This soup is a great way to serve whole grains to kids. Farro is high in fiber and protein.

3 tablespoons extra-virgin olive oil, plus more for brushing
2 carrots, chopped
1 onion, chopped
Kosher salt and freshly ground pepper
1 cup farro
4 cups low-sodium chicken broth
1 wide strip lemon zest (removed with a vegetable peeler), plus the juice of 2 lemons
1 cup shredded rotisserie chicken breast, skin removed
3 large eggs
1/2 cup crumbled feta cheese (about 2 ounces)
1 tablespoon chopped fresh dill, plus more for topping
2 pitas, halved

Steps:

  • Preheat the oven to 350 degrees F. Heat the olive oil in a large pot over medium-high heat. Add the carrots, onion, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the vegetables soften, about 5 minutes. Add the farro and cook, stirring, until toasted, 1 minute. Add the chicken broth and 3 cups water; cover and bring to a boil. Add the lemon zest, reduce the heat to medium low and simmer, uncovered, until the farro is almost tender, about 15 minutes. Stir in the chicken.
  • Whisk the eggs and lemon juice in a bowl; drizzle 1/2 cup of the hot broth into the eggs, whisking constantly. Gradually stir the hot egg mixture into the pot. Cook over medium-low heat, stirring constantly, until thickened, about 3 minutes. Season with 1/4 teaspoon salt.
  • Combine the feta and dill in a small bowl; season with salt and pepper. Fill the pita halves with the feta mixture and lightly brush with olive oil. Transfer to a baking sheet and bake until the cheese melts, 2 to 3 minutes. Top each serving of soup with more dill; season with pepper. Serve with the stuffed pitas.

1 sweet onion, quartered and sliced into thin strips
8 cloves garlic, minced
10 cups chicken broth
2 skinless, boneless chicken breasts
1 lemon, zested
½ teaspoon red pepper flakes
1 cup Israeli (large pearl) couscous
1 teaspoon salt
ground black pepper to taste
½ (4 ounce) package crumbled feta cheese
⅓ cup chopped fresh chives

Steps:

  • Place olive oil in a large sauce pot over medium-low heat. Saute onion and garlic in the hot oil until softened, 3 to 4 minutes.
  • Add chicken broth, chicken breasts, lemon zest, and red pepper flakes to the pot. Increase heat to high, cover, and bring to a boil. Reduce heat to medium and simmer for 5 minutes. Stir in pearl couscous, salt, and pepper. Simmer for 5 minutes more. Remove from heat.
  • Remove chicken breasts from the pot using tongs. Use a fork and the tongs to shred the chicken. Return to the pot. Stir feta cheese and chives into the soup. Taste and season as needed. Serve warm.

1 tablespoon butter
2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
5 roma (plum) tomatoes, peeled and chopped
1 (8 ounce) bottle clam juice
1 cup dry white wine
¾ teaspoon dried oregano
1 pinch salt
½ teaspoon pepper
4 ounces crumbled feta cheese
1 pound medium shrimp - peeled and deveined
¼ cup chopped fresh parsley

Steps:

  • Melt the butter and heat the olive oil in a large pot over medium heat. Stir in the onion and garlic, and cook until tender. Mix in the tomatoes, clam juice, and wine. Season with oregano, salt, and pepper. Bring to a boil, reduce heat to low, and simmer 10 minutes.
  • Transfer soup in batches to a blender, and puree until smooth. Return to the pot, and stir in feta cheese. Continue cooking 10 minutes.
  • Stir the shrimp into the soup, and continue cooking 3 minutes, or until shrimp are opaque. Mix in parsley just before serving.

2 tablespoons white sambuca liqueur
1 lemon, juice of
2 quarts chicken broth

1/2 teaspoon crushed peppercorn
1/4 teaspoon white pepper
2 dashes hot pepper sauce

3 cups washed and chopped fresh spinach
2 cups cooked wild rice
8 -10 tablespoons crumbled feta cheese (to garnish)

Steps:

  • In 4-quart saucepan, saute onion, carrots, bell pepper and garlic in oil over medium heat until vegetables are tender.
  • Add Sambuca and lemon juice and saute 5 minutes.
  • Add broth, chicken, peppercorns, white pepper, hot pepper sauce, celery salt and spinach. Simmer 20 minutes.
  • Add cooked rice.
