5 cups (packed) baby spinach
3 kiwifruits, peeled and chopped
2 large celery ribs, halved lengthwise and thinly sliced diagonally
1 ripe pear, quartered and thinly sliced
¾ cup pecans (or walnuts)
2 oz. soft unripened goat cheese, crumbled
¼ cup extra virgin olive oil
1 tbsp apple cider vinegar
1 tbsp pure honey
1 tsp Dijon mustard
Sea salt, to taste

Steps:

  • In a small bowl (or mason jar), whisk (or seal with lid and shake) together the vinaigrette ingredients until well combined. Taste and adjust the dressing to your preference.
  • In a large bowl, combine the salad ingredients, then drizzle the desired amount of vinaigrette on top. Toss to combine. Best served immediately.

1 small head escarole, torn into bite-sized pieces
1 Belgian endive, leaves separated
1 celery stalk, cut on the diagonal into thin slices
1 small Granny Smith apple, halved cored and thinly sliced
1 tablespoon cider vinegar
1 tablespoon white wine vinegar
1 tablespoon finely diced shallot
1/4 cup olive oil
Salt and freshly ground black pepper
Shaved Parmigiano-Reggiano, for garnish

Steps:

  • Combine greens, celery, and apples in a large bowl. Whisk together both vinegars and the shallot. Slowly whisk in the oil, and season with salt and pepper. Toss the salad ingredients with some of the vinaigrette. Garnish with shaved Parmigiano.

1 batch Cider Maple Vinaigrette (recipe below)
1/2 cup pecans (chopped)
1 medium honeycrisp or cameo apple (cut into thin matchsticks)
Juice of half a lemon (about 2 teaspoons (optional)*)
1 small head green leaf lettuce (or your favorite mild greens, torn into bite-size pieces (about 6 cups))
1 stalk celery (sliced (about 1/2 cup))
2 tablespoons extra virgin olive oil
2 teaspoons apple cider vinegar
1 teaspoon pure maple syrup
1/8 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper

Steps:

  • Add all ingredients for the Cider-Maple Vinaigrette to the bottom of your salad bowl. Whisk until blended. Set aside.
  • Heat oven to 350 degrees Fahrenheit. Spread pecans on a rimmed cookie sheet. Place in preheated oven and cook, stirring once or twice, until fragrant and slightly browned, about 4 minutes. Remove from oven and set aside.
  • If desired, in a small bowl, toss the apple matchsticks with the lemon juice. This will help prevent them from browning - see note below.
  • Add lettuce, apples, and celery to the salad bowl. Toss until all of the greens are lightly coated with the dressing.
  • Top with toasted pecans and serve.

1 garlic clove, pressed or minced
1/4 teaspoon salt
Freshly ground black pepper
5 tablespoons olive oil
6 cups tornup green leaf lettuce, washed and spun dry
1 cup tornup radicchio, washed and spun dry
1/2 large Granny Smith apple, cut into 12 thin slices
2/3 cup thinly sliced fennel
1/2 cup chopped toasted pecans

Steps:

  • Combine the vinegar, garlic, salt, and pepper in a medium size bowl. Slowly whisk in the olive oil. Mix the lettuce and radicchio in a salad bowl. Just before serving pour on the dressing and toss.
  • Divide the salad among 4 salad plates. Place 3 apples slices on one side of each salad, and one quarter of the fennel on the other side. Sprinkle the pecans all over the salads.
  • Serve immediately.
