How to Cook Sauerkraut image

Learn how to cook sauerkraut. A simple, quick German sauerkraut recipe, the perfect side dish for bratwurst or other sausages.

1 lb sauerkraut (500 g, See note 1)
1 medium onion
1 large apple
1 tablespoon sunflower oil
1 tablespoon granulated sugar
1 teaspoon black peppercorns
6 cloves
1 teaspoon juniper berries
3 bay leaves
1 large potato (about 200 - 250 g/ 7 - 9 oz)
1 cup chicken stock (8.5 fl.oz/ 250 ml, See note 2)

Steps:

  • Drain the sauerkraut. Finely slice the onion and the apple. Set aside.
  • Heat the oil in a saucepan and cook the apple and onions for about 3-4 minutes, until the onions are translucent.
  • In the meantime, finely grate the potato. Set aside.
  • Sprinkle the sugar on top of the onion and apple slices, stir lightly and let the sugar caramelize for a couple of minutes. Keep an eye on it and don't let it become too dark, it should be only lightly caramelized.
  • Add the peppercorns, cloves, juniper berries, bay leaves, sauerkraut, grated potato, and stock. Stir well.
  • Simmer: Bring to a boil, turn the heat down to medium-low, cover and simmer for 30 minutes.

1 jar sauerkraut
1 medium onion, cubed
4-6 slices smoked pork chops or loin, cubed
1-2 cups of heavy cream (or each half amount cream and milk)
1/6 cup sugar
1/2 to 1 can crushed pineapples
salt and pepper if needed
some oil for cooking

Steps:

  • Heat some oil in a large cooking pot.
  • Add the cubed pork and fry until browned, then remove it and set aside.
  • Add some more oil to the pot and fry the onions for a couple of minutes.
  • Sprinkel the sugar on the onions and caramelize a little.
  • Add the sauerkraut. If you are using amerikan sauerkraut, you need to wash it first. German sauerkraut is ready to use.
  • Stir everything and add about 1/2 can of the pinapples. You can add more later if you want the taste to be more present.
  • Now add the cream or the cream/milk mix and bring back to a slight boil.
  • Bring the pork back into the pot and stir into the sauerkraut.
  • Lower heat and let slightly cool for about 1 hour.
  • Make some mashed potatoes as a side.

Steps:

  • In a large skillet, saute the onion in the butter over med-high heat until the onion is translucent.
  • Reduce heat to low and add the caraway seeds.
  • Stir in the flour until it is well combined and cook on low for 2 minutes.
  • Add all remaining ingredients to the skillet and cook for about 5-7 minutes or until everything is heated through. Do not allow to boil.

A traditional German recipe that may be an acquired taste for some. This is similar to a quiche, but less eggy. If you can't find bacon you can dice, I think diced Canadian bacon or cooked dice ham would also be nice in this. TIP: If you use kitchen shears to chop up your sauerkraut before adding it to the recipe, it will be easier to cut the pie.

2 cups thick german bacon, diced (Speck) or 2 cups thick bacon, diced into cubes
1 large onion, diced ((about 1 cup))
1 teaspoon caraway seed, (or less to taste) (optional)
1 (2 cup) can german style sauerkraut, drained well,rinsed if desired
1 cup sour cream
2 large eggs
2 cups white hard cheese, grated ((such as Swiss or Gruyere))
1 9 inch prepared pie pastry dough, unbaked

Steps:

  • Line a deep dish pie plate with enough pastry to make a crust on the bottom and sides and set aside.
  • Cook diced Speck or bacon in a skillet; drain fat, reserving 1 tsp in which to saute the onions.
  • Sprinkle diced bacon, caraway seeds, and sauteed onions in pie plate.
  • Combine the remaining ingredients (sauerkraut, sour cream, eggs, and grated cheese) and pour into the pan as if you were filling a quiche.
  • Bake at 325-350 F (or 175 C) for about 45 minutes or until a knife inserted near the center comes out clean, not gloppy.
  • Let cool slightly before serving.

GERMAN STYLE SAUERKRAUT

This is the only way DH likes sauerkraut any more. We saw it on PBS many years ago. It was a PBS affiliate out of Oregon and I have no idea if it was a German language course for adults or a German cooking show. We watched the next week, but no German program of any kind. The woman cooking had a beautiful voice. Keep the juniper berries and caraway seeds confined. One time I didn't have any cheesecloth and just dumped in the spices. The caraway isn't too bad, but the juniper stays hard and tastes nasty when you bite and they don't get soft, which may be worse. Don't cheat and chop the potato. It has to be grated. It turns creamy and saucy. The potato won't do that if you slice or chop. Put some nice, big sausages or hot dogs on top and heat through and it's a one dish meal.

14 ounces sauerkraut, canned
800 g potatoes
1 (12 1/2 ounce) can vegetarian sausages (you can also use a larger can if you want more sausage in the casserole)
1 large onion, chopped
1 1/2 tablespoons canola oil
1 teaspoon cumin
salt, to taste
3 1/2 ounces sour cream

Steps:

  • Boil the potatoes with the skins on them until they are cooked, but not too soft (maybe about 10-15 minutes).
  • Skin the potatoes and cut in slices.
  • Cut the sausages in long slices.
  • In a pan heat the oil and cook the onion a few minutes, then add sauerkraut and seasoning. Saute for a couple more minutes then set aside.
  • Spray 8x8 cooking dish with cooking spray and lay in alternating layers the potatoes, then sausages, then sourkraut.
  • In a small bowl whip the sour cream with salt according to your taste and then pour/spread over the top.
  • Bake it in the oven at medium heat for around a 1/2 hour.

This recipe has to be the best tasting sauerkraut I've ever had. Traditionally, my family serves pork and sauerkraut every New Year's Day for luck in the coming year. I love cabbage as a general rule and like most sauerkraut recipes, but they can be quite sour depending on how it is prepared. Sadly I don't remember who gave me this recipe and who deserves the credit, since it was pulled from a collection of hand-written recipes I've kept for years. I made it as a side dish for New Year's Day dinner and it was a complete hit! This is certainly not your typical 'sour' sauerkraut recipe.

1 tablespoon bacon drippings
1 cup finely chopped onion
2 (16 ounce) packages sauerkraut, undrained
1 tablespoon packed brown sugar
1 teaspoon caraway seeds
½ cup chicken stock
½ cup cooking sherry

Steps:

  • Heat bacon drippings in a large skillet over medium heat; cook and stir onion until soft and translucent, about 5 minutes.
  • Place sauerkraut with juice into a large bowl and cover with water. Stir and use your hands to squeeze out as much of the water and juice as possible. Add squeezed sauerkraut to onion.
  • Stir brown sugar, caraway seeds, chicken stock, and cooking sherry into the sauerkraut mixture. Reduce heat to low and simmer until almost all the liquid has evaporated, 30 to 40 minutes, stirring occasionally.
