GLUTEN-FREE GINGERSNAP COOKIES
I decided to squeeze in one more holiday cookie recipe before the New Year! These gluten-free gingersnaps are the best cookie I've ever made, and I might even go as far to say my new favorite cookie of all time! They are made with nut and oat flours and pack a serious flavor punch, thanks to tons of spices and fresh ginger! When I think about the perfect cookie, I think crispy outside and soft inside. These are exactly that!

Steps:
- Beat butter, brown sugar, and 1/2 cup cane sugar together in a bowl using an electric mixer until creamy. Add egg and mix to combine. Mix in molasses and vanilla extract.
- Mix oat flour, almond flour, coconut flour, fresh ginger, ground ginger, baking soda, 1 teaspoon cinnamon, 1 teaspoon nutmeg, and cloves together in a separate bowl. Add to butter mixture slowly and combine. Refrigerate dough for at least 1 hour, to overnight; dough will be very wet before it's chilled.
- Preheat the oven to 350 degrees F (175 degrees C). Line 2 large baking sheets with parchment paper.
- Combine 1/4 cup cane sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon nutmeg in a shallow dish.
- Scoop dough by tablespoonfuls and roll into balls. Roll balls in cinnamon-sugar mixture to coat and place onto the prepared baking sheets, making sure not to overcrowd as they will flatten and spread.
- Bake in the preheated oven until set and golden, 10 to 12 minutes. Let cookies sit for 5 minutes before transferring to a wire rack to cool. Serve warm or let cool completely before storing in an airtight container.

GLUTEN-FREE TRAIL MIX CRISP COOKIES
This recipe was born out of necessity to use up the leftover nuts and dried fruits in my pantry. The crisp of the cookie is satisfying and goes well with a nice cup of tea at the end of a long day. I have used the end of a bag of trail mix to make them before and it worked out perfectly. Experiment and add whatever you like!

- Combine the ponzu sauce, ginger, garlic, and red pepper flakes in a large bowl and whisk to combine. Add the shrimp and let marinate for 10 minutes.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Using a slotted spoon, remove half the shrimp from the marinade and put into the hot pan in an even layer. Cook the shrimp for 2 minutes, flip, and cook for another 2 minutes. Remove from the pan and place in a bowl. Add another tablespoon of oil and repeat with the rest of the shrimp.
- Pour the marinade into the pan and bring to a boil, scraping the pan. Let boil until the marinade has reduced considerably and has a glaze-like consistency, about 3 minutes. Add the bok choy, bell pepper, carrots, and edamame. Cook, stirring for 2-3 minutes or until the bok choy has wilted and the vegetables are crisp-tender. Add the shrimp back to the pan along with the sesame oil and cook, stirring, until the shrimp are just heated and cooked through.
- Garnish with the green onions and sesame seeds. Serve over rice with a drizzle of sriracha, if desired.

- Whisk 3 cups flour, cinnamon, ginger, baking powder, cloves and salt in a medium bowl. Beat butter, brown sugar, molasses, egg and orange zest in a mixing bowl with an electric mixer on low speed until well blended.
- With the mixer on low speed, then medium speed, beat about half the flour mixture into the wet ingredients until incorporated. Beat in the remaining flour mixture until just incorporated. Let the dough stand for 5 minutes. It should be somewhat firm, but not at all dry. If it seems overly sticky, stir in up to 2 additional tablespoons of flour.
- Divide the dough into thirds. Place 1 piece on a 12-inch-long sheet of parchment paper and shape into a disk. Top with a second sheet of parchment. Roll the dough out between the parchment into an 8-inch circle about 1/4 inch thick. Place the parchment with the rolled-out dough on a baking sheet. Repeat with the remaining pieces of dough, stacking each disk on top of the previous one. Freeze on the baking sheet until cold and firm, at least 30 minutes and up to 1 day.
- To shape and bake cookies: Position a rack in middle of oven; preheat to 350 degrees F. Line 2 or 3 large baking sheets with parchment paper.
