GOAN FISH CURRY

Goan Fish Curry image

Recipe video above. This famous Goan fish curry comes to you from Goa, a little pocket of Indian paradise that's all about the sun, surf, sand and excellent seafood! Deeply aromatic with a tomato and coconut based sauce, this recipe has a few more spices and steps than the more home-style recipes you'll find online because this aims to replicate the richer sauce and layers of flavour you get at (good) Indian restaurants.Once you've made this with fish, try it with prawns/shrimp - it's also excellent!SPICINESS: Quite spicy as written, but not blow-your-head-off! I thoroughly enjoy it as written, not suffering. See Spice Note below for adjustment to reduce / eliminate spiciness.

Provided by Nagi

Categories     curries     Main

Number Of Ingredients 27

2 1/2 tbsp Kashmiri chilli powder ((Note 1))
1 tbsp coriander
2 tsp cumin
1 tsp turmeric
1/2 tsp fenugreek powder ((Note 2))
3/8 tsp ground cloves
6 cloves garlic (, minced)
1 tbsp fresh ginger (, finely grated)
2 tbsp tamarind puree ((Note 3))
1/2 red onion (, chopped)
6 tbsp water ((plus more, as needed))
3 tbsp vegetable oil
1/2 tsp black mustard seeds ((Note 4))
1/2 red onion (, cut in half again (like a quartered orange) and thinly sliced)
1 tbsp tomato paste
2/3 cup canned tomato pulp/polp ((Mutti), OR tomato passata or crushed tomato, Note 5))
2/3 cup water
400ml/ 14oz coconut milk (, full fat (Note 6))
1 1/4 tsp salt (, cooking/kosher (or 3/4 tsp fine table salt))
1 1/2 tsp sugar
1/4 tsp chilli powder ((pure chilli, not US Chili Powder which is a mix, Note 7))
2 long green chillies (, cut into half lengthwise and deseeded, optional (Note 8))
1 tomato (, cut into 8 wedges then into 2.5cm / 1" chunks)
600g / 1.2 lb firm-fleshed white fish (, cut into 3cm / 1.25" cubes (Note 9))
1/4 cup fresh coriander/cilantro leaves
Finely sliced green chillies (, optional)
Basmati rice

Steps:

  • Place Curry Paste ingredients in a tall jug or milkshake container (something that fits the head of a blender stick) then blitz on high for 5 to 10 seconds until the onion is pureed. Add more water if needed to make it puree.
  • Sizzle black mustard seeds: Heat oil over medium heat in a large pot. Add black mustard seeds and let them sizzle for 30 seconds - careful, they might pop!
  • Saute onion: Add red onion and cook for 3 minutes until edges start to tinge with gold.
  • Cook off curry paste: Add curry paste and cook for 3 minutes - to evaporate water, make spices bloom and cook garlic & ginger.
  • Cook off tomato: Turn heat up to medium high. Add tomato paste and tomato pulp, cook for 2 minutes.
  • Coconut milk: Add water, coconut milk, sugar, salt and chilli powder if using. Stir, then bring to simmer, low heat so it's bubbling gently.
  • Simmer 2 minutes, add tomato & green chilli: Simmer for 2 minutes, add tomato and green chilli.
  • Simmer 3 minutes: Simmer for another 3 minutes, stirring every now and then - sauce should be thickened (not watery), it gets looser again when fish is added (because fish will drop some juices = even more flavour!).
  • Add fish: Add fish, stir, cook for 3 to 4 minutes until fish easily flakes.
  • Garnish & serve: Remove from stove and transfer to serving bowl. Garnish with coriander/cilantro and fresh green chillies if desired. Serve with basmati rice!

INDIAN GOAT CURRY

Indian Goat Curry image

An aromatic, comforting curry made in the pressure cooker. In India, this curry is normally made with kid goat meat but you could also use lamb. Serve with rice or hot chapatis.

