SASSY FREEZER SLAW
Coleslaw made up and put in the freezer. Easy to take out and thaw when you need it in a hurry. It does have a crunch to it and a sweet-sour vinegar based dressing. Freeze for up to two months. Chopped onions and bell peppers are an option to add in if you like them.

Steps:
- Mix shredded cabbage and salt together in a colander; drain for 1 hour. Squeeze moisture from cabbage. Stir carrots into cabbage and divide cabbage mixture between pint containers.
- Whisk sugar, vinegar, water, celery seed, and dry mustard together in saucepan over medium high heat; bring to a boil for 1 minute. Cool. Pour cooled vinegar dressing mixture over cabbage mixture, cover containers, and freeze. Thaw before serving.

FREEZER CUCUMBER PICKLES

- Rinse ten 2-cup plastic containers and lids with boiling water. Dry thoroughly. Divide cucumbers, onions, salt and water between two large bowls. Let stand at room temperature 2 hours. Do not drain., Add 2 cups sugar and 1 cup vinegar to each bowl; stir until sugar is dissolved. Transfer to prepared containers, leaving 1-in. headspace for expansion; freeze up to 6 months., Thaw pickles in refrigerator 8 hours before using. Serve within 2 weeks after thawing.

FREEZER SLAW
My husband kept talking about 'Freezer Slaw' that his mom made and I couldn't find a recipe for it and she couldn't find hers. Luckily, his aunt still had it! This is a great make-ahead slaw that stays crisp! I shred the cabbage and other vegetables in the food processor.

- Combine cabbage, green bell pepper, onion, and carrots in a large bowl. Mix boiling water and salt together in a bowl and pour over cabbage mixture. Set aside for salt to draw out extra water from vegetables, about 1 hour. Drain well.
- Mix sugar, 1 cup water, cider vinegar, and celery seed in a saucepan; bring to a boil. Cook and stir until sugar is dissolved, about 1 minute. Remove saucepan from heat and cool completely.
- Pour cooled sugar-vinegar mixture over drained cabbage mixture in a large bowl and toss until slaw is well mixed. Spoon slaw into resealable plastic bags and freeze.

This is a old family recipe. My great aunt Hazel has been making these for a very long time. They are just wonderful. My mom uses a little of both.

FROZEN CUCUMBERS
This is a great way to use up the end of the garden, over-sized cucumbers. I started making these a couple of years ago and my family and friends love these. It is so nice to have fresh tasting cucumber salad in the middle of winter!

- 1. Slice cucumbers and onions into large bowl and mix. I use my mandolin and the thin slice blade to slice the cucumbers and onions. You do not need to peel the cucumbers first. I use my 13 quart stainless steel bowl to make this. Sprinkle with salt. Pour enough water over cucumbers and onions to just cover. I use nursery water, found in the baby food section for all of my canning as our water is too soft. Let set 2 hours. Drain in colander, but do not rinse. Put cucumbers and onions back in bowl.
- 2. Mix sugar and white vinegar and pour over cucumber - onion mixture. Stir and let set about 15 minutes. Put in freezer bags or containers and freeze. I usually put about 3 1/2 cups of the mixture into each quart bag. This recipe will make 10 quart bags. To use, thaw bag in refrigerator, pour into bowl and serve. Refrigerate leftovers. These stay crisp and taste just like fresh cucumber salad!
FROZEN CUCUMBER SALAD

- Refrigerate for 24 hours.
- Put in containers and freeze with the brine.
- Just defrost to serve.
- Tip: To save space and avoid freezer burn, I freeze this overnight in shallow freezer containers. Then, defrost slighty (or dip in a hot water bath) to release the food from the container. Seal the block of frozen food in a ziplock or seal-a-meal bag, label and stack back in the freezer until ready to use. This works great for all kinds of foods!

HOW TO FREEZE CUCUMBERS
Steps:
- Rinse the cucumbers and gently pat them dry with a kitchen towel. Slice them according to how they'll be used.
- Arrange the slices in a single layer on a lined sheet. Freeze for 30 minutes to 1 hour, or until frozen solid.
- Place the slices into freezer-safe bags. Squeeze out as much excess air before sealing them shut.
- Label the bags accordingly and freeze. Frozen cucumbers will keep well for up to 6 to 9 months.

CUCUMBER SALAD RECIPE

- Wash, peel and slice about 6-8 medium sized cucumbers to make 2 quarts (about 8 cups). Place them in a large deep glass or stoneware mixing bowl.
- Chop or slice 1 small onion and add to the cucumbers.
- Sprinkle 1 Tablespoon of salt over the cucumbers. Add just enough water to cover the cucumbers and place a plate on top to keep them weighted down. Let sit for two to four hours.
- Drain the cucumbers and onions in a colander and rinse them well to remove the excess salt.
- Place the cucumbers back in the same bowl and add the sugar, celery seed, and vinegar. Mix well until sugar is dissolved.
- For Freezing: You can freeze this cucumber salad right away in a freezer safe container.
- For eating the next day: Cover the bowl and place in the refrigerator overnight and they are ready to eat for brunch or dinner or take to a picnic.
FROZEN COLESLAW
We usually prefer slaws with creamy dressings, but we've never found one that freezes. This is a recipe passed on to me from Mom and has been a delicious alternative so we could use up the extra cabbage (after making sauerkraut of course) from the garden. I am posting it to assist with a discussion on the boards. Hope you enjoy it as much as we do! Prep time includes time cabbage mixture has to stand before adding dressing.

- For Slaw: Mix salt with cabbage and let stand one hour.
- Then squeeze out excess moisture.
- Add carrot and green pepper.
- Set aside.

- Cool to lukewarm.

- . Turn your Instant Pot to the saute setting. When the display says HOT add in the oil. Swirl it around. Add in the onion and saute for about 4-5 minutes. Add in the broth and deglaze the pot. Turn off the saute setting.
- . Add in the chicken. Liberally salt and pepper the chicken. Dump the tomato paste, chili powder, paprika, red pepper flakes, ketchup, vinegar and dijon mustard on top of the chicken.
- . Place lid on the Instant Pot and secure it in place. Make sure the valve is set to sealing. Set the manual/pressure cook button to 12 minutes for smaller thinner chicken breasts, 15 minutes for larger breasts or thighs and 18 minutes for frozen breasts and thighs. When the time is up let the pot sit for 10 minutes and then move the valve to venting.
- While the chicken is cooking you can prepare the slaw. Grate the cucumber into nice, long shreds. Place grated cucumber into a colander and stir in the 1 tsp of salt. Let it drain of liquids for about 30 minutes (I was surprised at how much liquid drained out). Grate the carrot. Dice the red pepper. Add the cucumber into a bowl with the carrot and red pepper and toss in the olive oil.
