evenly over the chicken. Add more cranberries. Top with remaining stuffing. Sprinkle remaining cranberries and pecans over stuffing. Bake for about 35-45 minutes until dressing is browned on top and bottom. May need to put foil on top if it browns too quickly.
