ORANGE CHICKEN MARINADE



Orange Chicken Marinade image

An easy 3-ingredient Orange Chicken Marinade that's perfect for grilled kabobs with vegetables and makes the chicken flavorful and tender!

1/2 cup 100% orange juice (about 1 large orange if freshly squeezed)
2 tablespoons low-sodium soy sauce
1 tablespoon honey
1 1/4 pounds boneless skinless chicken breasts (cut into bite-size pieces)
2 large navel oranges ((or 3 medium oranges) divided)
1 large red onion
1 large bell pepper
Kosher salt and freshly ground black pepper (to taste)
Chopped fresh cilantro (optional for serving)

Steps:

  • In a medium mixing bowl or large measuring cup, whisk together the orange juice, soy sauce, and honey.
  • Place the chicken pieces in a ziptop bag, pour in the marinade, then tightly seal the bag, removing as much air as possible. Turn and lightly squish the bag to coat the chicken. Set the bag in a shallow baking dish (to protect from leaks), then let marinate at room temperature for at least 30 minutes or place in the refrigerator to refrigerate longer or overnight. If using wooden skewers, soak the skewers in water for at least 1 hour prior to grilling.
  • Preheat an outdoor grill to medium high, about 425 degrees F, or an indoor grill pan to medium high. Slice one of the oranges into thin, 1/4-inch-thick rounds, then cut the rounds in half. Cut the onion and bell pepper into 3/4-inch-thick chunks. Slice the second orange in half and set the two halves aside.
  • Thread the chicken pieces, onion, bell pepper, and orange slices onto skewers, alternating each ingredient. When adding the orange slices, fold each slice in half and thread the skewer through both layers.
  • Generously oil the grill, then place the skewers on the grill. Cover and let cook until the chicken is fully cooked and no longer pink in the center, about 6 to 8 minutes, turning the chicken once or twice throughout so that it cooks evenly. Remove to a plate, season with kosher salt and black pepper, and cover to keep warm.
  • Place the cut sides of the remaining orange halves on the grates and cook for 2 to 4 minutes, until nicely charred. Do not move them during the first 2 minutes to ensure the flesh does not tear. Let cool slightly, then squeeze over the chicken skewers. Sprinkle the skewers with fresh cilantro and serve warm.

2 lbs boneless (skinless, chicken thigh meat)
Orange Sauce:
Zest from 1 large naval orange
Juice from 3 large naval oranges
6 garlic cloves
1 tsp fresh grated ginger
1/2 tsp chili powder (more if you want spicier)
1/4 cup soy sauce
2 Tbsp sherry vinegar (or wine vinegar)
5 Tbsp brown sugar (packed)
2 Tbsp corn starch

Steps:

  • Combine all ingredients for the sauce in a mixing bowl. Mix well. Take out about 3/4 cup of the mixed sauce and set aside for later.
  • Chicken thighs in the package usually look like the are rolled, lay out the rolled piece of thigh meat on the cutting board and cut it in three equal pieces. (It's easier to cut and skewer the thigh meat when they are rolled.) You can cut off some of the fat first if you wish.
  • Add all cut thigh meat to the prepared sauce in the bowl. Mix well and let it marinade while you prepare the coals (15-20 minutes).
  • Roll up each long thigh meat strip and skewer it onto skewers. (If using wooden skewers, remember to soak them in water for 30 minutes first.) You should be able to fit 5-6 pieces of meat per skewer.
  • Cook chicken kebabs on the grill, flipping them half way through, until the meat is done.
  • For the coating sauce: use the sauce that you've set aside. Mix it well and bring to simmer either on the grill or on the stove. If using the grill to heat the sauce, make sure to use a small, thin, metal pot. Cook the sauce, stirring often until it is thickened. Take off heat once thickened.
  • Generously brush cooked chicken kebabs with cooked orange sauce.

1 tablespoon Worcestershire sauce
1/2 cup water
1/2 cup soy sauce
1 tablespoon canola oil

1 medium green pepper, cut into chunks

Steps:

  • Remove from the fridge, and start assembling your kabobs. Preheat your Traeger to 450.
  • Grill the kabobs for 6 minutes, flip, and grill another 6 minutes. Remove from grill and set aside.
  • Place the naan bread on the grill for 1-2 minutes just to heat them up a bit.
  • Serve with fresh caesar dressing.

