1/2 cup (packed) chopped fresh mint leaves
1/3 cup chopped fresh ginger
1/3 cup honey
2 cups boiling water
1/3 cup fresh lemon juice
1 1/2 cups (about) cold water
Ice cubes
Fresh mint leaves
Lemon slices

Steps:

  • Combine chopped mint, ginger, and honey in medium bowl. Add boiling water. Let steep 30 minutes. Strain into 4-cup glass measuring cup, pressing on solids to extract liquid. Add lemon juice and enough cold water to measure 4 cups total. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Fill glasses with ice cubes. Add lemonade. Garnish with mint leaves and lemon slices and serve.

1 cup freshly squeezed lime juice

chilled water or Sprite, to mix
mint leaf, for garnish

Steps:

  • Mix the 1 cup of water with the ginger and squeeze through a strainer to get ginger concentrate.
  • Add sugar and lime juice.
  • Stir until all the sugar is dissolved. (If you like it sweeter you can add more, to taste, at this point.).
  • Pour into bottles and refrigerate. Chill well.
  • When ready to serve, add a teaspoonful of concentrate to chilled water or sprite and mix well.
  • Serve garnished with a mint leaf.

  • Strain the lime juice into a blender. When the syrup is cold, fish out the ginger slices and pour the syrup into the blender. Add the lime zest. Then add the chopped mint and crushed ice and process until slushy. Spoon the slushy into bowls, garnish with mint leaves, and serve immediately.

Olive oil
1 (1/2-inch) piece ginger, peeled

Steps:

  • Prepare a charcoal or gas grill for two-zone cooking over high heat: For a charcoal grill, pour the coals onto one half of the grill. For a gas grill, heat all the burners, then turn off one of the end burners. (See Tips.)
  • Meanwhile, pat the shrimp dry, then transfer to a medium bowl and season with 1 1/2 teaspoons salt and lightly coat with olive oil. Set aside. Coarsely chop the ginger, then add the mint and a pinch of salt. Finely chop the ginger and mint together until homogenous. Transfer to a small bowl, finely grate 1/2 teaspoon lime zest into the bowl, and mix to combine. Cut the lime into wedges for serving.
  • When you're ready to grill, take the shrimp, mint-ginger mixture, lime wedges, a tightly folded paper towel soaked in olive oil, a serving platter and tongs to the grill. Clean the grates with a grill brush, then oil the grates with the paper towel. Add the shrimp perpendicular to the grates over the flame and cook until well browned, about 2 to 4 minutes. 1 oz lime rind simple syrup

Steps:

  • In a medium bowl, combine the lime rinds and sugar. Toss to coat the rinds with the sugar, then cover. Let sit, stirring every 45 minutes, for about 4 hours, or until the sugar is completely dissolved and there's syrup in the bottom of the bowl.
  • Strain the syrup through a fine-mesh sieve or cheesecloth, pushing to extract as much liquid as possible. Store in an airtight container in the refrigerator for up to 3 months.
  • In a cocktail shaker filled with ice, combine the rum, lime juice, simple syrup, and mint leaves. Shake vigorously for 20 seconds.
  • Strain into a glass filled with ice and top with ginger beer.
  • Garnish with the slice of lime and mint leaves.
