GREEN BEANS WITH TOMATOES
Simple and wholesome, this warm side dish can be easily matched with any main course.

Steps:
- In a large skillet with a tight-fitting lid, heat oil over medium-high. Add onion and oregano, and cook, stirring frequently, until lightly browned, 2 to 3 minutes.
- To skillet, add tomatoes and their puree, breaking up tomatoeswith a spoon or your fingers; stir to combine. Add green beans, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper, and bring to a boil. Reduce heat to medium-low; cover and simmer, stirring occasionally, until green beans are soft, about 30 minutes. Serve.

SAUTEED GREEN BEANS WITH TOMATOES AND BASIL SERVED WITH PARMESAN CRISPS

Steps:
- Cook the green beans in a large pot of boiling water until just crisp-tender, about 3 minutes. Drain and rinse in cold water. Drain well; set aside.
- Melt the butter and oil in a heavy, large skillet over medium heat. Add the shallots and garlic and saute until tender, about 2 minutes. Add the tomatoes and cook until heated through, about 3 minutes. Add the beans and cook until the juices evaporate and the beans are almost tender, stirring often, about 10 minutes. Stir in the wine and basil. Simmer 2 minutes longer. Season with salt and pepper, to taste. Transfer to a serving bowl, and serve.
- Preheat oven to 400 degrees F.
- Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2-inch apart.
- Bake for 3 to 5 minutes or until golden and crisp. Cool.
- Yield: 8 to 10 crisps
GREEN BEANS WITH CHERRY TOMATOES
These beans are briefly boiled and tossed with cherry tomatoes in a buttery basil sauce to make the most yummy green beans ever! We serve these at Easter Dinner every year but are a delicious accent to any meal.

- Place beans and water in a large saucepan. Cover, and bring to a boil. Set heat to low, and simmer until tender, about 10 minutes. Drain off water, and set aside.
- Melt butter in a skillet over medium heat. Stir in sugar, garlic salt, pepper and basil. Add tomatoes, and cook stirring gently just until soft. Pour the tomato mixture over the green beans, and toss gently to blend.

- Add the bacon and onion to a large skillet over medium heat. Cook, stirring, until the bacon is beginning to crisp and the onions are golden, 5 to 7 minutes.
- Increase the heat to medium high and add the green beans and tomato paste. Stir and allow to cook for a minute or two. Add the tomatoes, crushing them with your hands as you add them. Stir to combine. Season with salt, pepper and cayenne. Bring the mixture to a simmer and simmer until thickened and the beans are soft but still green, 5 to 7 minutes.
GREEN BEANS WITH TOMATOES & WHITE WINE
Steps:
- Blanch green beans by dropping into large pot of boiling water, cook until barely crisp-tender, 2-3 minutes. Pour immediately into colander and rinse thoroughly with cold water. (Blanched green beans can be prepared ahead and kept in the refrigerator for several days, wrapped in a paper towel and stored inside a ziploc bag.) In large pot or Dutch oven, heat butter and olive oil together over medium heat. Saute garlic and shallots until soft; add tomatoes and mix well. Add green beans, cook in tomato mixture for 8-10 minutes or until beans are tender. Stir in wine and basil, season to taste with salt and pepper. Leftovers are excellent!
GREEN BEANS WITH TOMATOES
Another way to make fresh green beans. It's easy and flavorful. Works best with fresh or frozen beans. I don't recommend using canned.

- After beans have been prepared, drop them into a pot of boiling water.
- When water resumed boiling, begin timing and boil uncovered 6-10 minutes or until they reach desired crispness. Remove from heat and drain.
- Heat butter in a medium skillet over low- med. heat, until melted and stir in basil, lemon pepper and garlic.
- Add tomatoes, turning gently, until heated through.
- Simmer tomatoes until they begin to release a little juices and are well coated with butter mixture.
- Remove from heat and stir in beans to coat.
- Salt to taste, if desired, and serve.

Steps:
- Bring a pot of lightly-salted water to a boil; stir in the green beans and return to a boil. Reduce the heat to medium, and cook the green beans until just tender, about 8 minutes. Drain.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat; cook and stir the onion, 1 clove of garlic, and parsley in the hot oil until the onion is translucent, about 5 minutes. Stir in the tomatoes, wine vinegar, and cumin; bring the mixture to a boil, reduce heat to medium-low, and simmer for 30 minutes to thicken the sauce. Transfer the sauce to a bowl.
- In a clean skillet, heat 1 tablespoon of olive oil over medium-low heat; cook and stir 1 clove of chopped garlic in the hot oil until fragrant beginning to brown, 2 to 3 minutes. Return the cooked green beans to the skillet; cook and stir to reheat the beans and coat them with oil. Pour the sauce over the beans and stir to coat. Serve hot.
