Scant 1/4 teaspoon cayenne
Kosher salt
1 pound baby rainbow carrots, tops trimmed
1 teaspoon finely grated lemon zest

Steps:

  • Preheat the oven to 375 degrees F.
  • Stir the honey, olive oil, cayenne and 1/4 teaspoon salt in a large bowl. Add the carrots and toss to coat. Spread the carrots on a foil-lined rimmed baking sheet and roast until tender and golden brown in spots, 20 to 25 minutes.
  • Transfer the carrots to a serving plate and sprinkle with the lemon zest and a little more salt.

2 tablespoons butter, softened
1/4 cup light brown sugar, firmly packed
1/2 teaspoon ground ginger

  • Cook carrots in boiling salted water for 2 minutes; drain and set aside.
  • In a large skillet, cream the butter with the brown sugar and ginger.
  • Cook over medium heat until mixture melts and begins to bubble slightly.

4 tablespoons butter
4 tablespoons liquid honey
2 teaspoons grated fresh gingerroot
1/4 cup frozen concentrated orange juice
1 teaspoon lemon juice, freshly squeezed
1 1/2 teaspoons tapioca starch or 1 1/2 teaspoons cornstarch
1/4 teaspoon salt
1/8 teaspoon white pepper

Steps:

  • Wash and trim carrots.
  • In a medium size saucepan, add carrots, salt and cover with water and bring to boil.
  • Reduce heat, cover and cook until carrots are almost tender; about 10 minutes.
  • To a large frying pan, add butter, honey and grated ginger and cook for 1 minute, stirring a few times.
  • Add cooked carrots and stir well to coat.
  • Cover and cook carrots on medium-high heat until carrots are glazed and glossy, about 3 to 4 minutes, stirring occasionally.
  • In a small mixing bowl, mix together orange juice, lemon juice and tapioca starch.
  • Add to frying pan along with salt and pepper.
  • Continue to cook stirring constantly until sauce thickens slightly; about 3 minutes.
  • Serve with your dinner.

I came up with this and served them at Easter and was told by several people that they liked these even though they normally don't like cooked carrots. Use Vernor's ginger ale instead of Canada Dry if you can find it. It's definitely worth it. Also, make sure to reduce the sauce down enough that it will stick to the carrots. Too runny and it will pool in the bowl.

  • While the carrots are steaming, grate the ginger.
  • Melt the butter in a saucepan and add the ginger.

  • Add the coconut oil to a cast-iron skillet over medium heat and using a silicon or pastry brush coat the bottom of the skillet with the oil.
  • Add the sliced carrots to the skillet and spread them out so they do not overlap. Sprinkle with the salt and pepper and sauté them for 3 or 4 minutes, allowing them to brown lightly and caramelize, watch them closely so they do not burn. When they are to the desired color, flip each slice with a fork and allow the other side to brown, this will take another 3 or 4 minutes. Remove the carrots from the skillet and transfer them to a serving bowl. Gently toss the carrots with the ginger preserves, squeeze the lemon juice over the top and add the thyme garnish. Serve and enjoy!
