GERMAN STYLE CAULIFLOWER POTATO SALAD



German Style Cauliflower Potato Salad image

This German-style cauliflower potato salad recipe is quick and easy to make, vegan-friendly, and can be served warm or cold. One of my favorite summer side dishes!

1 head cauliflower, cut into florets (about 6-8 cups)
1 1/2 tablespoons olive oil
1/2 cup diced red onion (about 1/2 medium)
2 cloves garlic, minced
1/4 cup white vinegar
1 1/2 tablespoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons fresh chopped chives

Steps:

  • Place chopped cauliflower into a large microwave-friendly bowl with 2 cups of water, and microwave on high for 10-12 minutes or until tender but not mushy. Alternatively, the cauliflower can be steamed in a pan or pot with boiling water.
  • While cauliflower is steaming, heat a large skillet over medium heat. Add olive oil, and diced red onion, and sauté for 3 minutes, or until softened.
  • Add minced garlic, and cook for additional 30 seconds. Remove from heat.
  • Stir in vinegar, Dijon mustard, salt, and pepper to the onion mixture. Drain water from cauliflower, and add to pan. Stir to coat.
  • Transfer to serving dish, and top with fresh chopped chives.
  • Refrigerate for at least 30 minutes, or overnight, and serve cold or room temperature.

2 pounds white new potatoes, cut in half
Kosher salt
Extra-virgin olive oil
8 bacon slices, cut into lardons
1 onion, cut into 1/4-inch dice
1/2 cup chicken stock
1/4 cup apple cider vinegar
1 bunch fresh chives, finely chopped

Steps:

  • Place the potatoes in a medium saucepan, cover generously with water and season well with salt. Bring to a boil, then reduce to a simmer and cook until the potatoes are fork-tender, about 20 minutes. Drain and reserve.
  • Lightly coat a large straight-sided saute pan with olive oil. Toss in the bacon and bring the pan to medium heat. When the bacon is brown and crispy, toss in the onion and cook until very soft and aromatic, 7 to 8 minutes. Add the stock and vinegar.
  • Toss in the potatoes while they are still warm and cook until the liquid is absorbed, about 8 minutes. Taste and season with salt if needed. Toss in the chives and serve warm or at room temperature.

1 large head cauliflower, cut into 1/2- to 1-inch florets
Cooking spray
Salt and pepper
6 slices bacon, chopped
1/2 cup finely chopped sweet onion
1/2 cup olive oil
1/4 cup white vinegar
1 teaspoon sugar
1 teaspoon Dijon mustard
1/2 teaspoon paprika

Steps:

  • Heat oven to 425°F. Spread cauliflower in single layer on nonstick cookie sheet; spray cauliflower with cooking spray. Sprinkle with salt and pepper; toss well. Roast 15 minutes. Stir; roast 5 to 10 minutes longer or until tender and golden brown.
  • Meanwhile, in 10-inch skillet, cook bacon over medium heat until crisp. Remove with slotted spoon to paper towel-lined plate. Cook onion in bacon drippings, stirring occasionally, until golden. Remove with slotted spoon to plate with bacon.
  • In large bowl, toss roasted cauliflower, bacon and onion. In small bowl, beat oil, vinegar, sugar, mustard and paprika with whisk until smooth. Pour dressing over cauliflower mixture; toss to coat. Season with salt and pepper to taste. Cover; refrigerate at least 1 hour until chilled or overnight.

This is my mother's recipe. Everyone, German or not, loves it. It is easy to double the recipe as well. I often bring it to potlucks, and we also have it at home on special occasions. There are usually no leftovers, but if there are, they don't last long!

3 cups diced peeled potatoes
4 slices bacon
1 small onion, diced
¼ cup white vinegar
2 tablespoons water
3 tablespoons white sugar
1 teaspoon salt
⅛ teaspoon ground black pepper
1 tablespoon chopped fresh parsley

Steps:

  • Place the potatoes into a pot, and fill with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, and set aside to cool.
  • Place the bacon in a large deep skillet over medium-high heat. Fry until browned and crisp, turning as needed. Remove from the pan and set aside.
  • Add onion to the bacon grease, and cook over medium heat until browned. Add the vinegar, water, sugar, salt and pepper to the pan. Bring to a boil, then add the potatoes and parsley. Crumble in half of the bacon. Heat through, then transfer to a serving dish. Crumble the remaining bacon over the top, and serve warm.

6 slices bacon
2 hard-boiled eggs, diced
½ cup shredded Cheddar cheese
⅓ cup mayonnaise
¼ cup chopped red onion
1 tablespoon chopped fresh dill
1 tablespoon prepared yellow mustard
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender-crisp, 3 to 5 minutes.
  • Place cauliflower into a large mixing bowl and place in the refrigerator to chill for 2 hours.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels and crumble.
  • Add bacon, eggs, Cheddar cheese, mayonnaise, onion, dill, mustard, salt, and pepper to the bowl of cauliflower and stir well to combine. Serve immediately.

3 pounds small Yukon Gold potatoes, unpeeled (about 10)
2 celery ribs, chopped
1 small onion, chopped
1 cup water
1/2 cup white vinegar
3/4 cup sugar
1 tablespoon cornstarch
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 pound bacon strips, cooked and crumbled

Steps:

  • Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce the heat; simmer, uncovered, just until tender, 12-15 minutes. Add the celery and onion; continue cooking until vegetables are tender, about 5 minutes longer. Drain; set aside., Meanwhile, in a small saucepan, whisk together the next 6 ingredients. Bring to a boil; cook until thickened, about 2 minutes., When cool enough to handle, slice the potatoes; return to saucepan with celery and onions. Add vinegar mixture, tossing to combine. Add bacon. Simmer mixture 10-12 minutes or until heated through. Serve potato salad warm.

1 clove garlic, crushed
½ lemon, juiced

Steps:

  • Preheat oven to 400˚F (200˚C).

4 pounds baby Yukon Gold potatoes
1 tablespoon plus 2 teaspoons kosher salt
1/2 cup cider vinegar
1 tablespoon sugar
1 pound bacon, cut into 1/2-inch pieces
2 small white onions, finely diced (about 1 cup)
2 cups beef broth
1/2 cup chopped fresh flat-leaf parsley

Steps:

  • Peel potatoes, and place in a large pot with enough water to cover by several inches. Bring to a boil over high heat, add 1 tablespoon salt, and reduce to a gentle boil. Cook until potatoes are tender when pierced with a knife, about 10 minutes.
  • While the potatoes cook, combine the vinegar, sugar, and remaining 2 teaspoons salt in a small saucepan, and place over medium heat until the sugar is dissolved.
  • Drain potatoes into a colander. Using gloves or paper towels to protect your hands, slice the hot potatoes into 1/8-inch-thick rounds. Drizzle with hot vinegar mixture, gently stirring until all potatoes are coated. Set aside.
  • Saute bacon in a large skillet placed over medium-low heat, stirring frequently, until browned and crispy. Remove with a slotted spoon; transfer to a plate lined with paper towels. Drain excess fat from skillet, leaving a thin coating in bottom. Add onions; saute until translucent but not browned.
  • Add beef broth; bring to a boil over high heat. Reduce to a simmer, and cook until reduced by half, about 20 minutes. Pour over the reserved warm potato mixture, and sprinkle with the reserved bacon and chopped parsley. Gently stir to combine, and serve immediately.
