TSOUREKI (GREEK EASTER BREAD)

Tsoureki (Greek Easter Bread) image

This is a favorite bread of Greeks and non-Greeks. It is great even for another day besides Pasca. It works great as French toast as well. Not a diet bread though!

Time 2h25m

Yield 16

Number Of Ingredients 15

2 ¼ cups milk
1 cup sugar
¼ cup sweet butter
1 teaspoon yeast
8 cups unbleached bread flour, or more as needed
4 eggs
1 egg white
1 cup chopped blanched almonds
1 pound chopped dried apricots
1 orange, zested and juiced
1 lemon, zested
1 tablespoon mahlepi
1 egg yolk
¼ cup milk
½ cup slivered almonds

Steps:

  • Combine milk, sugar, and butter in a saucepan over low heat and warm to 112 degrees F (44 degrees C). Remove from heat. Stir in yeast and wait for mixture to bubble.
  • Place flour in a large bowl. Add yeast mixture, whole eggs, egg white, chopped almonds, apricots, orange zest and juice, lemon zest, and mahlepi. Mix together. Knead dough until well mixed, adding extra flour if necessary until dough is only slightly sticky. Set dough aside until doubled in size, about 1 hour.
  • Combine egg yolk and 1/4 cup milk in a bowl and place in the refrigerator.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Knead risen dough to expel bubbles and divide into 2 equal parts. Divide each half into 3 equal balls. Roll each ball into a rope about 18 inches long. Braid 3 ropes to make a loaf and tuck the ends underneath and place on a baking sheet. Repeat with remaining 3 ropes to form a second loaf. Brush egg yolk mixture on top of each loaf and sprinkle with slivered almonds. Brush again with egg yolk mixture.
  • Bake in the preheated oven until loaves are brown and sound hollow when tapped on the bottom, about 40 minutes.

GREEK EASTER EGGS

Greek Easter Eggs image

I found how to make this dye online, but I changed the technique because I did not get good results that way. The first Easter that I celebrated with my husband's family was wonderful. After Easter dinner, a tray of red-dyed hard-boiled eggs was placed on the table. (The deep red eggs remind us of the blood of Christ.) Everyone chose one egg and then paired up two-by-two. Taking the eggs and matching fat or pointed end to end, as they said 'Christos Anesti' they tapped the ends of the eggs together and whoever's egg remained unbroken 'won'. This continued (both ends of the egg can be used as long as matching ends tap each other) until the last person had at least one end of their egg in tact. This was a fun and joy-filled way to help celebrate.

12 yellow onions, skins removed and reserved
2 tablespoons white vinegar
12 eggs

GREEK DEVILED EGGS

Greek Deviled Eggs image

Provided by strawberrybird

Categories     < 30 Mins

Time 30m

Yield 12 eggs, 6 serving(s)

Number Of Ingredients 7

6 eggs
1 cup Greek yogurt or 1 cup regular yogurt
2 tablespoons sun-dried tomatoes, finely chopped
1 teaspoon smoked paprika
1/4 teaspoon salt
1 shallot, thinly sliced
1/4 cup oil

Steps:

  • If using regular yogurt, line a strainer with a coffee filter, place over a bowl or cup, and place yogurt in the filter. Let drain for 4 hours or overnight. Discard the water and use the remaining yogurt in the recipe.
  • Place eggs in a pot and cover with cold water so that it covers the eggs by 1 inch. Heat on stove until boiling. Remove from heat and cover with lid. Set timer to 15 minutes.
  • After 15 minutes, immediately drain eggs and run under cold water or immerse in a ice bath. Peel eggs.
  • Slice eggs in half and scoop out yolks into a small bowl. Set the whites aside.
  • Smash the yolks with the back of a fork. Add 1/2 cup yogurt and mix well. Continue to add 1 tbsp of yogurt until desired consistency is reached.
  • Mix in sun-dried tomatoes, salt, and paprika.
  • Heat oil in a skillet over medium-heat. When oil is hot, test with a shallot; when the shallot instantly sizzles it is ready. Cook shallots in oil until browned. Drain on paper towels and salt lightly while still hot.
  • Using a small spoon, fill each egg half with the yolk mixture. Top each egg with one or two shallot slices immediately before serving.
