BANANA PUDDING
Banana pudding is a Southern dessert favorite. It's no wonder. This luscious banana dessert is so easy to make and hits just the right note every time you serve it.

Steps:
- Combine 1/2 cup sugar, flour and salt in the top of a double boiler. Mix well. Sir in 1 egg, 3 yolks and milk. Mix well. Place over boiling water. Cook, stirring constantly, until smooth and thickened.
- Remove the mixture from the heat and stir in the vanilla. Spread 1/4 cup of the pudding in a 1 3/4 quart casserole. Arrange 12 wafers over the pudding. Top with 1/3 of the banana slices and 1/3 of the remaining pudding. Repeat the layers twice.
- Beat 3 egg whites (at room temperature), at the high speed of an electric mixer, for 1 minute. Gradually add 1/4 cup sugar, 1 tablespoon at a time. Beat until stiff peaks form and the sugar dissolves (2-4 minutes). Spread the meringue over the pudding, sealing to the edge of the casserole.
- Bake at 350°F for 12-15 minutes or until golden brown.

- In medium saucepan combine sugar, flour, and salt. Add eggs and stir well. Stir in milk, and cook over low heat, stirring constantly. When mixture begins to thicken, remove from heat and continue to stir, cooling slightly. Stir in vanilla and butter until smooth.

MOMS EASY BANANA PUDDING
This was one of our favorite desserts my mom would make on the holidays or whenever we asked for it. All my brothers and sisters make it the same way for our families. My husband doesn't want it made any other way. I've tried a homemade version but, my family lets me know they want their grandma's.

- 1. Prepare pudding as directed on box. I use the small boxes. In separate bowl or dish spread out a layer of the wafers evenly on the bottom. Add layer of chopped bananas. I use two bananas per layer. Pour all the pudding on top of your two layers. Spread evenly. To the top of the pudding add rest of chopped bananas then layer the wafers on top. Chill. Enjoy....

- 1. Prepare Pudding: Preheat oven to 325* if you are going to make the meringue.
- 2. Arrange one-third of vanilla wafers in a medium-size ovenproof bowl (about 2 quart size) Cover with one-third of banana slices. Repeat layers twice with remaining vanilla wafers and bananas.
- 3. Whisk together milk and next 4 ingredients in a heavy saucepan. Cook over medium-low heat,whisking constantly, 15 minutes or until pudding-like thickness. Remove from heat, and stir in vanilla. Pour over vanilla wafers and bananas in bowl.
- 4. Prepare Meringue: Beat egg whites at medium speed with an electric mixer until foamy. Gradually add sugar, beating until sugar dissolves and stiff peaks form. Spread meringue over pudding, sealing to edge of bowl.
- 5. Bake at 325* for 15 minutes or until golden. Serve immediately, or let cool completely (about 30 minutes) and cover and chill 1 hour before serving.
- 6. TIP::::1/2 cup no-calorie sweetener may be substituted. It was tested with Splenda No-calorie Granulated Sweetener. ( DO NOT SUBSTITUTE SWEETENER IN MERINGUE.)
QUICK AND EASY BANANA PUDDING RECIPE
