4 medium nectarines, sliced
1/4 cup sugar
1 teaspoon lemon juice
1/2 teaspoon ground ginger
3 ounces reduced-fat cream cheese
2 cups fresh raspberries
1 cup fresh blueberries

Steps:

  • In a large bowl, toss nectarines with sugar, lemon juice and ginger. Refrigerate, covered, 1 hour, stirring once., Drain nectarines, reserving juices. Gradually beat reserved juices into cream cheese. Gently combine nectarines and berries; serve with cream cheese mixture.

1/2 cup plus 2 tablespoons honey
1/4 cup balsamic vinegar
1/2 teaspoon vanilla extract
1 8-ounce container crème fraîche
6 firm but ripe nectarines, halved, pitted

Steps:

  • Whisk 1/2 cup honey, vinegar, and vanilla in small bowl. Whisk crème fraîche and remaining 2 tablespoons honey in medium bowl to blend. (Glaze and crème fraîche mixture can be made 1 day ahead. Cover separately. Refrigerate crème fraîche mixture. Rewhisk both before using.)
  • Prepare barbecue (medium-high heat). Brush nectarines generously with half of glaze. Grill until heated through, turning occasionally, about 4 minutes. Arrange 2 nectarine halves, cut side up, on each plate. Drizzle with remaining glaze. Spoon some crème fraîche mixture into center of each nectarine half and serve.

Macerated desserts are simply fruit steeped in a flavored sugar syrup, wine, liquor, vinegar or citrus juice, usually for a couple of hours or overnight. During the process, the fruit becomes slightly softer, its flavor infused with spices, juices or wine. Fruit can be nicely complemented not only by a simple sugar syrup, but also by orange or lemon juice, wine, liqueurs and vinegar. Any soft fruit, like bananas, mangoes or papayas, should be added at the end. Basil or mint leaves, orange or lemon zest and star anise will also add some zing.

1 pint raspberries
1 pint blackberries
2 tablespoons good-quality balsamic vinegar
2 tablespoons sugar
Pinch salt
Pinch freshly ground black pepper
2 1/2 cups whipping cream
3 tablespoons sugar
2 teaspoons fresh lavender flowers (optional)
Zest of 1 orange
Mint leaves for garnish

Steps:

  • In a large nonreactive bowl, mix the fruit, vinegar, sugar and pinches of salt and pepper. Let sit uncovered in refrigerator for 30 minutes.
  • Combine cream, sugar, lavender, orange zest and another pinch of salt, and whip until soft peaks form.
  • Put fruit into serving bowls, and spoon a bit of whipped cream on top. Garnish with mint.

8 raw chop with refuse, 120 g; (blank) 4.225 ounces lamb rib chops (each about 3/4 in. thick, 3 to 4 oz.)
2 tablespoons olive oil
⅓ cup chopped fresh rosemary leaves
3 tablespoons chopped garlic
½ teaspoon salt
¼ teaspoon pepper
8 (4 ounce) links sausages (2 lb. total) such as mild or hot Italian
⅔ pound baby spinach leaves, rinsed and drained
1 tablespoon dark molasses
1 tablespoon sherry vinegar or balsamic vinegar
1 tablespoon brown sugar
5 each firm-ripe nectarines

Steps:

  • Rinse lamb chops and pat dry. Trim off and discard excess surface fat. In a bowl, mix chops with olive oil, rosemary, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cover and chill at least 15 minutes or up to 2 hours.
  • Molasses-Glazed Nectarines: In a large bowl, combine 1 tablespoon each molasses, sherry vinegar or balsamic vinegar, and firmly packed brown sugar. Rinse, pit, and quarter 5 firm-ripe nectarines (1/2 lb. each). Add to marinade and mix gently. Let stand 15 to 30 minutes.
  • Lay chops and sausages on a barbecue grill over a solid bed of hot coals or high heat on a gas grill (you can hold your hand at grill level only 2 to 3 seconds); close lid on gas grill. Turn chops and sausages as needed until they're browned on both sides, lamb is still pink in center of thickest part (medium-rare; cut to test), 6 to 8 minutes total (or done to your liking), and sausages are no longer pink in the center (cut to test), 10 to 12 minutes total.
  • Meanwhile, mound spinach leaves on a large rimmed platter. Arrange lamb chops and sausages on spinach and keep warm.
  • With a slotted spoon, lift Molasses-glazed Nectarines from marinade (reserve marinade) and lay on grill. Turn as needed until quarters are beginning to brown on both sides, about 2 minutes total. Arrange beside meats on platter. Drizzle marinade evenly over nectarines and meats. Add more salt and pepper to taste.

2 tablespoons brown sugar
2 tablespoons strawberry jam
150 g strawberries, washed, hulled and quartered
150 g blueberries, washed and dried
4 nectarines, sliced
1 cup sliced almonds
500 ml prepared custard

Steps:

  • Gently heat brandy, sugar and jam in small saucepan until melted.
  • Place berries in a bowl.
  • Toss brandy mixture through.
  • Refrigerate.
  • Top berries with almonds.
  • Serve with custard and sliced nectarines on the side.
