FRESH PINEAPPLE UPSIDE-DOWN CAKE

Fresh Pineapple Upside-Down Cake image

Canned pineapple can be great, but when the fresh fruit is at its ripest this classic cake is absolutely sublime.

Yield 8-10 servings

Number Of Ingredients 11

1 2/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 fresh pineapple, halved lengthwise, cored, and peeled
1 1/2 sticks (3/4 cup) unsalted butter, softened
1/2 cup packed light brown sugar
2/3 cup granulated sugar
1 teaspoon pure vanilla extract
2 large eggs
2/3 cup well-shaken buttermilk

  • Sift together flour, baking powder and soda, and salt into a bowl. Cut pineapple crosswise into 1/4-inch-thick wedges.
  • Butter a 9-inch round cake pan (2 inches deep) lightly on side and generously on bottom of pan using 1/2 stick butter. Sprinkle all of brown sugar evenly over bottom and arrange pineapple over it, starting in center of pan and overlapping slices slightly.

Reduce speed to low and add flour mixture alternately with buttermilk in batches, beginning and ending with flour and mixing just until batter is smooth.
  • Spread batter evenly over pineapple and bake until a wooden pick inserted in center of cake comes out clean, 40 to 45 minutes. Cool 15 minutes in pan on a rack, then invert cake onto a plate and remove pan. Cool to room temperature.

PINEAPPLE CAKE

Pineapple Cake image

A super moist cake with an abundance of pineapple flavor that's covered with a fluffy whipped vanilla buttercream frosting and finished with a thin blanket of shredded coconut. This is a cake that's sure to please a crowd!

Provided by Jaclyn

Categories     Dessert

Time 1h

Number Of Ingredients 16

2 1/4 cups (320g) all-purpose flour ((scoop and level to measure))
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 (20 oz) can crushed pineapple in juice ((I recommend using Dole))
3/4 cup (175ml) frozen pineapple juice concentrate, (thawed to room temperature* (I recommend using Dole))
1/2 cup (114g) unsalted butter, (softened)
1 cup (200g) granulated sugar
1 tsp lemon zest
3 large eggs
1 tsp vanilla extract
10 Tbsp (140g) unsalted butter, (nearly at room temperature)
1/4 cup (60ml) heavy cream
1 tsp vanilla extract
2 1/2 cups (320g) powdered sugar
1/2 cup (60g) sweetened shredded coconut

Steps:

  • Preheat oven to 350 degrees. Spray a 13 by 9-inch baking dish with non-stick cooking spray and set aside.
  • In a medium mixing bowl whisk together flour, baking powder, baking soda and salt for 20 seconds, set aside.
  • Set a fine mesh sieve over a bowl and pour pineapple into sieve to drain all of the juice well from canned pineapple, reserve the canned juice for another use (you should have a little over 3/4 cup drained).
  • If you'd like the pineapple to have a finer texture pulse it in a food processor about 15 times or so to chop it up a bit, this is optional.
  • In a medium bowl stir together crushed pineapple with pineapple juice concentrate, set aside.
  • In the bowl of an electric stand mixer fitted with the paddle attachment whip together butter, sugar and lemon zest until very pale and fluffy.
  • Mix in eggs one at a time then blend in vanilla extract.
  • Add in 1/3 of the flour mixture and mix just until combined then mix in 1/2 of the pineapple mixture and mix just until combined.
  • Add in another 1/3 of the flour mixture and mix just until combined then add in the remaining 1/2 of the pineapple mixture and mix just until combined.
  • Add in last 1/3 of the flour mixture the mix just until combined, remove bowl and scrape down bowl with rubber spatula just to evenly incorporate.
  • Pour batter into prepared baking dish and spread into an even layer.
  • Bake in preheated oven until toothpick inserted into center comes out clean, about 30 - 35 minutes.
  • Let cake cool completely on a wire rack.
  • For the frosting, in a clean bowl of an electric stand mixer whip butter until fluffy.
  • Add in heavy cream, vanilla, and powdered sugar and whip on high speed for approximately 5 minutes or so until it's very light and fluffy.
  • Spread frosting over cooled cake, top with coconut then cut into slices.
  • *You can heat this in the microwave to thaw but you'll want to heat in 15 second increments stirring between each just until lukewarm, if it's too hot it will melt the butter.

FRESH PINEAPPLE UPSIDE-DOWN CAKE

Fresh Pineapple Upside-Down Cake image

Provided by Food Network

Categories     dessert

Time 1h30m

Number Of Ingredients 13

1/2 cup blanched whole almonds
4 tablespoons unsalted butter, melted, plus 9 tablespoons unsalted butter, softened
1/2 cup packed brown sugar
2 tablespoons light corn syrup
1/2 pineapple, peeled, cored, cut in half lengthwise and cut crosswise into 1/2-inch slices
1 1/2 cups pastry flour
3/4 cup granulated sugar
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
3 large egg yolks
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees. Spread the almonds on a baking sheet and toast, shaking the pan occasionally, until lightly golden, 15 to 20 minutes. Set aside to cool. Turn the oven temperature down to 325 degrees. Stir together the melted butter, brown sugar and corn syrup and evenly coat the bottom and sides of a 10-inch glass pie plate with the mixture. When the almonds are cool, arrange around the bottom rim of the pie plate, with a few in the center, gently pressing them into the brown mixture. Arrange pineapple on top.
  • In a mixing bowl, combine the pastry flour, granulated sugar, baking powder, baking soda and salt and thoroughly mix. In another bowl, whisk together the softened butter, sour cream, egg yolks and vanilla. Add to the dry ingredients and mix with an electric mixer at medium speed about 1 1/2 minutes, scraping down the sides of the bowl occasionally, until thick and smooth. Using a spatula, spread the batter evenly over the fruit, building up the outside edges so the cake will be level when baked.
  • Bake 40 to 50 minutes, until golden brown and a tester inserted in the center comes clean. Transfer to a rack to cool 3 to 5 minutes (no longer) and then invert onto a serving plate, repositioning the fruit as necessary.

  • Preheat the oven to 350 degrees F. Grease an 8-inch or 9-inch round cake pan and line it with parchment paper (note: the 8-inch pan cuts it a bit close with the batter when the cake rises in the oven but won't spill over). Place the cake pan on a baking sheet.
  • In a medium bowl, whisk together the flour, cornstarch, baking powder, kosher salt and lemon zest (make sure the zest doesn't clump together). Set aside.
  • In a stand mixer fitted with the paddle attachment, cream the butter and sugar together for several minutes until light and fluffy (first on low speed and then gradually increasing the speed to medium high). Turn off the mixer and scrape down the sides of the bowl with a spatula.
  • Turn the mixer back on low speed and slowly add the eggs, one at a time, scraping down the bowl after the second egg. Allow the eggs to incorporate completely and then scrape down the bowl again. (This is a lot of eggs so don't worry if the mixture starts to break. The flour mixture will bring it back together.)
