Here's a recipe I got when I went to Hawaii - tri-tip steak is one of the newer cuts of beef, and is pretty tender.

- Combine spices and rub into meat.

HAWAIIAN TERIYAKI STEAK

- For the steak:
- Combine all ingredients in a resealable plastic bag. Squeeze out as much air as possible and marinate the steak in the refrigerator at least 8 hours or overnight. Remove the meat from the marinade and place on the grill. Grill to desired temperature; medium-rare is best.
- Pineapple Raft:
- Core and slice a fresh pineapple into 1/4-inch rectangles. Melt 3 tablespoons of butter. Place pineapple rafts on the grill and brush with melted butter. Grill until warm, with nice grill marks.
- Serve with the grilled beef, if desired, garnished with scallions.

Steps:
- Light your charcoal.
- Rub salt, garlic , pepper, and sugar into the meat and let sit 30 minutes.
- Pulehu in Hawaiian means "to broil on hot embers" and that's what you do, turning the meat every 4 minutes.
- Total cooking time is about 10-15 minutes, depending upon the thickness of the cut.

HAWAIIAN TRI-TIP STEAK WITH AVOCADO-CHILI RELISH RECIPE

- To make the steak marinade: Mix all of the ingredients together and whisk to emulsify. Immerse the roast into the mixture and marinate overnight in the refrigerator in a ziplock top bag. Drain steak. Grill steaks to your liking (130 degrees for medium). When finished, let steak rest for at least 5 minutes before carving. Serve with Avocado-Chili Relish To make the Relish: Gently toss all of the ingredients together and let it sit a minimum of one hour.

THE BEST BEEF TRI-TIP
I received a food wish for roast beef recently, which can be done with many different cuts. I ended up deciding on beef tri-tip, since it's affordable, flavorful, great for parties, and, using this low-temp roasting technique, nearly fool-proof. No marinating, no searing, no nothing; just rub on some salt and spices and pop it into the oven until it reaches the doneness you want. Plate it up with a Romano bean salad or enjoy as a roast beef sandwich!

Steps:
- Preheat the oven to 225 degrees F (110 degrees C).
- Mix salt, pepper, paprika, garlic powder, cayenne, dried rosemary, and fresh rosemary together in a small bowl.
- Place tri-tip in a baking pan. Season generously with the spice rub until both sides are completely covered.
- Bake in the preheated oven until an instant-read thermometer inserted into the thickest part reads 130 degrees F (54 degrees C) for medium-rare, or until desired doneness, 1 1/2 to 2 hours. Flip meat over halfway.
- Cover pan with aluminum foil and let meat rest for 20 minutes. Remove tri-tip to a cutting board and cut into 2 pieces along where the grain changes direction. Slice meat across the grain and transfer to serving plates.
- Mix beef broth in with the pan drippings and drizzle over the slices.
