CRANBERRY TEA
Easy homemade cranberry tea made with real cranberries, cinnamon and apple juice.

Steps:
- Rinse your cranberries with cold water and place them in a large stockpot. Pour four cups of water over them. Stir in 2 whole cinnamon sticks and 6 whole cloves and turn on the heat.
- Cook the cranberries for 15 minutes on medium high heat until they are popped and gushy. While still hot, strain the cooked cranberry mixture into a large bowl.
- Add the juice of one lemon and one 12 oz. canister of 100% apple juice concentrate to the bowl. Strain your cranberry, lemon and apple concentrate one last time into a glass quart size container.
- When ready to serve, pour 4 cups boiling water over 1 cup cranberry mixture concentrate.

- In a Dutch oven, combine the water, cranberries and cinnamon. Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until berries pop, stirring occasionally., Remove from the heat. Discard cinnamon. Strain cranberry mixture through a cheesecloth-lined colander. Return to Dutch oven. Stir in the sugar, orange juice and lemon juice; heat through. Serve warm.

- Place the cranberries and water into a large pot. Bring to a boil and cook just until the berries pop, about 5 minutes. Remove from the heat and let stand at room temperature until cold, several hours.
- Strain out the cranberries and stir the orange juice, pineapple juice, lemon juice and sugar into the liquid. Add the cinnamon stick, whole cloves and allspice berries. Bring to a low boil. It is ready to serve at this point, but it is even better if you allow it to sit overnight.

The name is a bit misleading...there's no tea here... but this hot drink is a nice change of pace especially around the holidays. I always buy extra cranberries when available and throw them in the freezer.

- Boil cranberries with 2 qts water until berries pop.
- Let set 5 minutes.
- Strain.
- Discard solids and return juice to stove.
- Add 2 cups water, cinnamon sticks and sugar.
- Bring to a boil; boil 1 minute.
- Cool.
- Add lemon and orange juices.
- Heat and serve.
- Store in refrigerator.

- In a large saucepan, combine the cranberries, ginger, cloves, cinnamon and water.
- Bring to a boil, reduce heat.
- Simmer 5 minutes or until cranberries pop.
- Remove from heat and stir in the honey.
- Add the tea bags and let stand 5 minutes, stirring once.
- Strain through 2 layers of wet cheesecloth.
- Return to saucepan and add the apple juice.
- Reheat and serve hot.
- (keep the extra tea in the fridge and microwave it by the cup if you wish).

- Preheat oven to 350 degrees. Lightly oil and flour an 8 1/2-by-4 1/2-inch loaf pan. Spread oats on a rimmed baking sheet and toast until golden brown and fragrant, about 10 minutes. Transfer to a food processor and pulse until finely ground. Place in a large bowl; stir in flour, sugar, baking powder, baking soda, salt, and cardamom.
- In a separate bowl, stir together yogurt, oil, and eggs; whisk until combined. Make a well in the center of the dry ingredients and pour in the liquid ingredients; stir until just combined. Fold in cranberries and ginger.
- Spoon mixture into the prepared pan and smooth top with a rubber spatula. Bake until a toothpick inserted in center of the loaf comes out just clean, about 50 minutes. Check the loaf after 30 minutes and tent with aluminum foil if browning too quickly. Cool 10 minutes in the pan, and then run a metal spatula around edges and invert loaf onto a rack. Turn right side up to cool completely before slicing.

- Combine 4 cups water and cranberries in heavy medium saucepan and bring to boil. When cranberries begin to pop, reduce heat to low, cover and simmer mixture until cranberries are very tender, about 10 minutes.
- Place 1 cup mint leaves in heat-proof pitcher or coffeepot. Set fine strainer atop pitcher. Pour cranberry mixture into strainer, pressing on solids to extract as much juice as possible; discard solids. Add 1/2 cup sugar to pitcher; stir until sugar has dissolved.
- Refrigerate mixture until cold. (Can be prepared 1 day ahead. Keep chilled.) Garnish with mint sprigs and serve.
