GREEN TEA-GINGER MARSHMALLOW SHORTBREAD



Green Tea-Ginger Marshmallow Shortbread image

2 cups all-purpose flour
2/3 cup sifted powdered sugar
1 teaspoon kosher salt
2 sticks unsalted butter
3 tablespoons unflavored gelatin (about 3 envelopes)
4 teaspoons matcha (green tea powder)
2 large egg whites
2 cups granulated sugar
1/4 cup honey
1/2 cup finely chopped candied ginger
3 tablespoons superfine sugar

Steps:

  • Heat the oven to 325 degrees. In a food processor fitted with a blade, pulse together flour, sugar and 3/4 teaspoon salt. Add the butter and pulse to fine crumbs. Pulse a few more times until some crumbs start to come together, but do not overprocess. Dough should not be smooth. Press dough into an ungreased 9-by-13-inch baking pan. (It won't look as if you have enough, but keep pressing and it will cover the pan in a thin layer.) Prick dough all over with a fork. Bake until golden brown, 35 to 40 minutes. Transfer to a wire rack and cool completely.
  • In a small bowl, whisk the gelatin and matcha together. Stir in 1 cup cold water. Rest the mixture until it thickens.
  • In the bowl of an electric mixer, whisk the egg whites and the remaining 1/4 teaspoon salt on medium speed, until soft peaks form, about 4 minutes. Stop the mixer.
  • In a saucepan over medium heat, cook the granulated sugar, honey and 1 cup water, stirring until the sugar dissolves and the mixture reaches 240 degrees on a candy thermometer. Start the mixer on medium-high and carefully pour the hot syrup down the side of the mixing bowl into the whites in a slow and steady drizzle. Continue mixing until the mixture has cooled slightly, about 2 minutes. Scrape in the gelatin mixture. Continue mixing on medium-high speed until the mixture begins to thicken and quadruples in volume, about 10 minutes. Scrape the mixture into the pan with the shortbread, smoothing the top with an offset spatula. Rub together the candied ginger and superfine sugar to break up any clumps. Sprinkle over the top of the marshmallows. Let marshmallows set for 4 hours or overnight at room temperature. Cut into squares.

3 green tea bags
1/2 cup sugar
1-inch piece ginger, sliced, plus more for garnish
1 bottle prosecco (optional)

Steps:

  • Put the green tea bags into a heatproof container and pour in 1 quart boiling water. Let steep until it comes to room temperature, about 1 hour. Remove the tea bags and discard.
  • While the tea is steeping, in a saucepan over medium-high heat, bring 1 cup water, the sugar, and ginger to a boil. Stir to dissolve the sugar, remove from the heat, and allow to cool to room temperature, about 1 hour. Store the tea and ginger simple syrup in the refrigerator until ready to serve.
  • To serve, fill glasses with ice and pour in the tea. Sweeten, to taste, with the ginger simple syrup. Garnish with a slice of ginger. For the adults, top each with 1/2 cup prosecco, if desired.

3/4 pound (3 sticks) unsalted butter, at room temperature
1 cup sugar, plus extra for sprinkling
1 teaspoon pure vanilla extract
3 1/2 cups all-purpose flour
1 teaspoon kosher salt
3/4 cup minced crystallized ginger (not in syrup)

Steps:

  • Preheat the oven to 350 degrees F.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the butter and 1 cup of sugar on medium-low speed, just until they are combined. (Don¿t whip!) Add the vanilla and 2 teaspoons water and mix until combined. In a medium bowl, sift together the flour and salt. With the mixer on low, slowly add the flour mixture to the butter mixture and mix until the dough starts to come together. Add the ginger, then dump onto a surface generously dusted with flour and shape into a flat disk. Wrap in plastic and chill for 30 minutes.
  • Roll the dough 3/8 inch thick and cut circles with a 2 3/4-inch plain round cookie cutter. Place the cookies on an ungreased baking sheet and sprinkle with sugar. Bake for 20 to 25 minutes, until the edges start to brown.
  • Cool to room temperature and serve.

100g butter , plus a little extra for greasing
100g dark muscovado sugar
100g black treacle
140g golden syrup
225g plain flour
1 tsp bicarbonate of soda
2 tsp ground ginger
1 tsp ground cinnamon
125ml whole milk
3 medium egg yolks , whisked with a fork (save the whites for the icing)
140g butter , softened
200g icing sugar
4 smalls stem ginger , finely chopped, plus 1 tbsp syrup
½ tsp ground ginger
3 medium egg whites
175g golden caster sugar
piping bag
large round piping nozzle
cook's blowtorch
3 sparklers to decorate (optional)

Steps:

