This cool, creamy pie is super easy and delicious! It can be made using all low-calorie ingredients for a light dessert!

2 (8 ounce) packages cream cheese, softened
½ cup confectioners' sugar
1 teaspoon vanilla extract
2 (12 ounce) jars peach preserves
1 (8 ounce) container whipped topping
2 (8 inch) prepared graham cracker crusts

Steps:

  • Beat cream cheese in a large bowl with an electric hand mixer until smooth.
  • Spoon confectioners' sugar into cream cheese and beat until fully incorporated.
  • Beat vanilla and peach preserves into cream cheese mixture until combined.
  • Fold whipped topping into cream cheese mixture until evenly smooth.
  • Divide cream cheese mixture between the two prepared graham cracker crusts and spread evenly. Refrigerate until set, at least 1 hour.

My recipe card for this dessert is stained and worn, if that tells you anything. I've had more requests for a copy of this recipe than any other dish I make. It smells heavenly when it's baking and tastes even better! I almost always double the recipe because it disappears fast.

¾ cup baking mix
1 (1.5 ounce) package instant vanilla pudding mix
½ cup milk
3 tablespoons butter, softened
1 egg
1 (15 ounce) can canned peaches - drained with 3 tablespoons juice reserved
8 ounces cream cheese
½ cup sugar
1 tablespoon sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Butter an 8-inch square baking dish.
  • Beat the baking mix, vanilla pudding mix, milk, butter, and egg together with an electric mixer in a bowl for 2 minutes; pour into the buttered dish. Chop the peaches and scatter over the mixture.
  • Beat the cream cheese, 1/2 cup sugar, and reserved peach juice together in a bowl; pour over the peaches. Stir together the 1 tablespoon sugar and cinnamon in a small bowl; sprinkle over the cream cheese mixture.
  • Bake in the preheated oven until set in the center, 30 to 35 minutes.

2 cans Carnation Condensed Milk
2 cans slice peaches
3/4 cups butter
1 3/4 cups graham crumbs
2 Tbsp sugar

Steps:

  • Mix cream cheese with condensed milk. Add the juice of the peaches from both cans and blend well.
  • Melt butter and mix with crumbs and sugar. In a 10 inch pan, place the crumbs for the crust. Let it stand for 5 minutes.
  • Pour the mix over the crust.
  • Refrigerate for 4 hr and 30 min.

Make-Ahead. I found this recipe in Favorite Recipes Quick & Easy Desserts. I have not tried this recipe, but I'm posting it for safe keeping. I plan to make homemade Sweetened Condensed Milk.

1/3 cup margarine or 1/3 cup butter, melted
1 1/4 cups graham cracker crumbs
1/4 cup sugar
29 ounces peaches, halves drained reserving syrup
1 ounce unflavored gelatin (1 envelope)
16 ounces cream cheese, softened
14 ounces eagle brand sweetened condensed milk (Not Evaporated Milk)
2 tablespoons realemon lemon juice concentrate
4 ounces frozen non-dairy topping, thawed

Steps:

  • Combine margarine, crumbs and sugar. Reserving 2 tablespoons crumbs for garnish, press remainder firmly on bottom of 9-inch springform pan or 13x9-inch baking pan.
  • In small saucepan, sprinkle gelatine over 1/2 cup reserved syrup; let stand 1 minute. Over low heat, stir until gelatine dissolves. Slice 2 peach halves for garnish; reserve. In blender container, blend remaining peach until smooth; combine with gelatine mixture. In large mixer bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Stir in Rea Lemon and peach mixture. Fold in whipped topping; pour into prepared pan.
  • Chill 3 hours or until set. Garnish with reserved peach slices. Refrigerate leftovers.

¾ cup extra-virgin olive oil
¼ cup good-quality balsamic vinegar
1 tablespoon Dijon mustard
2 teaspoons minced fresh ginger root
½ teaspoon minced garlic
¼ teaspoon cayenne pepper, or to taste
½ teaspoon salt, divided, or to taste
¼ teaspoon ground white pepper, or to taste
1 tablespoon vegetable oil, or more as needed
½ teaspoon smoked paprika
½ teaspoon granulated garlic
¼ teaspoon ground black pepper
1 pound pork tenderloin, cut crosswise into 1/2-inch thick slices
3 medium (blank)s fresh peaches - pitted, skinned, and sliced
1 bunch kale, stems removed and discarded
1 cup matchstick-cut carrots
1 cup fresh blueberries

Steps:

  • Combine olive oil, balsamic vinegar, Dijon mustard, minced ginger, minced garlic, cayenne, 1/4 teaspoon salt, and white pepper in a pint-sized jar with a lid. Place the lid on the jar and shake the ingredients until well blended. Taste and adjust seasoning, if desired. Place container in the refrigerator until ready to use.
  • Clean grates of an outdoor grill and preheat to medium-high, about 10 minutes, or as the manufacturer recommends.
  • When grill is ready, grease grates using tongs to hold a paper towel saturated with vegetable oil.
  • While the grill is heating, combine smoked paprika, granulated garlic, 1/4 teaspoon salt, and black pepper in a small bowl.
  • Sprinkle both sides of pork slices with dry spice mixture and allow to stand at room temperature until the grill is ready.
  • Place seasoned pork slices on the grill and do not touch for about 2 minutes. Using tongs, flip the slices and continue to grill until grill marks form and the pork reaches an internal temperature of 145 degrees F (62 degrees C), an additional 2 to 3 minutes. Remove from the grill and set aside.
  • Place peach slices across the grate and grill until grill marks form, 2 to 3 minutes per side. Add to the reserved grilled pork slices.
  • Make a bundle of kale leaves and slice across into 1/8-inch slices. Place sliced kale and carrots in a large mixing bowl. Add grilled pork slices and grilled peaches, and toss with desired amount of dressing (see note).
  • Arrange salad on plates, and sprinkle 1/4 cup blueberries on each plate.