Provided by Anonymous

Time 1h50m

Yield 6

Number Of Ingredients 17

3 ½ pounds baby goat meat, cut into small cubes
salt to taste
3 teaspoons ground turmeric, divided
5 tablespoons vegetable oil
1 teaspoon white sugar
3 medium potatoes, halved
3 pods cardamom
4 whole cloves
1 (1 inch) piece cinnamon stick
3 medium onions, thinly sliced
2 peppers green chile peppers, minced
4 cloves garlic, minced
1 (1 inch) piece minced fresh ginger root
2 medium tomatoes, sliced
¾ teaspoon chili powder
2 ¼ cups water, divided, or as needed
freshly chopped cilantro

Steps:

  • Wash goat meat well under cold running water and pat dry. Rub in salt and 1 teaspoon turmeric powder. Set aside for 10 minutes.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat oil and add sugar, allowing it to caramelize. Saute potatoes in the caramelized sugar until golden, about 5 minutes. Remove potatoes and set aside.
  • Stir in cardamom pods, cloves, and cinnamon stick. Add sliced onion, chile peppers, garlic, and ginger. Cook until onions are soft and golden, about 5 minutes. Stir in tomatoes, remaining 2 teaspoons turmeric powder, and chili powder; cook, stirring often, for about 5 minutes. Add goat meat, stirring to blend everything. Add enough water to cover the meat, about 2 cups.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 15 minutes. Release remaining pressure carefully using the quick-release method, about 5 minutes. Unlock and remove the lid. Taste curry and adjust seasoning with salt and sugar to taste if necessary.
  • Check the goat to make sure it is tender. Add the potatoes and about 1/4 cup more water. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 minutes for pressure to build.
  • Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Adjust seasoning once more. Transfer to a serving dish and garnish with fresh cilantro.

A COLLECTION OF DELICIOUS DISHES FROM GOA, INDIA
a-collection-of-delicious-dishes-from-goa-india image

From thespruceeats.com
Estimated Reading Time 3 mins
  • Pork Vindaloo. Vindaloo typically refers to an extremely thick gravy that's served with meat; typically, pork. This hot and tangy pork vindaloo is ideal with jeera rice, also known as cumin rice, and a leafy green salad.
  • Sorpatel, Spicy Pork Curry. Sorpatel is a spicy pork curry with a rich broth of cinnamon, coriander, cumin, and clove. Traditionally, it was a sustainable way to use up all parts of a butchered pig—including the intestines, heart, and tongue.
  • Goan Fish Curry. Tangy and spicy, this curry is almost a staple food in Goa. It gets its creaminess from the grated coconut, and, unlike many Indian curries you see in American restaurants, is thick and textured from all the spices.
  • Semolina-Battered Prawns. These prawns are deliciously battered in semolina wheat, also called rava. Rava is a ubiquitous ingredient in South Indian cuisine, especially present in many breakfast foods.
  • Fresh Prawn Pickle. This prawn pickle is a characteristically Goan dish. Unlike more popular dishes like vindaloo, you won't often see this on menus in other parts of the country.
  • Prawn Ambot Tik. This delicious curry is hot and sour, and traditionally made with shrimp (or even shark, but due to sustainability concerns, that is changing).
  • Prawn Balchão. This fiery shrimp gravy is almost like a pickle in that packs a bit of heat. It, like many of the dishes on this list, reflects Goa's Portuguese heritage.
  • Sannas. Sannas are Goan rice cakes not unlike idli found in other parts of South India. Neither sweet nor savory on their own, they're the perfect fluffy starch for soaking up spicy curries or rich pork vindaloo.
  • Bebinca. A traditional rich Goan dessert, bebinca is a must have at any celebration, be it a birth, wedding, Christmas, or Easter. Making bebinca requires patience.
  • Goan Sausage Curry. This simple, hot and tangy curry is delicious. It's often served at roadside stalls or beach shacks, and it's ubiquitous throughout Goa.