1 lb chicken thigh, boneless, skinless
1 lb shrimp, shelled, raw, medium
1 onion, large, cut in 1 inch (2.5 cm) chunks
1 red pepper sweet, large
1 yellow pepper, sweet, large
3 green onions
2 tbsp shallots, minced
1 garlic, clove, minced
1 tbsp ginger, fresh, sliced
1 tbsp chili pepper, red, hot, minced (optional)
¼ cup apple cider vinegar
1 tbsp molasses
1 tbsp sugar, brown, packed
2 tsp light tamari (or soy sauce)
2 tbsp orange juice
1 tsp allspice, ground
½ tsp cinnamon, ground
¼ tsp nutmeg, ground
⅛ tsp salt
½ tsp black pepper, freshly ground

Steps:

  • Cut chicken into 1 inch (2.5 cm) cubes and place in large resealable plastic bag. Place shrimp in another bag. Set aside.
  • Cut onion and sweet peppers into 1 inch (2.5 cm) chunks and add to a third large resealable plastic bag. Set aside.
  • Make the marinade by adding the green onion, shallot, garlic, ginger, minced hot pepper (optional), cider vinegar, molasses, brown sugar, light tamari (or soy sauce), orange juice, allspice, cinnamon, nutmeg, salt and freshly ground black pepper to the bowl of a blender or food processor. Puree until smooth. Let the food processor do the work - ingredients don't have to be chopped. Divide marinade evenly between the three bags. Seal each bag and marinate in refrigerator for 1 hour and preferably overnight.
  • Soak 16-20 wooden skewers in warm water for 20-30 minutes. Thread a piece of chicken onto a skewer followed by a piece of onion, shrimp and sweet pepper alternating in that order. Repeat. Place kabobs on platter as you make them. Pour any leftover marinade over kabobs.
  • Heat grill to medium-high. Grill kabobs over medium-high heat until lightly browned, cooked through and internal temperature reaches 165°F (74°C) - approximately 7-10 minutes per side. Baste along the way with any leftover marinade. Turn half-way through cooking.

¼ cup low sodium soy sauce
3 tablespoons lemon juice
2 tablespoons brown sugar (or honey)

1 ¼ pounds boneless skinless chicken breasts (cut into 1-inch pieces)

Steps:

  • If using wooden skewers, soak them in a dish of warm water for at least 20 minutes.
  • Combine the chicken marinade ingredients in a zip-top bag or dish: olive oil, soy sauce, lemon juice, brown sugar, Worcestershire sauce, garlic, Italian seasoning and black pepper. Squish to mix in the bag or whisk if using a dish.
  • Add the chicken pieces to the marinade. Make sure that all of the chicken is coated with the marinade. Refrigerate for at least 30 minutes and up to 4 hours.
  • Place the zucchini rounds and chopped bell peppers in a baking dish or bowl. Drizzle with the 1 ½ tablespoons of olive oil and sprinkle with salt and pepper; toss gently to coat. Add the onion to the bowl last and mix in very gently so that the onion layers stay together as best as possible.
  • Put the chicken and vegetables on the skewers, dividing evenly between the 8 skewers and arranging the vegetable pieces in between the chicken pieces. Aim to put about 3 chicken pieces and 2-3 pieces of each vegetable per skewer. Discard all of the used marinade that held the chicken.
  • Grill over medium heat for 12-18 minutes, turning every few minutes to cook all sides evenly. Kabobs are done when chicken is cooked through to an internal temperature of 165° F.

Steps:

  • In a food processor, combine the orange juice, olive oil, soy sauce, thyme, allspice, cinnamon, nutmeg, garlic, green onions, ginger, lime juice, onions, peppers and some salt and pepper; puree until smooth. Add all but 1/4 cup of the mixture in a 1-gallon plastic resealable bag. Add the chicken to the bag and marinate in the refrigerator for 1 to 2 hours. Heat the grill to medium-high. Skewer the chicken pieces and grill on one side for about 5 minutes. Flip and grill the other side until cooked through and grill marks appear. Top with the Mango Salsa and serve with the 1/4 cup reserved (unused) marinade as a dipping sauce.
  • In a medium bowl, combine the lime juice, sugar, ginger and hot sauce. Mix thoroughly and add the green onions, cucumber and mango. Toss and refrigerate for 1 hour.
