For an ultra-flavorful main, make this Grilled Marinated London Broil from Food Network. The meat's marinated for hours in balsamic vinegar, honey and garlic.

5 large garlic cloves
1 teaspoon salt
1/4 cup dry red wine
1/4 cup balsamic vinegar
1 tablespoon soy sauce
1 teaspoon honey
1 1/2 pounds top-round London broil

Steps:

  • Mince the garlic to a paste with salt and in a blender blend with the salt, red wine, balsamic vinegar, soy sauce and honey.
  • In a heavy-duty sealable plastic bag, combine London broil with marinade. Seal bag, pressing out excess air, and put in a shallow baking dish. Marinate steak, chilled, turning occasionally, at least 4 hours and up to 24.
  • Bring steak to room temperature before grilling. Remove steak from marinade, letting excess drip off, and grill on an oiled rack set 5 to 6 inches over glowing coals, 7 to 9 minutes on each side for medium-rare. Transfer steak to a cutting board and let stand 10 minutes.
  • Holding a knife at a 45-degree angle, cut steak across grain into thin slices and serve with tomatoes.

This is a recipe provided by a chef from a company I used to work for. While it requires a 2 day marinade, it is well worth the wait. The sweetness of the pineapple juice along with the saltiness of the soy sauce makes for a fantastic flavor.

Steps:

  • Marinate for two days. Broil until internal temperature reaches 120°F.
  • This is enough marinade for a 3 lb flank steak.

4 cloves garlic (minced)
3 tablespoons balsamic vinegar
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
1 tablespoon dried Italian seasonings
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon crushed red hot red pepper flakes
2 pounds flank or top round steaks (about 4 pieces)
Cooking spray or oil

Steps:

  • Stir together all ingredients except for steak in a large Ziplock bag. Note: you can skip steps 1 and 2, and use steak seasoning if desired.
  • Add steaks and seal, removing air. Marinate in the fridge for at least 1 hour or overnight.
  • Remove steak from the fridge and bring it to room temperature, about 30-45 minutes, before cooking.
  • Preheat a gas grill to medium-high heat, about 500° F. Place steaks on lightly greased grill at a 45° to the grates, close lid, and grill 2-3 minutes until bottoms are seared. Rotate 90° and continue to grill 2-3 minutes to create cross-hatch grill marks.
  • Rotate and repeat for the other side, until internal temp reaches the desired doneness. See recipe notes below for safe cooking temps.
  • Remove from grill and let rest 5-10 minutes. Cut steaks across the grain and serve.

I've tried other recipes for london broil but I keep comming back to this one. I should point out that you need to marinade this at least 12 hours before cooking to truly appreciate the terriyaki flavor throughout the meat. Add the ginger to make it taste a little more Oriental flavor.

1 (1 1/2 lb) london broil beef
1/2 cup soy sauce
1 tablespoon brown sugar
1 1/2 teaspoons minced garlic cloves
2 tablespoons lemon juice
1 1/2 tablespoons olive oil
1 cup beef bouillon
1 tablespoon fresh ginger, grated (optional)

Steps:

  • Make slits about 1/8 inches deep around the edges of beef.
  • Combine marinade ingredients in a big enough container to fit the meat without overflowing. Put it in fridge and marinade for at least 12 hours or longer.
  • Preheat grill or broiler to 350.
  • Remove beef and save marinade. Grill or broil beef until it suits your liking (rare, medium rare, well done).
  • Slice beef diagonally when done.
  • Take marinade, strain it in a pot and boil. Add 1 tlbs flour or corn starch to make gravy if you want.
