CAJUN FRIED SHRIMP

Steps:
- Stir all the ingredients for the mayo together, adding lime juice to taste. Set aside.
- Coat the prawns in ½ tbsp Cajun spice mix. Decant the buttermilk into a bowl and give it a good stir to loosen slightly. In another bowl, mix the polenta, cornflour, mustard powder and remaining Cajun spice mix together.
- Fill a deep frying pan 2 inches full with oil. Heat to 180C on a cooking thermometer, or until a piece of bread browns in 20 seconds when it is dropped in the oil. Dip each seasoned prawn briefly in the buttermilk then coat in the flour mixture. Fry the prawns for 1-2 mins on each side until golden brown and curled. Drain on kitchen paper, then serve with the mayo and lime wedges for squeezing over.

Steps:
- Peel the shrimp leaving the tail.
- De-vein the shrimp by slicing halfway at the back and removing the vein.
- Alternatively, you can buy already de-veined shrimp.
- Rinse the shrimp and pat dry.
- Mix the all-purpose flour, cornflour and the Cajun seasoning.
- Lightly beat the eggs and mix with the buttermilk.
- Heat the oil in a skillet to 350F or 180C.
- Dip the shrimp in the egg mixture, let the excess drip away then coat in the flour and Cajun seasoning mixture.
- Shake off the excess mixture and deep fry on each side for two minutes or until golden brown.
- Ensure the skillet is not crowded.
- Repeat for all the shrimp.
- Drain excess oil on paper towels.
- Serve with the preferred sauce or dip.

- In a glass bowl combine together the milk and the mustard. Season the shrimp with the onion powder and cayenne.
- Dunk the seasoned shrimp in the milk mixture. Then dredge the shrimp with the corn meal and flour mixture and place in frying pan. (The oil is usually hot enough when a small pinch of flour dances on the surface of the oil). Fry until the shrimp float.
- Remove and drain on paper towels. To keep warm, preheat oven to 200 degrees. Place shrimp in oven until ready to eat.Or for a heart healthy way to prepare - Place shrimp on a cookie sheet that has been covered with foil and sprayed with Pam or other cooking spray. Bake at 350 degrees for 12 to 15 minutes.
