Grilled Beef in Grape Leaves with Sweet, Sour, and Spicy Dipping Sauce image

32 grape leaves in brine
1 pound ground sirloin beef
1 large shallot, chopped
1 tablespoon sugar
1 lemongrass stalks, trimmed, peeled, and finely grated (white and light green parts)
1 large garlic clove, finely grated
1 tablespoon fish sauce
Vegetable oil, for brushing
Sweet, Sour, and Spicy Dipping Sauce, recipe follows
1/2 cup sugar
2/3 cup fresh lemon juice (substitution: lime juice)
2/3 cup fish sauce
2 large garlic cloves, thinly sliced or minced
2 red Thai chiles, halved lengthwise, seeded (or not) and thinly sliced or minced

Steps:

  • Soak the grape leaves in several changes of water to get rid of the brine flavor. Separate the leaves and blot dry. Trim any stems and set aside.
  • In a medium bowl, combine the beef, shallot, sugar, lemongrass, garlic, and fish sauce. Mix until well combined. Cover and refrigerate for 1 hour.
  • Divide the beef mixture into 32 equal portions (about 1 tablespoon per portion). Place a grape leaf flat (widest side closest to you) on a clean kitchen towel. Shape 1 meat mixture into a 1 1/2-inch-long sausage and place it horizontally across the wide end of the leaf. Fold the wide end over the filling once. Fold the sides in and roll up as you would a spring roll, enclosing the meat. The roll should be compact and fairly tight. Repeat to make 32 rolls.
  • Thread 4 grape leaf rolls on 2 parallel bamboo skewers, leaving space in between the rolls. Repeat with remaining skewers and rolls. Brush each roll with vegetable oil. Heat a grill pan over high heat. Grill the rolls, flipping them once the oil becomes shiny, until crisp and cooked through, 3 to 4 minutes. Serve with Sweet, Sour, and Spicy Dipping Sauce.
  • In a medium bowl, whisk together the sugar, lemon juice, and fish sauce, until the sugar is completely dissolved. Add the garlic and chiles. Let stand for 20 minutes before serving. Store in the refrigerator for up to 1 week.

Vietnamese Beef Grilled in Grape Leaves: Bo la Lot image

Because la lot leaves are very hard to find in the West, this recipe is usually made using grape leaves, which make an excellent substitute. Grape leaves are widely available in supermarkets and middle-eastern specialty shops. This dish is often part of the "Beef Seven Ways" ritual in Vietnamese cooking.

12 ounces ground beef
1 shallot, peeled and thinly sliced
1 large clove garlic, peeled and minced
2 tablespoons minced lemongrass from the white bulb
2 teaspoons sugar
1 tablespoon fish sauce
24 la lot leaves or small grape leaves
Bamboo skewers, soaked in water for 20 minutes and drained
Nuoc Cham, dipping sauce
5 tablespoons sugar
3 tablespoons water
1/3 cup fish sauce
1/2 cup lime or lemon juice (about 3 limes or 2 lemons)
1 large clove garlic, crushed, peeled and sliced or minced
1 or more bird's eye or Thai chiles, seeded and sliced or minced
1 shallot, peeled, thinly sliced, rinsed, and drained (optional)

Steps:

  • Mix together the beef, shallot, garlic, lemongrass, sugar and fish sauce in a bowl.
  • If using grape leaves, rinse, drain and pat them dry. Put about 2 teaspoons of filling in the center, slightly closer to the wider end. Fold the wide end over the filling, fold in the sides, and then roll up carefully, making sure the filling is completely and tightly enclosed. Repeat the process with the remaining leaves and beef mixture.
  • Depending on length of skewers, slide 3 to 5 beef rolls crosswise onto each skewer. Grill over a barbecue (make sure flames have subsided and coals are red, with white ashes) or on a well-oiled grill pan over medium-high heat, about 2 minutes per side. Serve with Nuoc Cham sauce for dipping.
  • Whisk together the sugar, water, fish sauce, and lime or lemon juice in a bowl, until the sugar is completely dissolved. Add the garlic, chile, and shallot if using, and let stand for 30 minutes before serving.

1 lb ground beef
1/4 cup white onion, finely diced
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 tablespoon peanuts, ground
1/2 teaspoon fish sauce
1 teaspoon Thai basil, finely chopped
3 tablespoons honey
1/2 tablespoon sugar
1/2 tablespoon salt
4 -6 grape leaves
3 butter lettuce leaves, trimmed, will form lettuce cups
3 mint leaves
3 kaffir lime leaves (ideally laksa leaves are best)
3 Thai basil
3 leaves cilantro
6 carrots (cut into sticks)
6 jicama (cut into sticks)

Steps:

  • MIx all of the ingredients for the grape leaf beef (except the grape leaves) thoroughly. Roll into 1/2 ounce logs and wrap each log with a grape leaf.
  • Skewer the grape leaf beef and grill on both sides until done, about 6 to 8 minutes. Set aside.
  • To serve, place one leaf of each herb in each of the lettuce cups. Remove the beef from the skewers and stack them on top of each of the lettuce cups 2 by 2 by 2.
  • Prepare Lemon Grass Sauce - reference recipe # 316596 and pour into a ramekin and place on the plate next to the beef. Stack the carrots and jicama on the plate.
  • Wine recommendation: Pair with a spicy red, e.g. South African Pinotage from Hamilton Russell or Diemersdal.

