Gurkensalat (German Cucumber Salad) image

A traditional German favorite that I have loved since I was a child. This recipe is quick, easy, and delicious. Substitute cider vinegar for a different flavor. I prefer to leave the skins on the cucumbers for more texture and flavor, but they can also be peeled prior to slicing if desired. Flavor is best when marinated for several hours before serving.

2 large cucumbers, sliced thin
½ onion, sliced thin
1 teaspoon salt
½ cup sour cream
2 tablespoons white sugar
2 tablespoons white vinegar
1 teaspoon dried dill
1 teaspoon dried parsley
1 teaspoon paprika

Steps:

  • Spread cucumbers and onion on a platter; season with salt and let rest for 30 minutes. Squeeze excess moisture from cucumbers.
  • Stir sour cream, sugar, vinegar, dill, and parsley together in a large bowl.
  • Fold cucumber and onion slices into the sour cream mixture.
  • Refrigerate 8 hours to over night; garnish with paprika to serve.

A deliciously creamy yet refreshing German cucumber salad (AKA Gurkensalat) made with a combination of thinly sliced cucumbers, dill, and dairy-free yogurt or sour cream. A wonderful side dish or inclusion to a BBQ, Potluck, or family gathering.

6 small cucumbers (thinly sliced)
1/2 onion (thinly sliced (optional))
1 large garlic clove (grated)
Sea salt & black pepper (to taste)
3/4 cup dairy-free yogurt (or sour cream (*see notes))
1/2 tbsp sugar (or Erythritol (*see notes))
1 1/2 tbsp vinegar (or more to taste)
1 tbsp fresh dill (or more to taste, chopped (*see notes))

Steps:

  • You can watch the video in the post for visual instructions.To a large bowl, add sliced cucumbers and season with about 3/4 tsp salt. Let rest for 20 minutes, then drain excess moisture from the cucumbers by gently squeezing the slices and pouring off the liquid.
  • To a medium bowl, add vegan yogurt or sour cream, garlic, sugar, vinegar, dill, salt & black pepper to taste. Stir to combine (you can also blend all ingredients in a mini blender). Taste the dressing and adjust seasonings, adding more salt, pepper, vinegar, etc. to taste.
  • Pour the dressing over the cucumbers. Add sliced onion (optional) and stir to combine.
  • I recommend refrigerating the cucumber salad for at least 30 minutes. Enjoy!

2 large cucumbers ((about 1 1/2 pounds or 700 grams), sliced to desired thinness )
1 teaspoon salt
1/4 cup sliced yellow onion
1 clove garlic (, minced)
For the Creamy Dressing:
3/4 cup sour cream
1/4 cup plain yogurt
2 tablespoons white wine vinegar
2 tablespoons chopped fresh dill ((fresh is best but can substitute 2 teaspoons dried dill))
2-3 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Place the sliced cucumbers in a bowl and toss with the teaspoon of salt. Let sit for about 30 minutes then drain thoroughly. Add the sliced onions to the cucumbers.
  • To make the dressing: Place all remaining ingredients in a small bowl and stir to combine. Pour the dressing over the cucumbers and onions and stir to combine. Add more salt and pepper to taste.Cover and chill for at least 2 hours (4 hours if using dried herbs) before serving.

Creamy German Cucumber Salad, or Gurkensalat, is a fresh and simple side dish featuring thinly sliced cucumbers in a sour cream and dill dressing!

1/2 cup sour cream
1 clove pressed (or finely minced/mashed garlic)
2 tablespoons white wine vinegar
1 tablespoon fresh minced dill
1 teaspoon sugar
1 teaspoon salt (DIVIDED)
Freshly ground black pepper (to taste)
1 1/2 pounds seedless cucumbers (such as 2 large English cucumbers)

Steps:

  • In a medium bowl, stir together the sour cream, garlic, white wine vinegar, dill, sugar, 1/4 teaspoon salt, and pepper until well-combined. Cover and refrigerate.
  • Peel and very thinly slice the cucumbers. Add the cucumber slices to a colander placed over a deep bowl. Sprinkle with the remaining 3/4 teaspoon salt and stir well to coat all of the slices. Loosely cover with a paper towel (or a clean kitchen towel) and allow to drain for 2 hours, stirring every 20 minutes or so.
  • After 2 hours, press down on the cucumbers in the colander to extract any extra moisture. Spread out the slices on a couple of paper towels and pat dry. Remove the dressing from the fridge and stir in the cucumber slices. Either serve immediately or return to the refrigerator for 1 hour or up to overnight. Just before serving, adjust the salt and pepper, to taste.

German Cucumber Salad image

I grew up eating this salad and love it. It's a bit different than most North American cucumber salads I've seen as there is no sour cream in it, only a simple oil and vinegar dressing. Usually it's been made using only cucumbers but sometime cooked green and/or yellow beans and/or tomatoes are added. The quantity of oil and vinegar dressing may need to be adjusted if additional veggies are used.

2 English cucumbers, sliced very thin
1/4-1/2 red onions or 1/4-1/2 white onion, diced
cherry tomatoes, halved (optional)
green beans, cooked until tender crisp (optional)
3 tablespoons salad oil
1 -2 tablespoon vinegar or 1 -2 tablespoon salata seasoned vinegar
1 pinch salt
fresh ground pepper, to taste
sugar, to taste (optional)

Steps:

  • Place sliced cucumbers, chopped onions and other veggies if using in a large bowl.
  • In a small bowl, whisk salad oil, vinegar, salt and pepper together.
  • Pour dressing over cucumbers and mix well.
  • Adjust seasonings and add a bit of sugar if needed.

German Cucumber Salad with Sour Cream image

This is a very light, tasty salad, and not sweet like many cucumber salads. It's very refreshing with a tangy bite from the green onions. I used dried herbs, of course using less, and it was still very tasty. I got the recipe many years ago from a recipe board online, but do not remember the source. However, it was attributed to a man who made this for his guests at an inn he ran in Germany. I included slicing the vegetables in the approximate time.

2 medium cucumbers, peeled and sliced thin
4 green onions, sliced thin (both white & green parts)
3 small tomatoes, sliced
2 tablespoons fresh snipped parsley
1/4 cup sour cream
1/4 teaspoon prepared mustard
2 tablespoons fresh dill, minced (or 1 tsp. dried)
1 tablespoon white vinegar
1 tablespoon milk
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a bowl, combine all the salad ingredients.
  • In another small bowl, mix together well all the dressing ingredients.
  • Pour over the cucumber salad mixture and toss gently.
  • Cover and chill for at least an hour.
