2 (20 ounce) packages frozen corn kernels
8 ounces whipping cream
8 ounces whole milk
1 teaspoon salt
6 teaspoons sugar
1 pinch white pepper or 1 pinch cayenne pepper
2 tablespoons melted butter
2 tablespoons flour

Steps:

  • Combine all ingredients except last two in a pot and bring to a boil.
  • Simmer 5 minutes.
  • Blend butter with flour.
  • Add to the corn.
  • Mix well and remove from heat.
  • Variation:.
  • Put finished corn in heat proof casserole, sprinkle with parmesan cheese and place under a broiler until evenly brown.

This corn is so rich, almost like an alfredo. It's too high in fat for me to make often but is a really nice side dish for the holidays or other special dinner. I got the recipe from my stepmother who is an amazing cook. Based on the reviews here, I'd suggest you start with only one teaspoon of salt and add more if needed.

1 (16 ounce) bag frozen corn
1 1/2 cups whipping cream
2 teaspoons salt
1 teaspoon sugar
3 tablespoons flour
3 tablespoons melted butter
3 tablespoons grated parmesan cheese
1/2 cup grated parmesan cheese
2 tablespoons butter

Steps:

  • Butter baking dish and sprinkle with 3 T Parmesan, tilting pan to distribute cheese.
  • Bring the whipping cream to a boil, reduce heat and add corn.
  • Simmer 5 minutes.
  • Stir in salt and sugar.
  • Make paste with 3 T butter and 3 T flour and stir into corn.
  • Cook until thickened.
  • Pour into baking dish, sprinkle with cheese and dot with butter.
  • Refrigerate for up to 4 days but do not freeze.
  • Bake at 350 for 30 minutes or until bubbling and golden brown.

1 (24-ounce) bag frozen shoepeg corn (I buy the Pictsweet brand)
8 ounces heavy cream
8 ounces milk
1 teaspoon salt
6 teaspoon sugar
2 tablespoons butter, melted
2 tablespoons flour (or cornstarch for GF)
Pinch white pepper (black pepper is just fine too)
1/2 cup Parmesan cheese, shredded

Steps:

  • Put corn, cream, sugar and milk in saucepan and bring to a boil. At first it will be a solid frozen mass, just give it time and it will warm up and liquify. Melt butter in microwave and add flour to make a roux (thickener). Will be the consistency of paste. Mix this into the corn. Continue to cook until thickened. Add pepper. Pour into casserole dish (9 x 13-inch if you doubled it) and top with Parmesan cheese. Put into 350°F oven for 20 minutes or until cheese is good and melted!

Fresh summer corn kernels, simmered with feta cheese and a little cream, make a buttery bed for shrimp sautéed in a tomato and bell pepper sauce. Think of it as a lighter, sweeter and wholly inauthentic take on shrimp and grits. If you crave this out of corn season, feel free to use frozen kernels instead.

1 1/2 pounds extra-large peeled shrimp (12 to 16 a pound)
3/4 teaspoon kosher salt, more to taste
3 garlic cloves, finely grated or minced
5 tablespoons unsalted butter
1/4 cup heavy cream
4 cups corn kernels (from 6 to 7 ears corn)
1/2 cup crumbled feta cheese, more for serving
Black pepper, to taste
2 tablespoons extra-virgin olive oil
2 small red onions, diced
1 large poblano chile or green bell pepper, diced
2 large ripe tomatoes, diced
2 teaspoons fresh lemon juice
Large dash of Worcestershire sauce
Dash of hot sauce, preferably Tabasco
Cilantro leaves, for serving
Basil leaves, for serving

Steps:

  • In a large bowl, toss shrimp with salt and garlic and let rest in the refrigerator until needed (up to 2 hours).
  • In a medium saucepan, melt 1 tablespoon butter with the cream over medium heat. Add corn, cover, reduce heat to medium-low, and cook, stirring once or twice, until the corn is very soft, 10 to 15 minutes. If all the moisture evaporates before the corn is soft, add a few teaspoons water to the pan.
  • Using an immersion blender or regular blender, blend corn mixture until you get a chunky purée. Mix in feta, black pepper and salt to taste. Cover and keep warm until needed.
  • In a large skillet, heat oil over medium-high heat. Add onion and pepper and sauté until pale golden and soft, 7 minutes. Add tomatoes, a large pinch of salt, and a tablespoon or two of water if the pan looks dry, and sauté until the tomatoes break down and turn saucelike, about 8 minutes.
  • Add shrimp, lemon juice and Worcestershire and hot sauces. Sauté until the shrimp are pink and cooked through, 2 to 4 minutes. Stir remaining butter into pan and add more salt, if needed.
  • Serve corn topped with shrimp and plenty of crumbled feta. Garnish with cilantro and basil.

Always make this for family pot lucks because everyone loves it and requests it. Got the recipe years ago from Gulliver's Restaurant in Irvine CA.

2 box frozen corn (or 20 oz bag)
8 oz whipping cream
8 oz milk
1 tsp salt
6 tsp sugar
1 pinch pepper
4 Tbsp melted butter or margarine
4 Tbsp flour

Steps:

  • 1. Combine all but the last 2 ingredients in a pot and bring to a boil.
  • 2. Simmer for 5 minutes or until corn tender (no lid).
  • 3. Melt butter or margarine in sauce pan and add flour. Blend until smooth and add to corn mixture to thicken.
  • 4. Place in serving dish. If desired, pour into a baking dish and sprinkle with Parmesan cheese. Place under broiler to lightly brown the top.
  • 5. This recipe can easily be doubled or tripled.

This bright, tangy, one-pan meal comes together quickly and is packed with bright flavors - perfect for a summer evening. If you can't find fresh corn, frozen will work in a pinch; just defrost it and pat it dry before throwing it into the skillet. You can also add a little more spice by leaving the ribs and seeds in the chile that goes into the dressing. Serve the shrimp and corn over rice or with a big green salad. Depending on what you serve this dish with, you may have a bit of dressing leftover, which can be saved for salad or drizzled over grilled meat or vegetables.

1 pound large shrimp (preferably tail-on), peeled and deveined
2 teaspoons ground coriander
Kosher salt and black pepper
1/4 cup fresh lime juice, plus 2 teaspoons lime zest, and 4 lime wedges (from 3 limes)
2 tablespoons thinly sliced mint, plus a few mint leaves for garnish
1 teaspoon honey
1 garlic clove, finely minced
1/2 Fresno chile, finely minced, seeds and ribs removed if desired

3 cups fresh corn kernels (from about 4 ears)

Steps:

  • Pat the shrimp dry, then toss with the coriander and a sprinkle of salt and pepper. Let sit while you prepare the dressing.
  • Make the dressing: In a medium bowl, combine the lime juice, lime zest, mint, honey, garlic, chile, 1 teaspoon kosher salt and 1/4 cup olive oil. Whisk until well combined and emulsified.
  • Heat a large nonstick skillet over medium-high. Add 2 tablespoons olive oil, then add the shrimp in an even layer. Cook the shrimp until pink and just cooked through, about 2 to 3 minutes per side. Remove the shrimp to a plate.
  • Reduce the heat to medium and add the corn to the pan. Season with salt and pepper, and cook the corn without stirring until it begins to brown on one side, about 2 minutes. Give the corn a stir and cook for another minute.
  • Add the shrimp back to the pan, along with 2 tablespoons of the dressing, and stir to coat everything in the dressing and to rewarm the shrimp.
  • Transfer to a serving platter, drizzle with more dressing, and garnish with more mint. Serve with lime wedges.
