PEA DIP WITH PARMESAN

Pea Dip With Parmesan image

With dips there is always something new, because if you substitute "thick purée" for "dip," the options are limitless.

Provided by Mark Bittman

Categories     quick, appetizer

Time 10m

Yield At least 8 servings

Number Of Ingredients 9

3 cups peas (frozen are fine; no need to defrost)
About 1 cup stock or water, as needed
3 tablespoons toasted pine nuts, roughly chopped
1 cup freshly grated Parmesan
1/2 teaspoon minced garlic
1/4 cup chopped fresh mint or more to taste
2 tablespoons extra virgin olive oil
Salt
freshly ground black pepper

Steps:

  • Put peas in a pan with just enough stock or water to come half way up their height. Cook for about 3 minutes, or until peas are bright green and tender. Put all but 1 cup of peas in a food processor or blender, and add just enough cooking liquid to start purée. When purée is relatively smooth, transfer it to a bowl and stir in remaining cup of peas.
  • Add pine nuts, cheese, garlic, mint and olive oil. Sprinkle with salt and pepper; taste and adjust seasoning, then thin with more liquid if necessary. Serve or refrigerate.

HERBED PEA DIP

Herbed Pea Dip image

Whenever I need a last-minute appetizer or snack, I pull out a bag of frozen peas, cook them briefly to defrost, then pulse them with whatever flavorings I have on hand like garlic, fresh herbs and olive oil. This dip is always a huge hit served with grilled bread or crudite.

SWEET PEA DIP

Sweet Pea Dip image

"This creamy dip on crunchy bread is super satisfying."

Provided by Michael Symon : Food Network

Time 10m

Yield 6 servings

Number Of Ingredients 9

2 cups fresh or frozen peas
Kosher salt
1 cup fresh sheep's milk ricotta cheese
Grated zest of 1/2 lemon
1/2 cup grated parmesan cheese
2 tablespoons chopped fresh mint
Freshly ground pepper
2 tablespoons extra-virgin olive oil
Grilled bread, for serving

Steps:

  • Add the peas to a large pot of well-salted boiling water. (Make sure there is way more water than peas and enough salt for it to taste like the ocean.) Boil the peas for about 30 seconds. Remove the peas to an ice bath.
  • In a food processor, combine the ricotta, lemon zest, parmesan and mint. Drain the peas and add them to the food processor. Pulse just until the mixture comes together; you want to keep a little texture and not make it totally smooth. Season with salt.
  • Spoon the mixture into a serving bowl, crack some pepper over the top and drizzle with the olive oil. Serve the pea dip with grilled bread.

  • If using fresh peas, bring the peas to boil in a small pot of water and cook until tender. Don't cook for so long they lose their bright green colour. Strain and run under cold water to stop the cooking process. Reserve a cup of the cooking water.
  • Place the peas, lemon juice and zest, olive oil, mint, garlic and tahini in a food processor or blender and process until you have a smooth consistency. Fresh peas will take longer than frozen so pulse frozen peas gradually so you don't over-process.
  • If using fresh peas, you may require more liquid to achieve the desired consistency. Additional olive oil and some of the cooking water can be added slowly until you have the right consistency and smoothness of a dip purée.
