1-1/2 cups fresh broccoli florets
1-1/2 teaspoons sesame oil
1 teaspoon canola oil
1/8 teaspoon crushed red pepper flakes
1 tablespoon soy sauce
2 garlic cloves, minced
3/4 teaspoon sugar
3/4 teaspoon lemon juice

Steps:

  • Place 1 in. of water in a saucepan; add broccoli. Bring to a boil. Reduce heat; cover and simmer for 5-8 minutes or until crisp-tender., Meanwhile, in a small saucepan, heat the sesame oil, canola oil and red pepper flakes over medium heat for 2 minutes or until hot. Stir in the soy sauce, garlic, sugar and lemon juice. Cook and stir for 1-2 minutes or until sugar is dissolved. Remove from the heat., Drain broccoli and transfer to a serving bowl. Pour garlic sauce over; toss to coat. Serve warm or chilled with a slotted spoon.

1 tablespoon olive oil
1 to 2 teaspoons minced garlic
Kosher or coarse salt and freshly ground pepper (to taste)
6 cups broccoli florets and 1-inch pieces of peeled stem (about 1 head broccoli)
Red pepper flakes (to finish, optional)

Steps:

  • In a medium skillet with a lid, heat the olive oil over medium high heat, then add the garlic (1 teaspoon for a milder garlicky flavor, 2 teaspoons for a full-on garlicky flavor) and swish it around for about 30 seconds until you can smell it. Add the broccoli and stir and toss to coat with the oil. Season with salt and pepper, add 1/4 cup of water, cover the pan, and steam until the water is evaporated and the broccoli is tender. Sprinkle with the red pepper flakes if desired. Serve hot.

4 cloves garlic, peeled
1 ½ teaspoons salt
1 bunch broccoli, cut into florets
⅓ cup olive oil
¼ cup red wine vinegar
1 tablespoon Dijon mustard
½ cup grated Parmesan cheese, or to taste

Steps:

  • Place garlic in a mortar dish or on a cutting board, and sprinkle with salt. Mash with a pestle, or use the flat side of a knife to mash garlic and salt into a paste. Transfer to a medium bowl, and stir in olive oil, vinegar, and mustard. Add the broccoli, and stir to coat. Chill for 3 hours to marinate, stirring occasionally. Sprinkle with Parmesan cheese before serving.

1 tablespoon extra virgin olive oil
2 tablespoons no-salt-added chicken broth or 2 tablespoons vegetable broth
2 -3 garlic cloves, crushed
1/2 teaspoon crushed red pepper flakes
2 tablespoons parmigiano-reggiano cheese

Steps:

  • Steam the broccoli in a medium pot by bringing about 1 inch of water to a boil. Place the steamer basket with the cut broccoli in the pot. Cover and steam for about 3 minutes, until the broccoli is bright green, and firm-tender.
  • Remove from heat and run the broccoli under cold water to stop the cooking process. Make sure the water drains out.
  • Heat a medium-sized frying pan over medium heat. Add the oil, broth, garlic, and red pepper flakes. Heat for about 1 minute, until the sauce is very fragrant and bubbling.

1 bunch broccoli
3 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
Pinch of crushed red pepper flakes

Steps:

  • Bring a medium pot of cold salted water to a boil. Cut the florets off the broccoli stems and then trim any tough parts off the stems and thinly slice crosswise. Add the broccoli florets and stems to the boiling water and cook until crisp-tender, about 3 minutes. Drain and rinse under cold water until cool. Pat dry.

1 head garlic, peeled (about 16 cloves)
1 cup good olive oil
1 teaspoon crushed red pepper flakes
1 teaspoon kosher salt
4 stalks broccoli, cut into florets (8 cups of florets)
2 tablespoons soy sauce

Steps:

  • Put the garlic cloves and oil in a small heavy-bottomed saucepan. Bring to a boil and cook uncovered over low heat for 10 to 15 minutes, until the garlic is browned and tender. Turn off the heat and add the red pepper flakes and 1/2 teaspoon salt. Immediately pour into a heat-proof container to stop the cooking. Allow to cool to room temperature.
  • For the salad, blanch the broccoli florets in a large pot of boiling salted water for 2 to 3 minutes, until crisp-tender. Drain well and immerse immediately into a large bowl of ice water until the broccoli is cooled. This process stops the cooking and sets the bright green color. Drain well.
  • In a large bowl, toss the broccoli with 1/2 teaspoon salt, 1/4 cup of the oil used to cook the garlic, the soy sauce, and 8 or more cloves of cooked garlic. Taste for seasonings and serve cold or at room temperature.

4 cups broccoli florets
3 garlic cloves, minced
1/2 cup low sodium chicken broth
3 tablespoons sake
2 tablespoons low sodium soy sauce
2 tablespoons oyster sauce
1 tablespoon cornstarch
2 teaspoons sugar or 2 teaspoons Splenda sugar substitute
1 tablespoon oil (for cooking)

Steps:

  • Combine broth, sake, soy sauce, oyster sauce, cornstarch and sugar in a bowl & set aside.
  • Heat a large nonstick wok or skillet over medium heat; add oil. Once the oil is warm, add garlic and stir-fry until fragrant. 1 teaspoon dried red pepper flakes
4 garlic cloves, minced
1/2 cup chicken broth
2 lbs broccoli

Steps:

  • Cut broccoli into bite sized pieces.
  • Boil in salted water for about 5 to 7 minutes (broccoli should just start to soften).
  • Rinse under COLD water (to stop the cooking).
  • Dry to remove any excess water.
  • In a large skillet, heat the oil until hot.
  • Add the garlic and pepper flakes.
  • Sauté for 1 minute.
  • Add the broccoli and "some" of the broth. (I say "some" as you don't want it soaking in it, you just want it to help steam and add flavor)
  • Cook for 2 to 4 minutes (depending on the way you like your broccoli, tender or crisp) stirring the entire time. Season lightly with table salt.
  • As everyone has their own tastes, increase or decrease the garlic and or pepper flakes as desired.
