GRAMMA PIE

Steps:

• Pie fillingPeel gramma, discard the seeds and then chop into pieces and cook with a little water in a covered saucepan for a good 3/4 hour. Drain until cold, pressing lightly to extract as much of the liquid as possible.Transfer gramma into a bowl, add sugar, orange rind, then juice and rind of lemon.Add sultanas, syrup and spice. Taste, adding more lemon if required. Refrigerate until ready to make up.PastrySift both flours with salt into a bowl, then rub in butter. Beat the egg with sugar and add to flour. Mix quickly by hand into dough. Knead lightly with a little extra flour.Roll our 3/4 of the pastry but not too thinly, to fit a 20cm metal pie plate.Fill with prepared gramma.Wet edges and cover with remaining pastry, already rolled to fit as a lid. Press edges together with a fork to seal. Brush the top of the pie with milk or water and sprinkle with a little extra sugar.Bake in moderate oven (180 degrees C) for around 1 hour.
