Steps:
- Preheat oven to 400°F.
- Prepare pasta dinner as directed on package, with butter or margarine and milk.
- Place in a 2 quart casserole.
- Heat olive oil in large frypan, add chopped onion and sliced mushrooms, sauté till onions are just turning brown, 5 minutes.
- Add ground chicken, pepper and scramble fry with onions and mushrooms turning often until no longer pink, 5 to 8 minutes.
- Add stewed tomatoes, simmer for 3 or 4 minutes.
- Add chicken/tomato mixture to casserole.
- Stir to mix with pasta.
- Add chopped basil, turn several times to distribute through casserole.
- Sprinkle Parmesan cheese over top of casserole and bread crumbs if using.
- Bake uncovered for 20 to 25 minutes, until bubbling around edges and Parmesan is melted and crisp.
- VARIATION:.
- Use chopped veggies, any that you have and a half pound of very lean hamburger.

- Preheat the oven to 350 degrees F (175 degrees C).
- Arrange chicken in the bottom of a 2-quart casserole dish.
- Combine cream of chicken soup, sour cream, and milk in a small bowl; mix well. Pour over the chicken.
- Toss stuffing mix with melted butter in a bowl, adding hot water to moisten. Sprinkle stuffing over chicken in the casserole dish.
- Bake in the preheated oven until bubbly, about 30 minutes.

- Boil noodles,drain.
- Combine in separate bowl mix cream cheese,sour cream and tomato sauce. Brown meat and onion. Layer in large casserole dish starting with sauce,then noodles. Then meat,ending with cheese.

- Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender., Meanwhile, in a Dutch oven, cook chicken, carrots and onions over medium heat until meat is no longer pink; drain. Stir in flour, tomato paste, salt, pepper and thyme. Add chicken broth; bring to a boil. Reduce heat; simmer, uncovered, 6-8 minutes or until thickened., Preheat oven to 400°. Divide mixture between two greased 13x9-in. baking dishes. Drain potatoes; place in a large bowl. Add milk and butter; mash until smooth. Stir in cheese. Spread over chicken mixture., Bake, uncovered, 15-20 minutes or until bubbly. Freeze option: Cover and freeze unbaked casseroles up to 3 months. To use, thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 400°. Bake, uncovered, 50-55 minutes or until bubbly.

CREAMY CHICKEN AND BROCCOLI CASSEROLE
This casserole is a hit with my whole family. Even my children enjoy eating their broccoli with this homemade meal.

Steps:
- Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook until al dente, 7 to 10 minutes. Drain, cover, and set aside until needed.
- Melt butter in a saucepan over medium-high heat, and stir in 1 tablespoon olive oil. Add 1 cup broccoli; toss and cook just until tender, about 5 minutes. Sprinkle broccoli with flour, and cook 1 minute. Stir in the chicken broth, and bring to a boil. Pour in the milk, and stir to blend. Season with salt, pepper, and chipotle pepper powder, if desired. Reduce heat to medium, and simmer mixture until sauce thickens, 8 to 10 minutes. Mix in 1 cup Cheddar cheese and stir until melted. Remove from heat.
- Heat the remaining 2 tablespoons olive oil in another large skillet over medium-high heat. Stir in the onion, ground chicken, and remaining 1 cup of broccoli. Cook and stir until chicken is evenly browned and no longer pink, about 10 minutes. Season to taste with salt and pepper. Reduce heat, and cook until liquid is reduced, about 5 minutes.
- Preheat oven broiler to High. Lightly grease 9x13 inch baking dish.
- Toss the pasta with the broccoli sauce until evenly blended. Stir in the sour cream, if desired. Stir the broccoli sauce mixture into the chicken mixture. Spoon into the prepared baking dish. Top with remaining 1 cup Cheddar cheese.
- Cook under preheated broiler until cheese melts and browns around the edges, 3 to 5 minutes.