1 cup vegetable oil
1 large white onion, thinly sliced
1 teaspoon soy sauce
6 bay leaves
10 whole black peppercorns
4 boneless quails, split in half lengthwise
8 large untorn grape leaves, blotted dry
1 large red bell pepper, cut into 1-inch squares
4 ounces Great Northern beans, soaked overnight
1 red onion, thinly sliced
1 medium-sized tomato, coarsely chopped
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1/2 teaspoon sumac, optional (see note)
Salt to taste
2 tablespoons torn mint leaves

Steps:

  • Combine the oil, onion, soy sauce, bay leaves and peppercorns together in a nonreactive dish just large enough to hold the quails in one layer. Add the quails, turning to coat them with the marinade. Cover and refrigerate them for eight hours, or overnight. Baste once during this time.
  • Bring a large pot of water to a boil. Add the beans, cook them until just tender, about 35 to 45 minutes, then drain. While the beans are still warm, add the red onion, tomato, olive oil, lemon juice, sumac if used, salt and mint leaves.
  • While the beans are cooking, eat a charcoal grill or a broiler. Remove the quails from the marinade. Spread the grape leaves out flat. Place a half quail on the lower edge of each leaf. Roll up the bird in the leaf, turning in the sides as you roll. Run a skewer through the roll crosswise and add a piece of red pepper. Repeat with three more rolls and pieces of pepper per skewer.
  • Once the salad has been made and the charcoal is hot, place the skewers on the grill and cook the quails for five minutes, then turn them over and cook the second side for five minutes more. Serve the quail rolls on top of the bean salad.

2 teaspoons nuoc nam (spicy fish sauce)
2 teaspoons fresh minced gingerroot
1/2 cup chopped fresh cilantro
1/2 teaspoon sugar
1 dash black pepper
1/4 cup finely chopped green onion
25 canned grape leaves
4 tablespoons fish sauce
1/2 cup water
2 tablespoons vinegar
2 teaspoons sugar
3/4 teaspoon crushed red pepper flakes
2 cloves garlic, minced
3 tablespoons gingerroot, peeled and shredded
2 tablespoons carrots, shredded

Steps:

  • Rinse grape leaves in hot water; drain.
  • Mix beef with garlic, 2 tsp nuoc mam, ginger root, cilantro, 1/2 tsp sugar, dash black pepper, and green onion.
  • Place generous tablespoonful on grape leaf, and roll envelope-style.
  • For sauce, mix together 4 tbsp fish sauce, 1/2 cup water, 2 tbsp vinegar, 2 tsp sugar, the red pepper, and the 2 cloves of minced garlic.
  • Stir in 3 tbsp shredded ginger and 2 tbsp shredded carrots to the sauce.
  • Place on skewers and grill (If using wooden skewers, soak in water for 20-30 minutes before using), or broil, 6" from heat for 10-12 minutes.
  • Serve rolls with dipping sauce.

16 bottled grape leaves packed in brine
8 tomatoes, sun-dried, plain or packed in oil
8 ounces goat cheese, cut into 8 slices
3 tablespoons pine nuts, toasted (optional)
1 teaspoon thyme, fresh leaves or 1/2 teaspoon dried
black pepper, freshly ground, to taste
1 tablespoon olive oil extra-virgin
16 slices French bread, small and thin, or pumpernickel

Steps:

  • 1. Soak the grape leaves in cold water to cover in a large bowl for 15 minutes, changing the water 2 or 3 times. If using dry sun-dried tomatoes, soak them in hot water to cover for 15 minutes. If using oil-packed dried tomatoes, there is no need to soak them.2. Drain the grape leaves and blot dry with paper towels. Place 8 leaves on your work surface. Drain the tomatoes, blot dry, and cut into thin slivers. Place a piece of cheese in the center of each grape leaf. Sprinkle the slivered tomatoes, pine nuts (if using), thyme, and pepper over the cheese and drizzle with oil. Bring the edges of the grape leaf up around the cheese. Place a second grape leaf on top and bring the edges down so the cheese is entirely covered. Refrigerate the bundles for at least 15 minutes or up to 8 hours (loosely cover with plastic wrap for longer refrigeration).3. Preheat the grill to high.4. When ready to cook, arrange the cheese bundles on the hot grate and grill until the grape leaves brown and the cheese begins to melt, 2 minutes per side, turning once with a spatula. 5. Place the bread slices on the grate and grill until golden brown, 1 to 2 minutes per side.
