Zucchini Pasta with Garlic Clam Sauce image

Zucchini pasta with a simple garlic clam sauce. This delicious, easy, and healthy dinner comes together in less than 45 minutes! A lighter version of classic pasta with clam sauce.

2 tablespoons (30 mL) extra virgin olive oil
2 garlic cloves (minced)
2 medium shallots (minced)
pinch of red pepper flakes
2 (6-oz) cans minced clams, drained, with half the juice reserved
½ cup (120 mL) dry white wine (such as Sauvignon Blanc)
kosher salt
freshly ground black pepper
1½ lbs (0.7 kg) littleneck or manila clams (rinsed and scrubbed)
3 large zucchini (spiralized into thin noodles)
2 tablespoons finely chopped fresh parsley
2 lemons (quartered)

Steps:

  • Place a large saucepan over medium heat and add the olive oil. When the oil is simmering, add the garlic and shallots. Cook for 2 to 3 minutes or until the shallots are translucent. Add the red pepper flakes, reserved clam juice, and wine, and season with salt and pepper. Increase the heat to high, bring to a boil, then reduce the heat to low. Simmer until the sauce is reduced by about half.
  • Add the fresh clams to the sauce and cover. Steam for 7 to 10 minutes. Discard any clams that don't open after 10 minutes, then add the chopped clams. Stir in the zucchini noodles and 1 tablespoon of the parsley. Cook for 2 to 3 minutes or until the zucchini noodles are al dente.
  • Divide the pasta among bowls and garnish with the remaining parsley and lemon wedges.

Grilled Clams with Charred Zucchini and Garlic image

When I went to Charleston, South Carolina a few years ago, I watched (I will admit, in horror) as a chef put whole oysters on a hot grill. He waited a few minutes and watched as they popped open as if they had some internal timer. He pulled 1 off the grill and handed it to me along with a lemon wedge. Having grown up in New York and eaten oysters raw my whole life, this was a sacred moment. The oyster was a little tough, but absolutely delicious. There is, to me, no better thing than when a food can be cooked in its own shell for deep, authentic (and simple) flavor. I tried the technique with littleneck clams and find I like it even more than the oysters. Be patient with the clams, sometimes they can take a few minutes to open on the grill. I find that when I give up and turn my back on them, that's when they open!

8 tablespoons extra-virgin olive oil, divided, plus more for grill
1/4 cup pine nuts
Kosher salt
2 cloves garlic, peeled and "pressed", minced by hand or grated on microplane
Handful fresh mint leaves, snipped with scissors
2 medium-size zucchini, washed, dried and cut lengthwise into 1/4 to 1/2-inch thick slices
2 teaspoons paprika
1 lemon, juiced
3 dozen littleneck clams, thoroughly scrubbed of all sand and grit

Steps:

  • Preheat the grill to medium-high heat.
  • In a medium skillet, over low heat, heat 2 tablespoons of the olive oil. When the oil gets hot, add the pine nuts. Season them lightly with salt and cook them, stirring constantly, until they turn golden brown, 2 to 3 minutes. Remove them from the pan to a small bowl. Stir in the minced garlic, salt, to taste, and the mint.
  • In a large plate, combine the remaining olive oil, the zucchini slices, paprika and light sprinkling of salt. For best results, "dust" the zucchini with the paprika but put it in a little strainer and sprinkle it evenly over the zucchini slices. Toss to coat them with the oil. Season them lightly with salt. Arrange them in a single layer on the hottest part of the grill and cook until they are tender to the touch and charred but not falling apart, 3 to 5 minutes. Use a pair of metal tongs to remove the zucchini from the grill and transfer them to a flat surface. Stack the slices and cut them widthwise into 1/2-inch slices, then make 1 slice down the middle, creating a 1/2-inch dice. Toss them in the bowl with the pine nuts, and then add the lemon juice.
  • Dip a cloth into some oil and rub over the grill grates. Scatter the clams on the grill in a single layer. Have a pair of tongs and a large platter ready. Littleneck clams take a while to open up, about 10 minutes depending on size, but that's all a part of the fun - the suspense of waiting for them to open. Add a splash of water to help them along and steam. As they open, use the tongs to remove them from the grill and put them on the platter. When they are all opened, scatter the zucchini and pine nuts all around. Try to get the zucchini inside the shells directly on top of the clams and serve immediately.

5 tablespoons butter
1/4 cup olive oil
1 tablespoon all-purpose flour

1 cup shredded Monterey Jack cheese
1/4 cup minced fresh parsley

Steps:

  • Cook linguine according to package directions. Meanwhile, in a large skillet over medium heat, cook garlic in butter and oil until fragrant. Stir in flour until blended. Drain clams, reserving juice; set clams aside. , Gradually stir juice into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add the clams, cheese and parsley. Cook and stir until cheese is melted. Drain linguine; serve with clam sauce.

2 pounds clams in shell, scrubbed
1 (16 ounce) package spaghetti
2 tablespoons extra-virgin olive oil
1 clove garlic
¼ cup dry white wine
1 zucchini, cubed
10 zucchini blossoms, or more to taste
salt and freshly ground black pepper to taste
1 pinch red pepper flakes
1 bunch fresh parsley, chopped

Steps:

  • Soak clams in cold salted water for about 1 hour. Drain.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  • While spaghetti is cooking, heat olive oil in a skillet and cook garlic for about 1 minute. Remove from the skillet. Add white wine and clams and cover. Cook until clams open, about 2 minutes. Remove clams from pot. Remove from shells, making sure to catch the liquid. Stir in zucchini and zucchini blossoms; season with salt and red pepper flakes and pour in clam juice. Cook until zucchini are soft, 7 to 10 minutes. When zucchini are almost soft, add clams and heat for 1 minute. Add drained spaghetti and parsley. Season with pepper.

1 package (16 ounces) wagon wheel pasta or other specialty shape pasta
1/2 pound sliced bacon, diced
1 medium onion, chopped
4 to 6 garlic cloves, minced
2 to 3 medium zucchini (about 1-1/2 pounds), halved and sliced
1/2 teaspoon salt
3 tablespoons lemon juice
1/4 cup grated Romano or Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, 2 tablespoons of drippings. In same skillet, saute onion and garlic in reserved drippings for 3 minutes or until tender. Add the zucchini and salt; cook 6 minutes longer or until tender., Drain pasta and add to the zucchini mixture. Add lemon juice and bacon; toss. Transfer to a serving bowl or platter; sprinkle with cheese.

1 lb rotini pasta, twist or spirls,uncooked
8 cloves garlic, peeled
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary, crushed
2 tablespoons canola oil
3 medium zucchini, coarsely grated (about 5-6 cups)

Steps:

  • Preheat oven or toaster oven to 450 degrees.
  • Lay a 12-inch square piece of foil on the counter and put the garlic on it.
  • Sprinkle the thyme and rosemary over the garlic.
  • pour the oil over the garlic and herbs.
  • Draw up the edges of the foil and make a sealed packet; bake 20 minutes.
  • While the garlic is baking, Cook Pasta according to package directions.
  • Two minutes before Pasta is done ADD the Zucchini to the cooking pasta, Cook 2 minutes.
  • Drain Zucchini and Pasta.
  • Open the foil and MASH the garlic lightly with a spoon.
  • Toss mashed garlic with the pasta and zucchini.
  • Season with salt and pepper and serve.
