ROASTED VEGETABLE FRITTATA



Roasted Vegetable Frittata image

Number Of Ingredients 13

1 small zucchini, 1-inch-diced
1 red bell pepper, seeded and 1 1/2-inch-diced
1 yellow bell pepper, seeded and 1 1/2-inch-diced
1 red onion, 1 1/2-inch-diced
1/3 cup good olive oil
Kosher salt and freshly ground black pepper
2 teaspoons minced garlic (2 cloves)
12 extra-large eggs
1 cup half-and-half
1/4 cup freshly grated Parmesan cheese
1 tablespoon unsalted butter
1/3 cup chopped scallions, white and green parts (3 scallions)
1/2 cup grated Gruyere cheese

Steps:

  • Preheat the oven to 425 degrees.
  • Place the zucchini, peppers, and onion on a sheet pan. Drizzle with the olive oil, sprinkle with 1 1/2 teaspoons salt and 1/2 teaspoon pepper, and toss well. Bake for 15 minutes. Add the garlic, toss again, and bake for another 15 minutes. Remove from the oven and turn the oven to 350 degrees.
  • Meanwhile, in a large bowl, whisk together the eggs, half-and-half, Parmesan, 1 teaspoon salt, and 1/2 teaspoon pepper.
  • In a 10-inch ovenproof saute pan, melt the butter and saute the scallions over medium-low heat for 1 minute. Add the roasted vegetables to the pan and toss with the scallions. Pour the egg mixture over the vegetables and cook for 2 minutes over medium-low heat without stirring. Transfer the pan to the oven and bake the frittata for 20 to 30 minutes, until puffed and set in the middle. Sprinkle with the Gruyere and bake for another 3 minutes, until the cheese is just melted. Cut into 6 or 8 wedges and serve hot.

A dear friend gave me this delicious frittata recipe. It is wonderful to serve for a Saturday breakfast when you can sit and enjoy and your meal and not rush out the door in order to miss the morning traffic.

8 pitted kalamata olives, chopped
1 medium zucchini, cut into 1/2-inch cubes
1 sweet red pepper, diced
1/2 cup onion, chopped
1/4 cup olive oil
9 large eggs, lightly beaten
1 (4 ounce) package crumbled feta cheese
1/3 cup fresh basil, thinly sliced
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup freshly grated parmesan cheese

Steps:

  • Cook the first four ingredients in hot oil in a 10" oven-proof skillet over medium-high heat, stirring constantly until vegetables are tender.
  • Combine eggs and next four ingredients, pour over vegetables in skillet.
  • Cover and cook over medium-low heat 10-12 minutes or until almost set.
  • Remove from heat, and sprinkle with Parmesan cheese.
  • Broil 5-1/2" from heat with oven door partially open 2-3 minutes or until golden.
  • Cut frittata into wedges.

I concocted this when I was trying to liven up an egg white frittata. It turned out deceptively decadent. The sun-dried tomatoes make all the difference.

3 sun-dried tomato halves
2 teaspoons extra-virgin olive oil
¼ yellow onion, minced
5 cloves garlic, minced
½ cup frozen chopped spinach
1 (4.5 ounce) can sliced mushrooms with pieces, drained
3 ounces crumbled reduced-fat feta cheese
6 egg whites
¼ cup skim milk
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon dried basil
2 tablespoons shredded Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch round pan.
  • Place sun-dried tomatoes into a bowl of warm water until rehydrated, about 10 minutes. Drain and chop.
  • Heat olive oil in a small skillet over medium heat; cook and stir onion and garlic until onion is translucent, about 10 minutes. Add spinach; cook and stir until thawed and water is evaporated, about 5 minutes. Stir in mushrooms, sun-dried tomatoes, and feta cheese until well mixed.
  • Whisk egg whites, skim milk, salt, pepper, and basil together in a bowl until very frothy. Carefully stir spinach mixture and 1 tablespoon Parmesan cheese into egg mixture. Pour into the prepared pan; top with remaining Parmesan cheese.
  • Bake in the preheated oven until frittata is set and browned on top, about 25 minutes.

