This Crock Pot Green Bean Casserole is a must-have side dish on any holiday table! It's easy, tasty and no oven is required!

- In the bottom of a 6-quart slow cooker, mix together the cream of mushroom soup, milk, onion powder and ground pepper. Stir until all ingredients are well combined.
- Add in green beans, parmesan cheese, cheddar cheese and half of the french fried onions. Stir gently until well combined.
- Cook on low for 2 hours, stirring occasionally. When cooking time is complete, stir mixture well and add in the remaining french fried onions and cook for an additional 20-30 minutes.
- After the additional 20-30 minutes is up, remove the dish from the slow cooker and serve immediately.

SLOW-COOKER GREEN BEAN CASSEROLE
This comforting side dish takes a couple of supermarket short-cuts: Buy pre-sliced mushrooms and canned french-fried onions to save on prep time. The raw cremini mushrooms are thrown right into the slow cooker and release their savory goodness while the green beans cook.

- Combine the green beans, mushrooms and 1 teaspoon salt in a 6-quart slow cooker.
- Melt the butter over medium-high heat in a large skillet. Add the onions and a pinch of salt and cook, stirring occasionally, until the onions are tender and lightly browned, 6 to 8 minutes. Reduce the heat to medium, then add the garlic and cook, stirring constantly, until the garlic is just softened, about 2 minutes. Stir in the flour and stir constantly until it thickens into a paste, about 2 minutes. Add the half-and-half and 1 teaspoon each salt and pepper and cook, whisking occasionally, until thickened, 8 to 10 minutes. Remove from the heat and season to taste with salt and pepper. Pour the sauce into the slow cooker and stir to coat the vegetables. (The sauce will loosen as it cooks.)
- Cover the slow cooker and cook on low until the green beans are tender but not mushy, about 4 hours. Remove the lid and stir. If the green beans look too soupy, cook for an additional 15 minutes uncovered. Season with additional salt and pepper to taste. Transfer to a shallow serving dish and sprinkle with the fried onions. Serve hot.
SLOW COOKER GREEN BEAN CASSEROLE
I was on a search for a slow cooker green bean casserole to take to a friend's house for Thanksgiving dinner. I couldn't find one I liked, so I mixed and matched and came up with this one! It was so good that I didn't have any leftovers. Happily fed 8 adults and 3 children. Use different spices for your taste! I added some onion powder and Italian seasonings. After you serve, leave the lid off of the slow cooker so the french-fried onions remaining crispy on top. You could also use cream of mushroom soup in place of the cream of chicken.

- Preheat the oven to 350 degrees F (175 degrees C). Fill a large bowl with ice and cold water.
- Bring a large pot of lightly salted water to a boil. Add green beans and cook, uncovered, until crisp-tender, about 6 minutes. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain and transfer to a large bowl
- Heat 3 tablespoons butter in a large skillet over medium-high heat. Saute onion in the hot butter until translucent, about 5 minutes. Add mushrooms and garlic; saute until mushrooms are just cooked through, about 5 minutes. Stir into green beans.
- Place remaining 5 tablespoons butter in a 2-quart, microwave-safe bowl. Microwave on high power in 30 second intervals, until melted.
- Add flour to melted butter and whisk until smooth. Add sea salt and pepper, then add 1 cup of milk; whisk until mixed together. Microwave for 2 minutes. Add the next cup of milk, whisking until smooth; microwave for 2 minutes. The roux mixture should thicken between additions, less so as each cup is added. Add remaining cup of milk; microwave for 2 minutes more, and then whisk.
- Pour the green bean mixture into a 9x13-inch baking pan. Add the thickened roux and combine. Add salt and pepper if desired.
- Bake in the preheated oven until warm and bubbly, about 30 minutes. Top with crispy fried onions and return to the oven for 5 minutes.

- Heat 2 tablespoons olive oil in a 12-inch nonstick skillet over medium-high heat. Add shallots; cook until deep golden, stirring occasionally, 4 to 5 minutes. Drain shallots on paper towels, reserving drippings in skillet.
- Add green beans, water, 1/4 teaspoon salt, and 1/8 teaspoon pepper to reserved drippings. Cook over medium-high heat, covered, for 2 minutes. Cook, uncovered, until beans are crisp-tender and starting to blister, stirring occasionally, about 6 minutes more. Transfer to a platter; keep warm.
- For mushroom sauce, add the remaining 1 tablespoon oil to the skillet. Add mushrooms; cook and stir over medium heat for 1 minute. Add thyme, garlic, and remaining 1/4 teaspoon salt and 1/8 teaspoon pepper. Cook until mushrooms are golden, stirring frequently, about 2 minutes more. Mix in flour; gradually stir in milk. - Trim the green beans and cut into 1-inch pieces (don’t be tempted to cut them larger than this, or your green beans will turn out too firm). Add them to a 5 or 6-quart slow cooker.
- Melt the butter in a wide saucepan over medium heat. Add onion and mushrooms. Cook, stirring occasionally, until the onion is soft and golden and the mushrooms brown and have given up their liquid, about 12 minutes.
- Sprinkle the flour over the top. Cook, stirring constantly, for 1 to 2 minutes more, until all of the flour turns golden and no white bits remain. The vegetables will seem dry.
