GARLIC SHRIMP KABOBS

Steps:
- In a medium bowl, combine White Wine, olive oil, garlic, Kosher salt and freshly ground black pepper. Whisk well.
- Add shrimp, tossing to combine. Cover and marinate for 30 minutes up to 8 hours. Do not over marinate, as this can lead to over salted food or the shrimp having a tough texture.
- If using wooden skewers, allow to sit in water for 30 minutes prior to threading.
- Alternate threading shrimp, yellow squash, red onion and grape tomatoes onto each skewer, leaving ample room at both the top and bottom for easy handling.
- Heat grill to medium-high heat. Clean and oil grates.
- Place shrimp skewers over indirect heat on grill. Allow to cook for approximately 10-12 minutes, turning occasionally.
- When cooked, remove and top with fresh lemon juice. You can top with minced parsley or Maldon sea salt for garish, if desired.

- Heat one side of gas grill to medium or charcoal grill until coals are ash white. Push coals to one side in charcoal grill. Make aluminum foil drip pan; place opposite coals.
- Combine butter, cilantro, garlic and pepper in bowl; set aside.
- Assemble kabobs on 8 (8-inch) metal skewers by alternately threading shrimp, lemon and green onions.
- Place kabobs onto grill over drip pan. Grill, turning and brushing often with butter mixture, 8-10 minutes or until shrimp turn pink.

- Preheat oven to 450 degrees F. Lightly oil a baking sheet or coat with nonstick spray. Thread shrimp and lemon halves onto skewers. Place skewers onto the prepared baking sheet. Place into oven and roast just until pink, firm and cooked through, about 5-7 minutes.* Melt butter in a medium skillet over medium high heat. Stir in lemon juice, garlic, oregano, thyme and basil until fragrant, about 2 minutes; season with salt and pepper, to taste. Serve shrimp skewers immediately, brushed with butter mixture and garnished with parsley, if desired.

- In shallow glass or plastic dish or resealable food-storage plastic bag, mix marinade ingredients. Add shrimp, pineapple, bell pepper and onions; stir to coat. Cover dish or seal bag; refrigerate 15 to 30 minutes, turning once or twice.
- Heat gas or charcoal grill. Carefully brush vegetable oil on grill rack. On each of 4 (12- to 14-inch) metal skewers, thread shrimp, pineapple, bell pepper and onions alternately, leaving small space between each piece. Reserve marinade.
- Place kabobs on grill over medium heat. Cover grill; cook 5 to 7 minutes, turning and brushing with marinade once, until shrimp are pink and vegetables are tender. Discard any remaining marinade.

SHRIMP SCAMPI KABOBS
These garlicky and lemon-kissed shrimp kabobs are sure to be a hit at your next cookout. Be sure to marinate the shrimp for just 30 minutes, otherwise the acid from the vinegar and lemon juice could make the shrimp mealy if they marinate too long.

- Stir together the oil, tarragon, parsley, Dijon, honey, vinegar, whole-grain mustard, garlic and lemon juice in a large bowl. Add the shrimp and toss to coat well. Cover and refrigerate 30 minutes.
- Remove the shrimp from the marinade, reserving the marinade. Thread the shrimp alternately with the lemon slices onto skewers. Sprinkle the shrimp lightly with salt and pepper.
- Pour the marinade into a small saucepan. Bring to a boil and simmer 5 minutes or until very hot. Reserve the marinade for serving.
- Preheat a grill to medium-high heat. Grill the shrimp kabobs until cooked through, 2 to 3 minutes on each side. Transfer to a platter and garnish with fresh parsley. Serve with the reserved marinade.
GARLIC SHRIMP KABOBS
Steps:
- Rinse and dry shrimp.
- Whisk olive oil, garlic, lemon juice, pepper, and parsley together in a bowl and pour into a large resealable plastic bag. Add shrimp, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 hours.
- Preheat an outdoor grill for medium heat and lightly oil the grate. Lightly coat metal skewers with cooking spray.
- Remove shrimp from the marinade and shake off excess. Discard the remaining marinade. Place about 5 shrimp on each skewer.
- Cook on the preheated grill until shrimp are bright pink on the outside and the meat is opaque, about 5 minutes; do not overcook.

- Combine all ingredients except shrimp. Reserve half the tomato sauce mixture for later use.
- Thread shrimp onto 6 skewers; place in shallow dish. Pour remaining tomato sauce mixture over shrimp; turn to evenly coat shrimp. Refrigerate 30 min. to marinate.
- Heat grill to medium heat. Remove shrimp from marinade; discard marinade. Grill shrimp 3 to 5 min. or until shrimp turn pink, turning every 2 min.
- Serve shrimp with reserved tomato sauce mixture.
