1 (1 quart) sterilized canning jar with lid and ring
1 cup distilled white vinegar
1 cup water
3 tablespoons kosher salt
1 tablespoon sriracha sauce
1 tablespoon pickling spice

Steps:

  • Pack tomatoes into the 1-quart jar.
  • Combine vinegar, water, salt, sriracha sauce, and pickling spice in a glass measuring cup. Heat in the microwave until boiling and salt dissolves, 1 1/2 to 3 minutes. Pour over tomatoes in the jar; seal.
  • Refrigerate until pickled, 1 to 2 weeks.

I've given no quantity for the green tomatoes - since this recipe is for refrigeration, it's very flexible. It doesn't take as many tomatoes as you might think to fill a pint or quart jar, so you're likely to have leftovers. And even if you run short and your tomatoes don't fill the jar, it's okay. I prefer to use pint jars (or even half pint jars), and use more jars in the process, so that I'm opening just one small jar at a time, leaving the rest sealed and hopefully lasting longer.

Green tomatoes
1 fennel bulb, (roughly chopped)
3 garlic cloves, (peeled and roughly chopped)
1 teaspoon mustard seed
1 teaspoon dill seed
1 teaspoon fennel seed
1/2 teaspoon dried marjoram
1/2 teaspoon dried tarragon
1/4 teaspoon celery seed
black peppercorns
1 1/4 cup water
1 cup distilled white vinegar
3 tablespoons kosher salt
3 tablespoon sugar or honey
2 pint canning jars or approximate equivalent

Steps:

  • For extra safety, briefly boil the canning jars and their lids and rings, and set upside down on a clean towel to dry.
  • Prepare the tomatoes and seasonings
  • Remove any green stems from the tomatoes, then clean and dry them thoroughly.
  • For cherry tomatoes, slice them into halves or quarters. For "hamburger pickle slices" using small standard tomatoes, slice off the stem end, them slice them into 1/8" thick slices horizontally (i.e., between the stem and blossom ends). For medium standard tomatoes, slice off the stem end, then slice the tomato in half vertically. Slice each half horizontally in 1/8" thick slices. (Alternatively, you can slice standard tomatoes into small wedges.)
  • Divide the fennel slices and garlic among the jars more or less evenly.
  • Optional: crush the mustard, dill, and fennel seeds lightly in a mortar and pestle.
  • Divide the herbs and spices among jars, pouring them over the fennel and garlic. Add 6 to 8 black peppercorns to each jar.
  • Pack the sliced tomatoes in to the jar, leaving about 3/4" head room.

4 cups green tomatoes, cut into wedges
3 garlic cloves
1 cup white vinegar
1 cup water
1 teaspoon dried dill
1/2 tablespoon black peppercorns
1/2 teaspoon turmeric
1 tablespoon sugar
2 tablespoons kosher salt

Steps:

  • Wash a wide-mouth 1-quart mason jar and and its lid in hot soapy water, then rinse and let air dry.
  • Slice the tomatoes into wedges and pack them tightly into the jar. (If you have very large tomatoes, you may want to slice them into smaller wedges.)
  • Peel the garlic. In a small saucepan, combine the garlic, vinegar, water, dill, peppercorns, turmeric, sugar, and kosher salt. Bring to a low boil, stirring occasionally to dissolve the sugar and salt.
  • Once dissolved, pour the brine mixture into the jar, allowing the garlic to settle on top of the vegetables. Tap the jar on the counter to release any air bubbles. Discard any remaining brine, or top off the jar with extra water if any tomatoes are exposed at the top. Screw on the lid tightly and allow to cool to room temperature, then store in the refrigerator for at least 24 hours before eating. If desired, discard the garlic after 24 hours. Keeps up to 1 month refrigerated.

These green cherry tomatoes are pickled with vinegar, garlic, dill and red pepper for a tasty bite size refrigerator pickle.