  • Melt the butter, sugar, treacle and syrup in a small saucepan, whisking until smooth. Set aside to cool for 10 mins. Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb loaf tin with baking parchment (our tin was 22 x 7 x 7cm).
  • In a bowl, mix the flour, bicarbonate of soda, ground ginger, cinnamon and 1⁄2 tsp salt. Pour in the warm syrup mixture and the milk, followed by the egg yolks. Whisk until you have a smooth batter. Pour into the tin and bake for 1 hr or until a skewer comes out clean. Cool in the tin for 30 mins, then slice off the top to give you a smooth surface. Flip onto a wire rack and remove the baking parchment. Leave to cool. Can now be covered with cling film and kept for up to 5 days.
  • To make the buttercream, put the ingredients in a large bowl and mash together with a fork or spatula (this prevents the icing sugar from going everywhere). When roughly combined, blend with an electric hand whisk until smooth.
  • Now make the marshmallow icing. Put the egg whites, sugar, 1 tbsp water and a good pinch of salt into a heatproof bowl. Place over a pan of simmering water, making sure the bowl doesn't touch the hot water, and whisk until thick and leaving a prominent trail from the beaters - this will take about 4 mins. Remove the bowl from the heat and continue whisking for another 3 mins until cooled slightly and really stiff. Transfer half to a piping bag fitted with a large round nozzle and set aside.
  • When ready to assemble, slice the cake lengthways into 3 even layers. On a cake stand or plate, reassemble the cake, with the largest slice on the bottom, layering with the buttercream.
  • Using a small offset palette knife or small butter knife, cover the cake with the marshmallow icing left in the bowl. Use the palette knife to create vertical lines along the edges (see tip, left). Now use the piping bag to pipe spikes of meringue over the top of the cake. Use a cook's blowtorch to toast the meringue to a golden brown - a few charred patches will add to the effect. Serve straight away or chill for up to 2 days, removing from the fridge 30 mins before serving. We decorated ours with sparklers.

I love the flavor of green tea powder in baked European-style sweets. Lately, I've been searching for a few recipes and found this one on the internet. Typically, I use a really good quality green tea (from Toraya), but even I find the green tea flavor to be too intense, so I use the lesser amount of green tea and increase the amount of powdered sugar. For less expensive grades of tea, I just use the greater amount of tea. You can purchase green tea powder at the Japanese grocers, but it will come in a variety of grades. The lower grades will use dried spinach to boost the color, but the tea flavor will not be as intense. The cookies are bright green (like the color of spring grass); they smell lovely, but have a bitter edge to them because of the green tea. It's typically an "adult" flavor, but my kids really like them with a bit of vanilla ice cream.

2 cups bleached all purpose flour
1 -2 tablespoon green tea powder (matcha -- See Note 1)
1/2 teaspoon salt
1 cup butter (unsalted at room temperature -- See Note 2)
1/2 cup powdered sugar (more if your tea is very intense)

Steps:

  • Sift the flour, powdered tea and salt into a bowl.
  • In a mixer bowl, beat butter and powdered sugar until fluffy.
  • Add flour mixture to mixer bowl and mix slowly until dough just comes together.
  • Pull dough together carefully in a log, approximately 2 inches in diameter.
  • Wrap dough log and place in freezer for 30 minutes or until dough has firmed to the touch.
  • Slice dough into 1/4 inch rounds and place on a parchment or Silpat lined cookie sheet, approximately 1 inch apart.
  • Bake in a preheated 325 degree F oven for 16 to 18 minutes (or until the cookies are just starting to turn golden around the edges), turning the pan halfway through the baking time.
  • Remove cookies immediately from the cookie sheet and cool on a wire rack.
  • Store in an airtight container or wrap well and freeze.
  • The well-chilled cookie dough can also be rolled out and cut into desired shapes before baking.
  • NOTE 1-- powdered green tea is not merely green tea that has been pulverized in a food processor or food mill, it's a special kind of tea that has been prepared to dissolve nicely.
  • NOTE 2-- don't use the microwave to soften the butter, room temperature butter is the correct consistency for this recipe.

  • Preheat oven to 325 degrees F (165 degrees C). Place a sheet of parchment paper or plastic wrap on a work surface and dust with flour. Line a baking sheet with parchment paper.
  • Beat butter in a bowl using an electric mixer until fluffy, about 3 minutes. Add 3/4 cup sugar and continue beating until mixture is lighter in color, about 2 minutes more.

  • Sift flour, tea powder, and salt into a small bowl; set aside. Place butter in the bowl of an electric mixer fitted with the paddle attachment. Cream on medium speed until fluffy, 3 to 5 minutes. Add sugar; continue to beat until very light in color and fluffy, about 2 minutes more. Add flour mixture; combine on low, scraping sides of bowl with a spatula if necessary, until flour is just incorporated and dough sticks together when squeezed with fingers.
  • Place a piece of parchment on a clean surface; dust with flour. Roll dough to 1/4-inch thickness; chill in refrigerator or freezer until firm, about 30 minutes.
  • Preheat oven to 325 degrees. Line 2 baking sheets with parchment. Cut chilled dough with 2-inch leaf cutters. Using a wide spatula, transfer to baking sheets. Chill until firm. Gather scraps together, re-roll, chill, and cut shapes. Bake until firm and barely starting to color, 15 to 20 minutes, rotating halfway through. 1 cup confectioners' sugar
1 teaspoon salt
2 tablespoons green tea powder (matcha)
4 cups all-purpose flour

Steps:

  • Cream butter in the bowl of an electric standing mixer using the paddle attachment; add confectioner's sugar and salt.
  • Sift together the tea and flour and add to the butter mixture; mix until just incorporated.
  • Roll the dough out to about 1/3-inch thick between 2 pieces of plastic wrap; transfer to a baking sheet and chill until firm, at least 30 minutes.
  • Heat oven to 300 degrees.
  • Remove top piece of plastic and cut into desired shapes; re-roll excess dough as necessary; transfer to a parchment-lined baking sheet.
  • Bake for 16 minutes; rotate pan and bake for another 16 minutes, or until they feel firm when scratched with a fingernail; take care not to let the edges brown; matcha shortbread cookies should maintain their green color.
