  • Place one egg in each cup in a muffin tin.

  • Meanwhile, prepare a pot of ice water. As soon as you remove the eggs from the oven, immediately plunge them into the ice water, and leave them there for 10 minutes before eating or peeling.

Steps:

  • Gently place your eggs in an empty saucepan or stockpot, and then fill the pan with cold water so that there is at least 1 inch of water on top of the eggs (if using 6 or less eggs), or 1.5-2 inches of water on top of the eggs (if using 7-14 eggs).
  • Transfer pan to the stove (uncovered) and heat over medium-high heat until the water reaches a rolling boil. Let the eggs boil for 1 minute (no more). Then remove the pan from the heat, and cover snugly with a lid. Let the eggs continue to cook in the pan for 9-11* minutes, or until the yolks reach your desired level of doneness.
  • Carefully drain out the hot water (or you can also transfer the eggs to a colander, and then return them to the pot). Then fill the pot with ice water, and let the eggs sit for a few minutes until they are completely chilled.
  • Peel and serve the eggs immediately. Or transfer them to a sealed container and refrigerate for up to 1 week.
  • *Granted, different pots/stoves may cause the eggs to cook more/less quickly, so test what cooking time will work best in your kitchen. I've found a good solid 10 minutes of cooking time works best for me.

  • Add as many eggs as desired in a single layer to a perforated pan (see note).
  • Transfer to the oven and cook until the eggs reach your desired doneness, 15 to 17 minutes (see note). Make sure to turn on the timer immediately after placing the eggs in the oven. While the eggs cook, fill a large bowl with ice water.

4 cups ice
8 cups water

Steps:

  • First, preheat oven to 325ºF.
  • Place 12 large eggs (straight out of the fridge) into a muffin tin. Feel free to make however many eggs you want. You can even use 2 muffin tins at once to make 12 eggs.
  • Medium with a jelly consistency and hard to peel
  • Moist, fully cooked, a little hard to peel
  • Fully cooked and easier to peel
  • Fully cooked, chalky consistency, and easiest to peel
  • While your eggs are baking, create your ice water bath. Fill a large bowl with water and then add ice.
  • Once your eggs are done cooking, remove the muffin tin from the oven and immediately transfer eggs into the ice water bath for 10 minutes. This will make the eggs easier to peel and prevent the yolk from changing color.
  • After 10 minutes, remove eggs from ice bath and either store in the fridge for up to 1 week, or peel and ea immediately.

1.5 cups chopped yellow onion
3 garlic cloves, chopped
1 28-ounce can crushed tomatoes
1.5 teaspoons fresh oregano, plus more for serving
0.75 teaspoon kosher salt

0.25 teaspoon black pepper

Steps:

  • Preheat the oven to 400°F. Place the baguette slices on a baking sheet; brush with the oil and top each with 2 pieces of the mozzarella. Bake until the cheese is bubbly and light golden brown, about 12 minutes.
  • Meanwhile, heat a large ovenproof nonstick skillet over medium-high. Add the sausage and cook, stirring and breaking it apart with a wooden spoon, until almost cooked through 5 minutes.