This simple Vegetable Frittata is perfectly balanced with the flavors of earthy roasted vegetables, rich extra virgin olive oil, and sharp feta cheese. It's a comforting vegetarian meal that's easy to make any night of the week!

1 small red bell pepper (cored and chopped)
1 small zucchini (small diced)
2 green onions (white and light green parts only, roughly chopped)
4 ounces broccoli (cut into small florets)
Kosher salt and black pepper
3 tbsp Extra virgin olive oil
7 large eggs
¼ teaspoon baking powder (optional)
¼ cup whole milk
1/3 cup feta cheese (crumbled, more to serve)
1/3 cup finely chopped fresh parsley (more to serve)
1 teaspoon fresh thyme

Steps:

  • Preheat the oven to 450°F and position a rack in the middle. Put a rimmed sheet in the oven and allow it to heat.
  • In a mixing bowl, toss the bell peppers, zucchini, green onion and broccoli with a good pinch of kosher salt and black pepper. Add a drizzle of extra virgin olive oil (about 2 to 3 tablespoons) and toss to make sure all the veggies are well-coated in the oil.
  • Carefully remove the hot pan from the oven using oven mitts. Spread the veggies on the heated pan. Return the pan to the oven and cook for 15 minutes or until the veggies are soft and somewhat charred.
  • Turn the oven heat down to 400°F.
  • In your mixing bowl, whisk together the eggs, baking powder, milk, feta, parsley, thyme, and a good pinch of kosher salt and black pepper. Fold in the roasted vegetables.
  • Coat the bottom and sides of a 10-inch cast iron or oven-safe pan and warm the oil over medium-high heat until shimmering. Pour the egg an veggie mixture in the pan and cook for 2 to 3 minutes to allow the bottom of the eggs to settle.
  • Transfer the pan to the heated oven and cook for 8 to 10 minutes or until the center of the eggs are cooked through and the center of the frittata is firm and no longer runny).
  • Serve with more feta cheese and a garnish of fresh parsley.

This frittata is packed with vegetables and herbs. Ideal as a light lunch, this protein-rich dish will keep your energy high through the afternoon.

1 ½ cup chicken breasts, cooked, chopped
1 ½ cup whole grain penne pasta
½ tsp olive oil
4 oz goat cheese, soft, 21% MF, crumbled
6 eggs, medium
½ cup plain yogurt, 1-2% MF
¼ tsp hot red chili pepper flakes, (optional garnish)
1 tsp oregano, dried
¼ cup Romano cheese, grated
2 tsp olive oil
½ cup red onions, diced
2 cloves garlic, minced
2 cups mushrooms, sliced
2 cups red peppers, sliced lengthwise
1 tsp balsamic vinegar
1 tbsp lemon juice, fresh
½ tsp black pepper, freshly ground
¼ cup basil, fresh, shredded into ribbons
1 tomatoes, finely-chopped
¼ cup green olives, large, sliced
½ tsp cumin, ground
½ cup plain yogurt, 1-2% MF

Steps:

  • Preheat the oven to 350°F (175°C).
  • Cook pasta according to package directions in plenty of unsalted water until al dente.
  • Coat the bottom of a 12-inch (30 cm) deep-dish pie plate with ½ teaspoon (2.5 mL) of olive oil. Arrange the cooked pasta over bottom and scatter with pieces of the goat cheese.
  • Blend eggs with the yogurt, chili pepper flakes and oregano until well mixed. Pour the egg mixture over the pasta. Bake frittata in a hot oven on centre rack for 30 minutes or until the frittata is set and lightly browned and a knife inserted into centre comes out clean. Remove from oven.
  • While the frittata is baking, prepare the vegetable and chicken topping. Heat remaining olive oil in a non-stick skillet over medium heat. Sauté the diced red onion, minced garlic, sliced mushrooms, red pepper strips and cooked chunks of chicken until vegetables are just softened. Stir in balsamic vinegar, fresh lemon juice and freshly ground pepper. Toss basil with the vegetable mixture. Remove from heat and set aside.
  • Mix together tomato, green olives, cumin and plain yogurt in a small serving bowl.
  • Spread the cooked vegetables and chicken over the top of the frittata. Sprinkle with the grated Romano cheese. Cut into six wedges. Serve with the yogurt sauce on the side.
