Fry Jacks(Belize) image

A popular Belizean recipe, fry jacks are normally eaten for breakfast accompanied by refried beans, sausage, bacon and eggs. For those of you with a sweet tooth, some Belizeans also enjoy drizzling honey on the top. From Flavors of Belize Cookbook.

Number Of Ingredients 6

2 cups all-purpose flour (can replace 1/2-3/4 cup with whole wheat flour)
3 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon vegetable shortening
1 cup water
vegetable oil (for frying)

Steps:

  • Sift flour, baking powder and salt in a bowl. Cut shortening into flour. Add water, a little at a time, to make a soft, but not sticky dough. Divide dough into two rounds. Let rest for 15 to 20 minutes. Lightly flour counter top or cutting board. Roll dough out to about 10 to 12 inches round. Cut lengthwise into 2 to 3 inch strips and then crosswise to desired size. Heat oil and fry on each side until golden brown. Serve hot with honey, jam, sugar or refried beans and cheese and fully enjoy.
  • Belize Recipe Tips:.
  • Frying in very hot oil will ensure that fry jacks "puff" when cooking. If you prefer your fry jacks not to puff you should place slits in the dough slices before placing in hot oil.

Captain Jack's Fried Fish Sandwich with Homemade Tartar Sauce image

Oil, for frying
1 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon freshly ground black pepper
1 teaspoon salt
1/2 teaspoon cayenne
2 eggs, beaten
1 cup panko breadcrumbs
Four 6- to 8-ounce white fish fillets
4 hoagie rolls
2 cups shredded lettuce
1/2 cup pickle slices
1/2 cup Homemade Tartar Sauce, recipe follows
1/2 cup good mayonnaise
2 tablespoons chopped chives
2 tablespoons roughly chopped cornichons
2 tablespoons fresh parsley leaves
1 tablespoon capers
1 tablespoon lemon juice
Pinch kosher salt
Pinch freshly ground black pepper

Steps:

  • In a large heavy-bottomed saucepan, pour enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 360 degrees F.
  • Place the flour in a small shallow mixing bowl or pie plate. Add the garlic powder, onion powder, paprika, black pepper, salt and cayenne, and stir to combine. Place the beaten eggs in another bowl, and place the panko in a third bowl.
  • Dredge a fillet in the flour, then dip in the eggs and finish with a coating of panko. Repeat for the remaining fillets. Place the fillets in the oil and fry until golden, 4 to 6 minutes.
  • Place each fillet on a roll. Top each with 1/2 cup shredded lettuce and some pickle slices. Finish with 2 tablespoons Homemade Tartar Sauce or serve it alongside.
  • Place the mayonnaise, chives, cornichons, parsley, capers, lemon juice, salt and pepper in the bowl of a food processor or mini chopper fitted with a steel blade, and pulse until the pickles are finely chopped and all the ingredients are mixed but not pureed.

A Mexican version of the traditional favorite, mozzerella sticks. These are very good as an appetizer or a snack or to serve along with a Mexican meal.

1 lb monterey jack cheese or 1 lb jalapeno jack cheese
1 cup milk
1 cup flour
1 cup seasoned bread crumbs
vegetable oil
salsa, optional

Steps:

  • Cut cheese into rectangular sticks or one inch cubes.
  • Place the cheese pieces in a bowl and pour the milk over the cheese, coating thoroughly.
  • Remove cheese from milk and coat with flour.
  • Quickly dip in milk again and roll each piece in bread crumbs.
  • In a medium to large saucepan, heat 2 to 3 inches of oil to med-high heat.
  • Quickly fry a few pieces of cheese at a time, about 1 minute or until golden.
  • Remove with slotted spoon and drain on paper towels.
  • Serve with salsa, if desired.

1 cup water
1 cup all-purpose flour
1 teaspoon white sugar
1 teaspoon ground turmeric
1 pinch salt
oil for frying
6 pods jackfruit, seeded
2 cups milk
4 (1 ounce) squares chocolate
1 tablespoon white sugar

Steps:

  • Mix water, flour, 1 teaspoon sugar, turmeric, and salt together in a bowl into a thick batter.
  • Heat oil in a large saucepan or fryer. Dip jackfruit into the batter and deep-fry until golden brown, 2 to 4 minutes.
  • Bring milk to a boil in a small pot; boil for 2 minutes. Add chocolate; stir until melted and smooth. Add 1 tablespoon sugar; stir until dissolved, about 1 minute. Simmer chocolate sauce over low heat, about 5 minutes.
  • Place fried jackfruit on a serving plate. Pour chocolate sauce on top.
