18 ounces dried apricots
1 ¾ cups water
1 tablespoon cornstarch
1 tablespoon orange liqueur
1 ¾ cups white sugar
1 recipe pastry for a 9 inch double crust pie

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Slice the dried apricots in half. Rinse them with water. Place them in a sauce pan with the water, bring to a boil and cook for 5 minutes.
  • Combine the cornstarch with the orange liqueur and about 1 tablespoon of the apricots' cooking liquid. Mix until smooth then stir into the cooked apricots. Add the white sugar and combine. Pour mixture into the unbaked pie shell and seal with the top crust. Brush milk over top crust for color, if desired.
  • Bake at 400 degrees F (205 degrees C) for 1 hour.

Apricot and peach fried pies have the best flavor of any fried pie I've ever eaten. My family loves these great pies. My grandmother made this up years ago. I have made this delicious fried pie for over 40 years. Enjoy!

4 cups all-purpose flour
2 teaspoons salt
1 cup shortening
1 cup milk
8 ounces dried apricots
1 (6 ounce) package dried peaches
¾ cup white sugar
water to cover
2 cups vegetable oil for frying

Steps:

  • To Make Crust: In a large bowl, mix together flour and salt. Cut in shortening until mixture is crumbly. Mix in milk and stir until dough forms a ball. Roll out dough and cut into 18 6-inch circles. Set aside.
  • To Make Filling: In a large saucepan, combine apricots, peaches, and sugar. Add enough water to cover fruit. Cover pan and cook over low heat until fruit is falling apart. Remove lid and continue to cook until water is evaporated.
  • Place oil or shortening in small high-sided skillet. Place over medium heat. Spoon equal amounts of filling into each pastry circle and fold in half. Seal pastry with a fork dipped in cold water.
  • Fry a few pies at a time in hot oil, browning on both sides. Drain pies on paper towels.

I had some dried apricots that I wanted to use, so I found this on the web. It is beyond delicious, and very easy! Slightly tangy and quite sweet! I think it would be fantastic a la mode with vanilla bean ice cream. :-)

1 pastry for 9 inch pie (double crust)
2 1/2 c dried apricots
2 c water (or enough to cover, see recipe)
1/2 c sugar
1/2 tsp cinnamon
1 Tbsp flour
1 Tbsp butter
1 tsp milk
1 tsp sugar (or less, see recipe)

Steps:

  • 1. Prepare pastry for double crust 9 inch pie. Line pan with bottom crust.
  • 2. Put dried apricots into microwave-safe bowl. Add just enough water to cover fruit (about 2 cups).
  • 3. Microwave for 15 minutes or until fork tender. Add sugar, cinnamon and flour. Set aside.
  • 4. Fill bottom of pastry lined pan with apricot filling. Dot with butter.
  • 5. Cover with second half of pastry, crimp and flute as desired.
  • 6. Brush top of pie crust with milk and sprinkle sugar on top.
  • 7. Bake at 400 degrees for 40-50 minutes. Cover crust edges with foil for first 15 minutes if desired, to prevent excess browning

The most common dessert on the range was dried fruit, usually peaches, apples, or apricots, often stewed up with plenty of sugar. "Cookie" might also add sugar to biscuit dough and fry it, as a rudimentary but tolerable doughnut. Enterprising cooks, who were paid more than even the top riders and cowhands, created fried fruit pies as a combination of the two desserts. This recipe takes a few liberties with the original dish, adding jam for extra fruit taste and sweetness, and lightening up the lard pastry. For the pastry, butter tasted the best, and lard makes it flake. You can substitute vegetable shortening for some of the lard, as done here, without losing the lightness. If you want the ultimate in flakiness, use a soft wheat flour. The lower gluten content does the trick.

1 1/2 cups dried apricots
1 1/2 cups water
1/2 cup apricot jam or 1/2 cup preserves
1/4 cup finely minced pecans or 1/4 cup dry breadcrumbs
1/4 cup lard, chilled
1/4 cup unsalted butter, chilled
1/4 cup vegetable shortening, preferably Crisco, chilled
2 cups cake flour, preferably or 2 cups all-purpose flour
1 teaspoon salt
5 -7 tablespoons ice water
vegetable shortening, preferably Crisco, for deep frying
sugar

Steps:

  • In a small, heavy saucepan, combine the apricots with the water. Simmer over low heat until the fruit is plump and soft and most of the water has been absorbed, about 25 minutes. Add more water if needed.
  • Drain the apricots and chop them. Mix the apricots in a small bowl with the jam or preserves, and the nuts or bread crumbs. Refrigerate the filling, if you wish, for as long as 24 hours.
  • Roll the pie dough out 1/8 to 1/4 inch thick. Cut it into rounds with the top of a coffee can or with a large round biscuit or cookie cutter. Spread equal portions of filling on each round, moisten the dough edges lightly, and fold the rounds over into half moon shapes. Crimp the edges with a fork.
  • In a heavy saucepan or Dutch oven, heat at least 4 inches of shortening to 350°F Fry the pies in batches, turning them over midway through the cooking, after they rise to the surface. Remove them when they are golden brown and crispy, about 3 minutes. Drain them, and sprinkle them with sugar. Let them cool for at least 5 minutes before eating. Makes 8 pies.
  • Variations: The pies can be baked rather than fried. Place them on a greased baking sheet, brush them with a little beaten egg (1 egg is enough for this batch of pies), sprinkle them with sugar, and bake them at 375°F for about 20 minutes, or until they are lightly browned.
  • Experiment with other dried fruit or jam fillings. Try dried peaches simmered in peach nectar with a touch of jalapeno jam, or dried apples with cider, a splash of applejack, and cinnamon.
  • FOR THE PIE CRUST: Using a food processor, a bowl with a pastry blender, or your fingers, cut the lard, butter and vegetable shortening into the flour and salt. Whatever method you choose, be careful not to overwork the dough, which would reduce flakiness. Add the water a few tablespoons at a time, until the dough just holds together. Divide the dough into two mounds, wrap them in plastic, and refrigerate them at least 30 minutes (or wrap one mound for the freezer, if you don't plan to use it in the next couple of days).
  • If the pie crust is to be baked, preheat the oven to 400°F
  • On a floured board or pastry cloth, roll out the dough in a circle a couple of inches larger than the pie pan. To avoid stretching the dough excessively, roll it from the center outwards, lifting the rolling pin after each stroke rather than rolling back over the dough in the opposite direction. Loosen the dough, drape it around the rolling pin, and center the crust over the pan, dropping it gently into place.
  • If you're making a one crust pie, crimp the edges decoratively. If your pie is to have two crusts, roll out the second mound of dough, too.
  • For a single pre-baked crust, prick the dough in several spots. Cover the pie shell with foil, and weight the foil with dried beans or pie weights. Bake the crust for 10 minutes, and then lower the temperature to 350°F and bake for an additional 15 minutes, or follow the directions in your pie recipe.

3 cups all-purpose flour, plus more for flouring surface
1 tablespoon powdered sugar
1/2 teaspoon salt
1 tablespoon white vinegar
1 egg yolk
1 1/4 sticks butter (5 ounces)
3/4 cup iced water
1 egg beaten, for egg wash
2 cups dried apricots, diced
1 (8-ounce) jar apricot jam
6 ounces apricot nectar (recommended: Kern's)
1 cup sugar
2 teaspoons pumpkin pie spice
2 tablespoons cornstarch, dissolved in 2 tablespoons cold water
1/8 teaspoon almond extract
1 teaspoon vanilla extract
Vegetable oil, for deep frying
Cinnamon sugar, for sprinkling

Steps:

  • Make crust:
  • Place flour, sugar, salt, vinegar, and egg yolk in the bowl of a food processor and pulse lightly 1 time. While pulsing, add butter gradually; dough should be the consistency of cornmeal. Do not over-mix or dough will become tough and hard to roll out. While pulsing, add ice water slowly until dough forms a ball (again being careful to not over-mix). Turn off processor as soon as dough forms a ball and refrigerate dough for about 30 minutes.
  • Make filling:
  • Combine apricots, jam, nectar, sugar, and pumpkin pie spice in a medium saucepan and bring to a simmer over medium heat, stirring frequently, for 10 to 15 minutes. Add cornstarch slurry and continue simmering for another 5 minutes. Remove from heat and add almond and vanilla extracts. Let cool to room temperature; mixture should thicken to the consistency of a jam.
  • Meanwhile, pour several inches of oil into a large, deep, heavy-bottomed pan or Dutch oven; oil should not come more than halfway up the sides of the pan. Heat oil to 360 degrees F.
  • On a floured board, roll out dough to 1/8-inch or less thickness. Cut or stamp dough into 15 (6-inch) round circles, or as many that size as possible. Spoon about 2 tablespoons of filling into the center of each circle of dough and brush edges with egg wash. Fold in half and press edges together with a fork dipped in flour. Poke the top of the crust twice with fork.
  • Carefully add pie pockets, in batches, to the hot oil and deep fry until golden brown, turning as needed. Remove from oil and drain on paper towels. Sprinkle with cinnamon sugar and serve; be careful as filling is hot.

I found this recipe in a Southern Living Magazine about 20 years ago. It was for apple fried pies but my mother and I modified it for dried apricots. I don't make these often because it is time consuming to roll out each individual fried pie.

6 ounces dried apricots
1/3 cup sugar
1/2 teaspoon salt
1 cup water, cold
4 cups flour, all-purpose
1 cup shortening

Steps:

  • Place apricots in a medium saucepan; add water to cover.
  • Cover pan and cook over low heat 15 minutes or until tender.
  • Mash appricots, and add sugar; set aside.
  • Combine flour and salt; cut in shortening with pastry blender until mixture resembles coarse meal.
  • Sprinkle cold water (1 Tablespoon at a time) evenly over surface; stir with a fork until dry ingredients are moistened.
  • Shape into a ball and chill.
  • Divide dough in half.
  • Roll one portion to 1/8" thickness on a lightly foured surface; cut into 3 1/2-inch circles.
  • Spoon aout 1 teaspoon apricot filling on half of each pastry circle, moisten edges and fry.
