Goat Cheese Popovers image

This recipe was adapted from the White Rocks Inn Bed & Breakfast in Wallingford, Vermont. Enjoy!I really loved these popovers! I think next time I might try using brie or pepper-jack cheese.

Number Of Ingredients 9

vegetable oil, for greasing muffin tins
4 ounces herbed goat cheese, cut into 24 pieces (if you don't have herbed goat cheese, mix a little chopped parsley and chives into the cheese)
6 eggs
1 1/2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1 pinch nutmeg
2 cups milk
1/4-1/2 cup heavy cream (I used 1/4)

Steps:

  • Preheat oven to 400*F.
  • Brush muffin cups with oil and place in the oven to get hot.
  • Place the eggs, flour, salt, pepper and nutmeg in blender and blend about 10 seconds until well combined. Scrape down sides.
  • With the blender running, slowly pour in milk and cream and blend until smooth. The mix will be really liquidy, but that's okay.
  • Remove the muffin pans from oven and fill each half way with batter. Place a piece of goat cheese in the center of each cup and pour remaining batter to fill each cup 2/3 full.
  • Bake popovers until puffed and golden, 35-50 minutes. Mine came out great at 35 minutes. So watch your oven after 30 minutes or so!
  • Serve hot. Enjoy!

1/2 cup (1 stick) unsalted butter, at room temperature
2 tablespoons anchovy paste
1 tablespoon chopped chives
1 1/2 teaspoons fresh lemon juice
1/2 teaspoon lemon zest
Kosher salt and freshly ground black pepper, optional
Vegetable oil cooking spray
6 large eggs, at room temperature
5 cloves garlic, minced
2 cups whole milk, at room temperature
1 1/4 cups (3 ounces) finely grated Asiago cheese
1/4 cup (1-ounce) shredded sharp Provolone cheese
1 1/2 cups all-purpose flour
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup chopped flat-leaf parsley

Steps:

  • Butter: In a small bowl, mix together the butter, anchovy paste, chives, lemon juice, and lemon zest until smooth. Season with salt and pepper (if using), to taste.
  • Popovers: Put an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Spray a 12-count muffin or popover pan with vegetable oil cooking spray. Set aside.
  • In a blender, add the eggs and garlic. Blend on medium speed until frothy, about 15 seconds. Add the milk and the cheeses and blend until smooth. Add the flour, salt, pepper and parsley. Blend on medium speed until incorporated. Pour the batter into the muffin cups, filling each cup to within 1/4-inch of the top. Bake, without opening the oven door, until puffed and golden, about 30 to 35 minutes. Remove the popovers from the oven and serve with the anchovy butter.

Blue Cheese Popovers image

I'm very excited to show you this new, and possibly slightly improved, popover recipe. While we may have tweaked the ingredient amounts a little bit, we are still going to be using our foolproof, cold-oven method for making these. The reason this technique is so fun to use, is that it's literally the opposite of everything every popover expert says you should do.

5 large eggs, at room temperature
1 teaspoon kosher salt
1 pinch cayenne pepper, or to taste
2 cups whole milk, at room temperature
¼ cup vegetable oil
2 cups all-purpose flour
1 tablespoon unsalted butter, softened
nonstick vegetable oil cooking spray
½ cup crumbled blue cheese, or to taste

Steps:

  • Whisk eggs, salt, cayenne, milk, oil, and flour together in a large measuring cup or mixing bowl just until blended.
  • Cover the bowl with plastic wrap and allow to rest for 1 hour on the counter, or in the refrigerator for 2 to 3 hours, up to overnight.
  • Grease 14 nonstick muffin cups with butter, and then mist with cooking spray.
  • Whisk the batter for a few seconds and fill each prepared muffin cup 4/5 full. Sprinkle each evenly with blue cheese.
  • Place the muffin pans into a cold oven with a drip pan set underneath. Set the heat to 450 degrees F (230 degrees C). Bake in the oven until popovers are well browned and fully puffed, about 30 to 35 minutes. Poke each popover with a knife to allow steam to escape. Serve hot.

1 1/4 cups milk
1 1/4 cups flour, sifted
1/4 teaspoon salt
3 tablespoons butter, melted
3/4 cup sharp cheddar cheese, shredded

Steps:

  • Preheat oven to 400°F.
  • Generously butter 6 cups in a popover pan or 6 six ounce custard cups.
  • In a large bowl, beat eggs well with mixer.
  • At low speed add milk.
  • Add flour and salt and beat until smooth.
  • Stir in melted butter.
  • Fill cups 1/2 full with batter.
  • Top with cheese and pour in remaining batter.
  • Bake 50 minutes or until puffed and deep golden brown.
  • Let pans cool 1 minute and then loosen with a knife.
  • Serve with hot with butter and fresh fruit.

  • Preheat oven to 425 degrees with rack in the lower third of the oven. Place a 12-well popover pan (preferred) or a standard, nonstick 12-cup muffin tin into the oven, on a lined baking sheet, to heat.
  • In a small bowl, stir together goat cheese and chives. Set aside. Measure out flour, salt, and pepper, and set aside.
  • In a large bowl, vigorously whisk together milk and eggs until frothy, 1-2 minutes. Add flour, salt, and pepper, and whisk until just combined and only small lumps remain. Whisk in melted butter. Batter will be relatively thin, with the texture of cream.
  • Remove popover pan from oven and coat wells with cooking spray. Fill each well about halfway with batter. Spoon about 1 teaspoon of goat cheese into the center of each well and sprinkle with some of the crumbled bacon.
