FRUIT AND NUT PACOS

Number Of Ingredients 9

1 cup small-diced strawberries
1/2 cup blueberries
1 tablespoon maple syrup
2 kiwis, cut into small dice
1/2 cup vanilla Greek yogurt
1/2 cup almond butter or peanut butter
8 thin pancakes, 5 to 6 inches in diameter (see Cook's Note)
1/3 cup mini chocolate chips
1/3 cup toasted coconut

Steps:

  • In a medium bowl, mix together the strawberries, blueberries, maple syrup and kiwi. Put the yogurt in a small ziptop bag and snip off one of the corners to make a pastry bag.
  • To assemble the pacos, add a little less than a tablespoon of almond butter to each pancake, then spread. Divide the fruit mixture among the pancakes. Squeeze some of the yogurt onto the fruit and sprinkle with mini chocolate chips and toasted coconut.

9 1/2 ounces mixed nuts (I used Planters Select Cashews with almonds, and pecans)
6 ounces smoked almonds (I used Blue Diamond smokehouse almonds)
8 ounces dried apricots, using kitchen shears cut in halves (or thirds)
8 ounces dried cranberries

Steps:

  • Combine all ingredients. Store in airtight container or bags.

  • Heat a saute pan over medium high heat, and toast the oats and almonds for about 3-4 minutes, or just until the nuts are fragrant and the oats start to look toasty. Remove from heat and let cool.
  • In the bowl of a food processor fitted with the chopping blade, combine the dates and peanut butter. Process the mixture until the dates are smooth. Add the protein powder and pulse again until everything is smooth and a dough forms.
  • Place the toasted oats and nuts into the food processor and pulse just about 5-6 times to combine the oats and nuts into the dough.
  • Transfer the dough to a large mixing bowl, and add the cherries, cranberries, coconut, and apricots. Stir with a spatula, or mix with your hands.

  • Heat the oven to 275ºF. Line a small baking pan with parchment paper. Soak the chia seeds in 2 tablespoons of cold water.
  • Place the next 6 ingredients – cranberries through almond flour – in the bowl of a food processor and pulse until everything is finely chopped but not powdered. Keep checking until you’re happy with the texture.
  • Pour the mixture into a big bowl and stir in the cinnamon, sesame seeds, pine nuts, soaked chia seeds with their liquid/gel, and raw honey. Mix until everything is well combined and sticks together like dough when you squeeze it. It’s best to use your hands for this. If the mixture is too dry, add a bit of water.
  • When the mixture is uniform, push it down into the lined baking pan with your fingers, to a depth of about 1/2 inch or so. If it’s sticky, wetting your fingers will help. Bake for 55-60 minutes or until the whole surface looks dried out and starts to turn golden.