1 pint green tomatoes
1/3 clove garlic
2 sprigs dill
1/2 cup white vinegar
1/2 cup water
1/2 Tablespoon kosher salt
1/2 Tablespoon sugar
1 teaspoon peppercorns
1 pinch crushed red pepper, optional

Steps:

  • Wash the tomatoes and use a toothpick to poke a small whole in the top of each tomato. Then put them in a pint jar.
  • Slice the garlic thinly and add the garlic and a few sprigs of dill to the jar.
  • Combine the vinegar, water, salt, sugar, peppercorns and crushed red pepper in a small saucepan.
  • Bring to a boil and stir until the sugar and salt have dissolved. Then pour into the pint jar, covering the green tomatoes.
  • Cover tightly with a lid and let sit on the counter until cooled to room temperature. Then refrigerate.
  • Pickles can be eaten as soon as the next day and will be good for about 3 weeks.

5 pounds green tomatoes
3 ½ cups vinegar
3 ½ cups water
¼ cup canning salt
6 garlic cloves
Dill seeds or dill heads (2 tsp. seeds per jar or 1 head per jar)
Waterbath Canner
Pint canning jars, seals, and rings
Large pot
Canning funnel, lid lifter, and jar lifter
Ladle and bubble tool
Crinkle cutter ((optional))

Steps:

  • Start by preparing jars and getting water in the canner heating.You want the canner hot, but not boiling, when the jars are ready to be processed. See full water bath canning instructions here.
  • Wash tomatoes and cut into desired sizes.
  • Combine vinegar, water, and salt in a large pot. Bring to a boil.
  • Place garlic clove and dill into each jar,
  • Pack tomato pieces into pint jars.
  • Cover with vinegar solution, leaving 1/4" headspace.
  • Remove air bubbles, wipe the rim clean, and place on seal and ring. Place jar in the warm canner. Proceed to fill all jars. Process according to the chart below.

6 thin slices white onion

Steps:

  • Combine vinegar, 3/4 cup water, sugar, spices, and 2 tablespoons salt in a saucepan. Bring to a boil, stirring until sugar is dissolved. Fill clean containers tightly with tomatoes and onion. We spend an entire morning making our pickles and work as a team. They are ready to eat after about three days in the fridge. Sometimes, we don't wait that long!...

5 lb kirby pickling cucumbers
5 lb fresh picked green tomatoes
24 sprig(s) fresh dill
8 clove peeled sliced garlic
1 large white halved and sliced onion
6 qt fresh cold water
2 qt white vinegar
4 Tbsp granulated sugar
black peppercorns, whole
coriander seeds whole
12 quart sized mason jars sterilized with lids and screw top rings.
1/2 c pickling salt

Steps:

  • 1. In a clean sink or basin, wash the vegetables and drain on paper towels.
  • 2. In a large 14 quart pot on stove, combine the water, vinegar, salt and sugar. Bring to a boil stirring to dissolve sugar and salt.
  • 3. Slice your cleaned cucumbers in half and the green tomatoes in quarters,
  • 4. In each clean jar, place 2 sprigs of fresh dill, 3-4 slices of sliced garlic, 6 slices of onion and 1/4 tsp. of coriander and peppercorns. Fill each jar with enough cucumbers (standing upright) or enough green tomatoes to fill the jar up to the neck leaving 1/2 inch space at the top.
  • 5. When the brine in the pot is boiling, carefully ladle hot brine over the vegetables in jars to cover them. Leave 1/4 inch space at the top of jars. Place jar lid and screw ring over jar and turn to seal tightly.
  • 6. If canning, follow the manufacturers directions for safe canning and sealing of jars in a large canning pot with enough water over jar to process and seal.
  • 7. I do not process mine to seal but store them immediately in the refrigerator for cold process. They are not shelf stable using this method but do not last long enough, anyway! After three days, your pickles and tomatoes are ready to eat. I can keep them safely for two months in the fridge.
