So good and easy to make! My siblings and I made huge batches of these cookies Sunday afternoons, and they were usually gone by Tuesday! The time for boiling the mixture is listed at 5 minutes, but if you cook it a little less, the cookies are chewier.

HAYSTACKS
I have made these cookies for my family for about 30 years now. My son (who is now 36 years old) gets so excited when I make these; he always enjoys them with a tall glass of milk. I find that I have to be careful when melting the butterscotch because it seems to scorch easily, so take care - this is an essential ingredient! Also, these are best enjoyed in the winter because they seem to melt and not taste as great in the warmer weather.

- Melting down Butterscotch - while no bake cookies and treats are super fun and super kid friendly, any time you are melting down baking chips of any time there can be some frustration. The key to having a positive experience is PATIENCE. Your butterscotch is added to a microwave safe bowl and heated for 20 seconds at a time. Pull out, stir, 20 seconds back in, until completely melted. Be careful, the chips (and bowl) can get quite hot.
- DO NOT OVERHEAT or you will end up with a hard mess. My butterscotch chips took about 1 minute 30 seconds to fully melt down.
- Create Your Cookies - Now dump your chow mein can into the butterscotch chips and stir until completely incorporated together. This is a thick mixture so you may need a spoon to dig down and get all the chow mein noddles covered.

- Melt the milk and semisweet chips in a double boiler (see Note 1) or using the microwave, stopping the microwave and giving the chips a stir every 15 to 20 seconds until they are melted.
- Place the noodles in a large bowl. Pour the melted chocolate over and stir to combine. Add half of the S’more Baking Chips Mix, and stir and toss until everything is evenly combined.
- Drop the mixture by tablespoons onto the prepared baking sheet. Use your fingers to tuck in a few extra bits of marshmallow, graham cracker, and chocolate squares around the tops of the haystacks, pushing them in slightly so they will stick. Allow to set (in warmer months this is best done in the fridge, though let them sit at room temperature for several minutes before serving).

- Melt the butterscotch and chocolate chips in the microwave or in a double boiler (If you don’t have a double boiler you can make one by nestling a metal or heatproof glass bowl over a pot with a bit of water in the bottom – bring the water to a boil, and stir the chips frequently until they melt) . If using the microwave, heat for 30 seconds, then stop and give the chips a stir, and stop and stir every 15 seconds until they are melted. Stir in the peanut butter until well combined.
- Combine the noodles and the cocktail peanuts in a large bowl. Pour the butterscotch-peanut butter mixture over and stir to combine.
- Drop the mixture by tablespoons onto the prepared baking sheet. Allow to set; in warmer months or when the kitchen is warm, this is best done in the fridge. Do let them sit at room temperature for several minutes before serving.
